About the Alto Shaam CTP6-10E
Overview
The Alto-Shaam CTP6-10E is a full-size electric combi oven in the CT PROformance series. This boilerless model combines steam and convection cooking, and can also cook with both methods together or retherm food. The controls provide a humidity setting from 0 to 100 percent, allowing operators to select the humidity level for a recipe or production task. With capacity for seven full-size GN 1/1 pans or seven half-size sheet pans, the CTP6-10E can support batch cooking in restaurant, supermarket, institutional and other commercial foodservice kitchens.
The listed CTP6-10E configuration is boilerless. The product literature also describes boiler-free and boiler versions, but the product information identifies this model as boilerless; confirm the precise electrical and accessory configuration for an order.
Key Features
- Four cooking modes: steam, convection, combination and retherm.
- PROtouch programmable touchscreen control: operators can select cooking modes and humidity, choose from two power levels, and upload or download recipes through the USB port.
- Absolute Humidity Control: selectable humidity from 0 to 100 percent.
- CoolTouch3 door: triple-panel glass helps retain heat while keeping the glass cool to the touch; the product literature reports 15 percent greater thermal retention.
- Visual status indicators: an LED-illuminated door handle signals oven status, and LED lighting illuminates the cooking cavity.
- SafeVent: automatically vents steam at the end of a cooking cycle.
- Cleaning features: five automated cleaning cycles are listed as standard, with a front-accessible retractable rinse hose. Automatic liquid cleaning is listed as an option; tablet-based automatic cleaning is standard in the product configuration information.
- Temperature monitoring: a removable, single-point, quick-connect core temperature probe is standard. Sous vide and factory-installed multi-point probe options are also listed.
- Low-emissions information: the product specification reports condensable particulate matter emissions of 0.77 mg/m³ in testing of 11,660 beef patties, below the 5.0 mg/m³ maximum stated for EPA test method 202.

Installation & Requirements
The listed clearances for the CTP6-10E are: 20 inches (508 mm) at the top; 0 inches at the left; 0 inches at the right beside non-combustible surfaces or 2 inches (51 mm) beside combustible surfaces; 5-1/8 inches (130 mm) at the bottom; and 4 inches (102 mm) at the back. The specification recommends 18 inches (457 mm) of service access. An optional plumbing kit requires 4-5/16 inches (109 mm) as noted in the specification.
Electrical options are listed above; the product must match the intended supply, and the listing for the 208V three-phase configuration gives 21.9 A and 7.9 kW. The installation information lists an Alto-Shaam Combination Factory Authorized Installation Program as available in the U.S. and Canada, with Ventech hood field installation extra, or an Installation Start-Up Check through an Alto-Shaam authorized service agency.
A Ventech Type 1 hood with condensation technology is described as an accessory/configuration option. Its condensation system condenses steam while capturing grease-laden air, vapours and lingering smoke; the product literature says this hood can eliminate the need for a traditional kitchen hood. Ventech PLUS is an optional hood configuration with a HEPA filter. Do not assume either hood is included unless the order specifies it.
Operation
Operators select one of the four cooking modes on the PROtouch control and set cooking parameters for the task. Absolute Humidity Control permits selection at any level from 0 to 100 percent. The controls also provide two power levels, recipe upload and download through USB, and a programmable cooldown function. The standard removable single-point probe supports core-temperature cooking, while the SafeVent feature automatically vents steam when the cook cycle ends.
The product description states that the oven can be used for convection heating, steaming or a combination of the two, as well as retherm. This flexibility allows a kitchen to use one appliance for different menu tasks rather than dedicating it to a single cooking method. The capacity specification sets a maximum product load of 72 lb and maximum volume of 45 quarts; observe those stated limits when planning a load.
The product literature describes the CoolTouch3 triple-panel glass door as retaining heat while keeping the glass cool to the touch. LED cavity lighting provides visibility, and the illuminated handle gives a visual indication of oven status. The listed capacity is seven full-size or GN 1/1 pans or seven half-size sheet pans, with three shelves supplied; additional wire shelves are needed to use maximum capacity.
Cleaning & Maintenance
The CTP6-10E product information lists five automated cleaning cycles and a front-mounted, retractable rinse hose. The five liquid-cleaning levels documented for the PROtouch series are rinse (20 minutes), light (30 minutes), normal (1 hour 20 minutes), heavy-duty (2 hours 6 minutes) and heavy-duty PLUS (3 hours 30 minutes). Liquid cleaning is optional in the product configuration information, while tablet-based automatic cleaning is listed as standard. Follow the instructions for the installed cleaning system; the manual specifies using authorized Combitherm oven cleaner only, since unauthorized cleaners may discolor or harm interior surfaces.
The operator manual instructs staff to remove solid waste from the oven and drain screen and reinstall the drain screen before a tablet cleaning cycle. It warns that tablets placed on the drain cover or on the oven bottom may not dissolve properly and can deteriorate the interior. Wear rubber gloves when handling cleaning tablets or spray oven cleaner, and protective eyewear when using spray oven cleaner. The manual also warns not to steam-clean, hose down, flood or use a water jet on the oven interior or exterior; failure to observe this precaution voids the warranty.
For daily cleaning, the manual describes clearing debris from the drip tray and drain screen, and cleaning the door gasket with a clean cloth and non-abrasive cleaning agent followed by clean rinse water. A drip-tray clean-out brush is identified as an optional tool for removing grease and food debris from the drip-tray drain line. Do not remove the gasket or put it in a dishwasher. Clean the probe, cable, prongs and holder with warm detergent solution, wipe with clean rinse water, then use an alcohol pad or food-contact sanitizing solution and allow the assembly to air dry. Wipe the probe with an alcohol pad before inserting it into a new food product.
The manual advises cleaning the gasket daily and leaving the oven door slightly open at the end of the production day to relieve pressure on the gasket. It calls for weekly inspection of electric convection elements for cracking, grease or carbon buildup, scale buildup and major deformation. Monthly maintenance includes decalcifying or descaling the oven: the specified procedure uses 7 ounces of Scale Free cleaner in the drain, followed by a heavy-duty cleaning cycle, rinsing the interior and running a rinse cleaning cycle. The manual also identifies inspection of the spray head, water intake filters and drain pipe as monthly cleaning tasks.
If grease or food waste ignites inside the appliance, the manual says to shut the oven down and keep the door closed. If further extinguishing is needed, disconnect main power and use a fire extinguisher; do not use water on a grease fire. The manual warns that inadequate cleaning can invalidate the warranty.
Troubleshooting
The series service manual lists E101 as a ventless hood fault for no pressure and E102 as a ventless hood fault indicating filters are not present. For these hood-related faults, its checks include confirming that filters are installed and not clogged, checking hood-fan operation, and checking the filter and pressure switches. These messages are relevant when the corresponding hood accessory is installed.
For a cleaning system that does not operate, the service manual's diagnostic sequence checks whether the cleaning pump is energized and running, whether cleaning water reaches the pump inlet and water manifold, and whether water reaches the injection pipe. It also identifies an obstruction in the injection pipe or connecting plumbing as a possible cause. These are service diagnostic steps, not a substitute for qualified repair work.
