Installation & Requirements
The operator’s manual says to place the oven where the supporting surface is rated for its weight, where the appropriate electrical outlet is within five feet, and where the oven’s clearance requirements can be met. The manual specifies use only on noncombustible surfaces and instructs installers to maintain correct clearances from combustible materials. Its clearance diagram shows 2-inch clearances. The appliance must be level; the manual calls for checking front-to-back and side-to-side with a spirit level and adjusting the legs as needed.
Electrical installation must follow applicable federal, state and local codes. The manual requires a properly grounded electrical connection, copper supply conductors suitable for temperatures of at least 90°C, and an individual branch circuit. It warns not to connect the appliance to a circuit operating at more than 150 VAC to ground. The listing gives 208V and 240V single-phase configurations and a NEMA 6-50P connection. Confirm the unit’s electrical configuration and the supply available at the site. The supplied material does not provide a gas connection; the listed VMC-H3H configurations are electric.
The product listing describes ventless operation, but the provided installation excerpts do not specify hood requirements or explain the conditions for ventless installation. Confirm applicable requirements for the intended location with the relevant local authority.
Operation
Use the oven for its intended purpose of heating or cooking. The VMC-H3H has three independent chambers and programmable controls. The supplied manual excerpts do not include a full cooking-programming sequence, so use the model’s operator’s manual for control setup and detailed cooking instructions.
Use dry oven mitts and suitable utensils when loading or unloading. Keep liquids and foods that may become liquid level and at or below eye level where they can be seen. Do not cover or block openings, and do not cover racks or other parts of the appliance with metal foil. Do not use the oven near water or in a wet location. After cooking, do not immediately unplug or disconnect it: the cooling fans must continue running to protect electrical components.
Cleaning & Maintenance
Before cleaning: The manual warns of burn and personal-injury hazards. Wear eye and hand protection, and allow the oven, racks and jet plates to cool. The maintenance schedule says the oven should be off and cooled to an interior chamber temperature of 140°F (60°C) or less. Do not spray cleaner into the oven while the blowers are running. For the monthly or as-needed procedure, shut the oven down through the control screen and allow its blowers to complete the cool-down. Cleaning is safe once the blowers stop and the display turns off.
Daily: Remove spills with disposable paper wipes or a damp cloth. Wipe the outside with a damp cloth, then with stainless steel cleaner. Check the screen for cracking or peeling; contact Technical Service if needed.
Weekly: Restart the oven to reboot the screen and clean the entire oven using a non-abrasive nylon scrub pad. Inspect and clean grease filters if equipped. Do not spray cleaner directly into the rear fan openings.
Monthly: Inspect and clean the cooling fan filters.
Yearly service checks: The manual calls for removing the convection elements and inspecting the return-air path for grease buildup; inspecting the catalyst for degradation; checking the heater and motor flange areas for grease leakage; checking door-gasket shape and seal; inspecting both door-window panes for cracks or chips; and checking and tightening wire, display, interface-board and control-board connections and door hinges. A qualified professional should perform the checks identified by the manual as requiring qualified service. The manual also lists recording software versions, updating if necessary, recording individual element amp draw and incoming supply voltage, and testing chamber fans, heaters and lights.
Cleaning precautions: Improper cleaning can damage the catalyst and void the warranty. Do not spray the catalyst or any opening inside the oven with water or cleaning solution. Do not use steel pads, wire brushes or scrapers. The monthly/as-needed procedure begins by removing the cooking racks and jet plates, separating the jet plates and spraying the racks and jet plates with Alto-Shaam non-caustic oven cleaner. Wear hand protection when handling jet plates.
Troubleshooting
The operator’s manual lists the following fault descriptions and checks. Disconnecting power or internal repair should be handled in accordance with the manual’s safety instructions; it cautions against opening the cover and says repairs should be referred to qualified personnel.
- E-11, sensor open: The cavity-air sensor reading is above 650°F (343°C). The listed checks are the sensor connection, sensor and control board.
- E-30, unit under temperature: The cavity temperature remains 25°F (14°C) below target for more than 90 minutes. The manual directs troubleshooting of the heating element.
- E-31, electronics over temperature: The control-board temperature exceeds 158°F (70°C) and/or the interface-board temperature exceeds 184°F (84°C). Listed causes to check include blocked or dirty cooling-fan filters, a non-operating cooling fan and unmet installation-clearance requirements.
- E-87, gas lockout: The manual describes loss of flame three times within five minutes and lists lack of fuel pressure. This entry is a general manual fault listing; confirm the applicable configuration and service guidance for the VMC-H3H.
- E-88, ignition module/valve failure: The manual describes two four-second ignition attempts with a 30-second delay between them. It lists checking whether the valve is open after a call for heat. Confirm applicability to the installed configuration.
- E-90, gas combustion blower speed failure: Listed checks include the power-supply and speed-control cables at the blower motor, a blocked or impeded blower, a faulty blower motor and a faulty PWM daughter board. Confirm applicability to the installed configuration.
- E-94, interface-board/control-board communication error: The manual describes no signal transfer between the boards for more than five seconds. Listed checks include the Modbus connection and cable, control board and interface board.
- E-108, bi-metal thermostat open: Listed checks include blocked or dirty cooling-fan filters, a non-operating cooling fan, the thermostat connection, installation clearances and the bi-metal switch.
The manual advises contacting an authorized Alto-Shaam service partner for service matters.
