About the Baxter WM600C
Overview
The Baxter WM600C is a microcomputer-controlled water delivery system for accurately setting water volume and temperature for baking. It mixes water from separate hot and cold supply lines, then dispenses a selected amount once the set temperature is reached. Controlling both water temperature and volume can help support consistent baking results and productive dough preparation.
The unit has a digital control panel, stainless steel casing and a dispensing hose with a stainless steel hook for hanging over a standard mixing bowl or sink. It can be wall-mounted using the included bracket and hardware. The WM600C is the 230–250V model in the WM600 water meter family.
Key Features
- Microcomputer control: Sets a specific water amount and temperature; delivery begins when the water reaches the selected temperature.
- English or Metric units: The control panel can display measurements in either system.
- Adjustable dispensing: Delivery can be interrupted, the amount changed to a quantity greater than the amount already dispensed, and delivery resumed without reprogramming.
- Retained setting: The meter remembers its last setting during a power interruption or accidental disconnection.
- Temperature measurement: A temperature probe with a 6-foot tether is included. The handheld probe can measure room, dough or flour temperature.
- Chiller compatibility: The meter can control an external water chiller. The chiller is not included and must be ordered separately.
- Hose and hook: The NSF-approved flexible dispensing hose is 8 feet long and has a stainless steel tube hook for a mixing bowl or sink. An approved siphon breaker is installed at the meter end of the hose.
- Wall mounting: A wall-mount bracket and hardware are included. The meter can be lifted off the bracket while the wall-mounted hardware remains in place.

Installation & Requirements
The WM600C requires separate hot and cold water supply lines. The manual calls for a manual shutoff valve on each line at the meter; shutoff valves are not supplied. Hot and cold inlet pressure must be within 30–100 psi, and the operating pressure should be adjusted to 30 psi on each regulator while the meter dispenses at 125°F (52°C). The hot water inlet must not exceed 140°F (60°C), and the cold water inlet must be at least 32°F (0°C).
Before installation, verify that the electrical service matches the data plate on the left side of the meter. The WM600C electrical option is 230/250V, single phase, 50/60Hz. The manual says that the input power line and branch-circuit protection for 230/250V operation are provided and wired by the customer. Electrical and grounding connections must comply with applicable local requirements; Canadian installations must follow local codes and the Canadian Electrical Code, CSA C22.1. If connecting a pump-driven chiller, a qualified electrician or service technician should make the connection and confirm that the chiller circuit is within the auxiliary relay rating.
For wall mounting, the meter has a detachable base. The manual instructs installers to level and fasten the base to the wall with appropriate mounting fasteners, slide the meter onto the base with its horizontal rear groove aligned to the base, and secure it with the machine screw and angle hold-down. Consider water supply, drainage, electrical outlets and service access when choosing a location. The suggested water discharge route is to a sink; the dispensing hose can be hooked over a sink or drain during setup and test flow.
The manual’s supplied assembly components include pressure regulators, dual check valves, elbows, a vacuum breaker, dispensing hose, T-fittings with pressure gauges, Y-strainers and a handheld temperature probe. A bypass-line hose and fittings are specified for the water-chiller option. The spec sheet states that the input supply lines contain cross-flow preventers, pressure regulators, gauges and strainers.
Operation
Select English or Metric units with the CHANGE UNITS key. Use SET TEMP and the numeric keypad to enter the desired water temperature, then use SET AMOUNT to enter the required quantity. The water temperature window shows the selected temperature while idle and the measured water temperature during dispensing. Indicator lights show when the mixing valve is using cold water only, adjusting temperature or using hot water only. The amount window displays the programmed water quantity.
Press START to begin dispensing. The meter adjusts the mix to reach the temperature setting before delivering the selected amount. If delivery is interrupted, the operator can change the amount to a value above the quantity already dispensed and resume without reprogramming. The handheld probe displays the measured temperature of a room, dough or flour. During initial pressure setting, the manual directs the operator to set 125°F (52°C), place the hose over a sink or drain, start a 20-pound test flow, allow the water to reach the set temperature, then adjust both regulators to 30 psi (207 kPa).
Cleaning & Maintenance
Before cleaning or maintenance, disconnect electrical power and follow lockout/tagout procedures. Clean the handheld temperature probe daily with warm, soapy water, rinse with warm water and wipe it dry with a soft cloth. Clean stainless steel surfaces with a damp cloth, then polish with a soft, dry cloth; use a nonabrasive cleaner for discoloration. Clean the control panel with a damp cloth only. Do not use cleaners containing oil or other flammable ingredients, and do not spray the meter with a hose, pressure washer or steam cleaner.
The manual calls for annual calibration of temperature, water volume and water weight settings by an authorized service technician. It also recommends checking the probe, water volume and weight against a known constant at regular intervals. Before a calibration check, verify that hot and cold supply pressure is at least 30 psi and that the hot water supply is at least 140°F (60°C). The manual recommends calibrating in English units for the highest accuracy and verifying temperature with a good thermometer.
For shutdown over an extended period, close the hot and cold supply valves, empty remaining water from the dispensing hose, hang the hose on the meter’s side hook and unplug the power cord.
Troubleshooting
- Displays and indicator lights are off: Check that the meter is plugged in, check circuit breakers and check the fuse.
- Water temperature does not stabilize: Confirm that both hot and cold water supplies are open and that pressure is set to at least 30 psi; adjust water pressure as described in the manual.
- No water dispenses when START/RESUME is pressed: Check that both supply valves are open. The selected temperature must be above the cold inlet temperature and below the hot inlet temperature. Enter a water amount, and check that the pounds and ounces are within the accepted entry range of 0–999 pounds and 0–15 ounces.
- Bypass flow times out: The manual describes an adjustable bypass timeout from 60 to 240 seconds, with a default setting of 120 seconds.
- Dispensed amount does not match the set amount: The manual notes that a drained dispensing hose can affect the amount delivered. Hang the hose on the meter’s hook between dispensing tasks to prevent it from draining.
For service and parts information, the manual directs users to contact their local authorized service office.
Applications
The WM600C is intended for commercial baking and dough preparation where operators need repeatable control of water quantity and temperature. It can dispense into a standard mixing bowl or sink and can be paired with an external water chiller when chilled water is needed; the chiller is a separate item.
