About the Cleveland 24CGA10.2ES
Overview
The Cleveland 24CGA10.2ES is a Gemini dual gas steam generator and convection steamer with two cooking compartments and independent steam generators. Its 10-pan capacity supports batch steaming across the two compartments, while the independent generators let operators use the compartments separately. The model is listed with SteamSaver technology and ENERGY STAR qualification.
For commercial kitchen planning, the manual identifies the Gemini as a continuously operating appliance: components remain hot while the main external power switch or ON/OFF switch is on, and the unit stays hot for some time after it is switched off. Account for that residual heat when planning work around the steamer and training operators.
Key Features
- Two compartments: Independent steam generators serve the two cooking compartments.
- 10-pan capacity: The listed capacity is five pans per compartment.
- SteamSaver technology: The 24CGA10.2ES is identified as a SteamSaver model.
- SureCook controls: Integrated controls have an LED digital readout.
- ENERGY STAR: The model is identified as ENERGY STAR qualified.
- Stainless steel construction: The product listing identifies stainless steel construction.

Installation & Requirements
Location and clearances
Install the steamer level from front to back and side to side. The manual warns not to operate it out of level; if it is suspected to be out of level, shut it down and contact a qualified Cleveland Range service agency. The operating surface must support the appliance, and the manual gives an operating weight of 650 pounds for a Gemini. Position the unit so it cannot tip or slide, and provide a suitable drain within 12 feet.
Maintain at least 3 inches of operating clearance at the sides and back. The manual recommends 12 inches on the right side for service access and approximately 24 inches in front for door opening and standard pan clearance. Keep the area clear of combustibles, do not block the air vents, and allow extra distance if a high-heat source such as a broiler is next to the steamer. Do not install the unit directly over a drain: steam from the drain can affect operation and cooling-air circulation and damage electrical or electronic components.
Exhaust, gas, electrical, water and drain connections
The gas steamer must be installed under a suitable exhaust hood. The gas type must match the rating plate. The manual specifies natural gas pressure between 4½ and 14 inches water column, and propane pressure between 11 and 14 inches water column; supply pressure must never exceed 14 inches water column. Install a manual shut-off valve between the gas supply and the steamer. A sediment trap is recommended, and pipe sealant must be suitable for LP gas. Leak-test pipe joints with soap and water before operation and after gas-supply service. Follow the manual’s isolation requirements when pressure-testing the supply system.
The steamer also requires an electrical connection. Match the supply to the rating plate, ground the appliance, and follow applicable local electrical requirements. The manual says the unit is not suitable for connection to a GFCI and recommends a flexible conduit system compliant with applicable codes. Install a main disconnect switch and a separate fuse or breaker near the unit. Check the wiring diagram on the back of the lower front panel for connection details.
Test the supply water quality against the limits in the manual before installation; the supplied excerpt does not state the numeric limits. The drain must have gravity flow, be free-air vented, and terminate outside the unit’s perimeter. Do not install a trap, connect another appliance’s drain to this steamer, or connect the drain directly to a floor drain or sewer line. The manual calls for at least 1 inch of clearance between the drain-line end and the top of the floor drain for free-air venting. For an extension of 6 feet or less with no more than two elbows, 1½-inch ID pipe and fittings are acceptable; for 6 to 12 feet or three or more elbows, use 2-inch ID pipe and fittings. Do not connect the drain to PVC or other material that cannot withstand 180°F.
Operation
At the start of a shift, turning a compartment on automatically fills its steam generator with water. This prepares the steamer without starting steam generation. Before each steaming operation, inspect the cooking compartment and remove food scraps or debris from the racks, walls and floor, paying particular attention to the drain and drain screen. The screen must cover the drain and must be in place during operation. Do not use the steamer if water is standing in the drain opening; clear the blockage before use.
Steam, hot air and condensate can cause severe burns. When opening a door, stand to the hinge side and back from the door, open it slowly, and wait for steam and heat to dissipate before reaching into the compartment. Do not force a door that is stuck shut. A stuck door may indicate a blocked drain; forcing it can release hot water from the compartment. Remember that the unit remains hot after it is switched off.
Cleaning & Maintenance
The manual calls for daily steam-generator blowdown and cleaning of the steamer interior and exterior according to the shutdown instructions. Keep maintenance records for daily, weekly, monthly and yearly tasks; the manual notes that maintenance frequency may need to increase with equipment use and water quality.
Inspect the drain screen and drain line weekly. Rotate the drain screen 90 degrees to inspect the drain opening, clean the opening, and return the screen to its operating position. Clean the drain weekly with a USDA-approved drain cleaner, following that cleaner’s instructions, then flush the drain with clean water. A blocked or slow drain can cause water to collect in the compartment, steam to leak around the door gasket, pressure fluctuations, reduced convection and poor cooking performance.
Descale the steam generators at least monthly, adjusting frequency according to scale buildup. For serious scale buildup, the manual recommends installing a water-treatment system or increasing descaling frequency if that is not possible. Cleveland Range recommends DISSOLVE descaler solution, part number 106174 or 1061741, and states that no other steamer descaling system should be used. The manual identifies 106174 as a case of six 1-gallon containers and 1061741 as the 5-gallon container. Use the manual’s descaling procedure for these products.
Troubleshooting
Water standing in the drain opening or slow drainage: Do not operate the steamer with water standing in the opening. Inspect and clear food debris from the drain and screen. A blocked drain can lead to compartment flooding, steam leaks around the gasket, pressure fluctuations and reduced convection. Keep the drain screen in place to prevent large food particles from entering the drain line.
Door stuck shut: Do not force it open. The manual identifies a blocked drain as a possible cause; forcing the door may allow hot water to spill from the compartment.
Steamer suspected to be out of level: Shut it down at once and contact a qualified Cleveland Range authorized service agency. The manual warns that operating out of level can cause injury, death or equipment damage.
Applications
The 24CGA10.2ES suits commercial kitchens that need two independently generated steaming compartments and capacity for up to 10 pans. Operators can use the compartments for separate batches or menu items, with the drain-screen inspection and cleaning routine helping protect convection performance during regular service.
