About the Cleveland 36CGM300
Overview
The Cleveland 36CGM300 is a classic, two-compartment convection steamer with a gas-fired 15 PSI boiler base. Its pressureless cooking compartments use forced-convection steam, so the doors can be opened while cooking continues. The unit accommodates up to six cafeteria pans across its compartments and has a cabinet base with a hinged door.
The gas steam generator has NickelGuard, electronic spark ignition and automatic water fill at start-up. Solid-state controls operate water-level and safety functions. The boiler’s 15 PSI rating refers to its safety valve and high-limit protection; the manual states a factory operating-pressure setting of 10 PSI.
Key Features
- Two pressureless compartments: Forced-convection steam circulates without fans, and cooking can continue with the doors open.
- Pan capacity: Each compartment holds three 12 × 20 × 2½-inch pans or six 12 × 20 × 1-inch pans. The total stated capacity is up to six 12 × 20 × 2½-inch cafeteria pans.
- Compartment controls: Each compartment has a 60-minute mechanical timer, a separate bypass switch for constant steaming and a cold-water condenser.
- Instant Steam Standby: The standby mode holds the generator at steaming temperature so the unit can begin cooking promptly.
- Steam distribution and drainage: Cleveland’s convection jets create high-velocity steam without fans. Coved compartment corners help distribute heat and simplify cleaning; creased top and bottom surfaces support drainage. Removable stainless-steel slide racks aid cleaning.
- Door construction: The free-floating inner door has a reversible gasket for an airtight seal. The stainless-steel slam/latch mechanism is intended for reliable door closure, and the compartment door is described as cool to the touch.
- Boiler functions: Automatic water fill at start-up, low-water power cut-off, electronic spark ignition, automatic generator drain at shutdown and a water-jet spray rinse cycle to help keep the drain clear.
- Service access: Controls are serviceable from the front. Standard door hinging is on the left, with controls on the right.
Specifications
- Manufacturer and model: Cleveland 36CGM300; also designated 36-CGM-300 in the specification sheet.
- Equipment type: Classic Series, two-compartment pressureless gas-fired convection steamer with boiler base.
- Boiler: Gas-fired steam generator with NickelGuard; the model’s specification identifies a 300M BTU configuration.
- Pressure protection: 15 PSI safety valve and high-limit pressure switch. The manual gives a 10 PSI factory operating-pressure setting.
- Cooking capacity: Up to six 12 × 20 × 2½-inch cafeteria pans total; per compartment, three 2½-inch-deep pans or six 1-inch-deep pans.
- Compartment construction: Durable 14-gauge stainless steel for the compartment doors and steam-cooking cavities; the specification also identifies a Type 304 stainless-steel cooking compartment.
- Electrical supply: 115 volts, 60 Hz, single phase for controls; the manual requires a permanent 115-volt connection for gas-fired units.
- Legs: NSF-certified, 6-inch stainless-steel legs with adjustable flanged feet for one inch of leveling adjustment.
- Drain: 1½-inch IPS common drain connection. The specification says not to connect other units to this drain and not to use PVC pipe.
- Clearances: The specification lists 6 inches at the right, left and rear. It calls for 12 inches on the control side when an adjoining wall or equipment over 30 inches high would otherwise restrict service access.
- Installation location: The specification says the unit is for non-combustible locations.
Installation & Requirements
Installation must follow the applicable local codes and the manual’s instructions. The manual says gas-fired boilers must be installed in non-combustible areas with adequate air supply. It also warns against installing gas units on flammable floors or near flammable walls. Position the steamer level, near an open floor drain, and not directly over the floor drain. Observe the clearances listed above for air supply and service access.
Gas and electrical connections
For gas-fired boilers rated at 225,000 BTU or more, the manual specifies 1-inch IPS gas-supply piping; the model specification identifies the 36CGM300 as a 300M BTU unit. The manual gives a natural-gas supply pressure range of 4 to 14 inches water column and an LP supply range of 12 to 14 inches water column. It says never to exceed 14 inches water column. Install a sediment trap in the gas supply line, and check pipe joints for leaks with a soap-and-water solution. A permanent 115-volt electrical connection is required at the junction box, and the installer must ground the unit. Cleveland’s specification cautions not to connect the steamer to a GFI outlet and recommends hard-wiring gas-fired 120-volt steamers directly to the electrical system.
Water and drain connections
Connect cold water to the line strainer; the manual explicitly says not to use hot water for the condensate-water fill connection. Maintain constant water pressure between 35 and 60 PSI, without a drop below 35 PSI when other appliances are in use. If supply pressure exceeds 60 PSI, the manual calls for a pressure-reducing valve. The manual recommends water low in dissolved solids and gas content and lists water-quality limits including silica below 20 parts per million, chloride below 30 parts per million and pH above 7.5.
Connect the drain using 1½-inch IPS piping or larger, extending it to a nearby open floor drain. The manual allows up to two elbows and six feet of extension pipe. The drain must flow by gravity and vent freely; do not connect it directly to the floor drain or sewer, and do not use PVC or other piping unable to withstand 180°F operation. The model specification says not to connect other units to this drain.
Operation
At start-up, the gas steam generator automatically fills with water and uses electronic spark ignition. The solid-state controls monitor water level and safety functions. Each compartment’s 60-minute mechanical timer controls timed steaming; its separate bypass switch allows constant steaming. Instant Steam Standby holds the generator at steaming temperature. The cold-water condenser in each compartment helps produce dry steam and support cooking results.
The cooking compartments are pressureless and use convection jets to move steam around the food. The manual describes the steam movement as part of the convection cooking action. The doors may be opened while cooking continues. At shutdown, the generator drains automatically, and its water-jet spray rinse cycle helps keep the drain clear.
During installation checks, the manual says the boiler sight gauge should automatically remain about one-third full during operation and the steam pressure gauge should register 10 PSI. It notes that the factory pressure setting can shift during transit and that pressure adjustments should be made only by qualified service personnel; the factory settings should not be exceeded.
Cleaning & Maintenance
Keep the compartment drain screen in place whenever a compartment is operating. The manual warns that food particles or other restrictions can impede drainage, contribute to backpressure and steam leaks around the door gasket, and interfere with convection. It recommends pouring USDA-approved drain cleaner through the compartment drains once a week. An auger or snake may be used to clear an obstruction, but the manual warns not to use a power auger because it can damage the plastic drain system.
At the end of each day, after switching the steamer off and allowing it to cool, wash the pan slides, door gaskets and compartment interiors with mild detergent and warm water, by hand or in a dishwasher. Rinse thoroughly with clear water and confirm that rinse water drains freely. Leave the compartment doors ajar when the unit is not in use to help prolong gasket life.
Allow the steamer to cool before cleaning its exterior. The manual recommends mild soapy water and a clear-water rinse, and cautions against letting water run into electrical controls. Turn off equipment power before washing; do not hose down the steamer. Clean the cold-water line strainer weekly.
Automatic blowdown does not remove all mineral deposits from the top of the boiler. The manual calls for chemical descaling by a boiler-treatment specialist four times a year under average water conditions, and more often where water conditions are poor. It also recommends periodic boiler inspection by a qualified field serviceman.
Troubleshooting
The manual’s installation checks provide several first points to verify if operation or cooking performance is not as expected. Confirm that the unit is level, the cold-water supply is connected to the line strainer, the manual water valve is open, and water lines and valves are free of leaks. Check that water pressure and quality meet the stated requirements. For a gas-fired unit, confirm the permanent 115-volt connection at the junction box. The manual also calls for checking the sight gauge for an operating level of about one-third full and the steam pressure gauge for the 10 PSI factory setting.
If water or hot condensate backs up into a compartment, the manual warns that the drain may be undersized, blocked, not freely vented or lacking gravity flow. Restrictions can also cause steam to leak around a door gasket or reduce convection action. Check that the drain screen is in place and that the drain line remains open and free-flowing. Pressure adjustments are for qualified service personnel only.
Applications
The 36CGM300’s two compartments and cafeteria-pan capacity suit commercial kitchens preparing multiple pans of food with steam, including cafeteria and institutional meal service. Separate compartment timers allow operators to manage timed steaming independently, while the bypass switch provides a constant-steaming mode. Its pressureless compartments allow access during cooking without stopping the steaming process.
