About the Garland MCO-GS-10
Overview
The Garland MCO-GS-10 is a Master Series, single-deck gas convection oven in standard depth. Its cooking cavity measures 29 in. wide by 24 in. high by 24 in. deep. The manual lists an input of 60,000 BTU/hr and natural gas or propane as fuel options. The Master 200 control section in the installation and operation manual covers startup, fan speed, lights, cool-down, temperature and timer functions.
This oven can be used for commercial baking and roasting. The manual’s cooking guidance addresses cakes, pies, cupcakes, meats and rolls. Its installation and service requirements should be checked against the equipment’s data plate and the applicable manual for the specific unit.
Key Features
- Single-deck, standard-depth format: One cooking cavity with the dimensions listed below.
- Gas heat: The manual gives natural gas and propane input specifications.
- Two-speed convection motor: The manual specifies a two-speed motor operating at 1140 and 1725 rpm, 60 Hz.
- Master 200 controls: The operation manual identifies functions for temperature, timer, fan speed, lights and cool-down.
- Electrical options: The specifications list 120V/1-phase and 240V/1-phase configurations.

Installation & Requirements
Clearances and access
The manual lists minimum clearances for the single-deck oven. For installation adjacent to combustible or non-combustible walls, it specifies 1 in. (26 mm) at the left side, 1 in. (26 mm) at the control side and 3 in. (77 mm) at the rear. Near high-heat-producing equipment, the listed minimums are 1 in. (26 mm) at the left side, 6 in. (153 mm) at the control side and 3 in. (77 mm) at the rear. The manual recommends 12 in. (305 mm) of control-side clearance for service. Entry clearance is listed as 47 in. (1194 mm) when crated and 32-1/2 in. (826 mm) when uncrated.
Gas connection
Use the gas type marked on the data plate: the manual directs that a unit marked “NAT” be connected to natural gas and a unit marked “PRO” to propane. The single-deck gas inlet is 3/4 in. NPT at the rear. An internal pressure regulator is supplied with the oven. The manual instructs installers to have the gas supply and piping checked to ensure adequate pressure; when other appliances share the supply line, it must be sized for their combined demand without more than a 1/2 in. WC pressure drop at the appliance manifold at full rate. Gas installation must follow local codes or the applicable codes named in the manual.
Electrical connection
The manual calls for a 15A service for each oven. It specifies 120V/1-phase at 9.8A or 240V/1-phase at 5.2A. For 115V use, a 6 ft. cord with a NEMA 5-15P plug is provided; the plug must connect to a properly grounded three-prong receptacle. The manual says not to cut or remove the grounding prong and recommends a separate 15A circuit for each 120V unit.
Ventilation
The manual states that proper ventilation is important for operation and identifies two venting options: a canopy hood or direct venting. It also warns that large objects must not block airflow at the front of the oven and that objects must not be placed on the main top rear while the oven is in use, as this can obstruct flue-product venting.
Operation
The Master 200 control material in the manual covers off mode, startup, fan speed, lights, cool-down, temperature and timer operation. The manual’s contents also identify separate control sections for other Master control systems; confirm which control is fitted to the individual oven before using instructions for those controls.
The manual cautions that the oven should not be operated during a power failure. It also emphasizes that gas burners and pilots need sufficient air. Keep the front airflow path and the rear flue area unobstructed during use.
Cleaning & Maintenance
Disconnect the line cord from the power supply before cleaning or servicing. For the initial break-in, the manual instructs operators to run a new oven for one hour at 375°F (191°C) before normal cooking. After it cools, wipe the interior and racks with a clean, damp cloth. The manual also advises establishing a regular exterior-cleaning schedule and wiping spills immediately.
If aluminum foil is routinely used to wrap food or cooking vessels, the manual calls for fan-area maintenance: turn the power switch off, remove the oven racks and rack guides, then remove and clean the air baffle. Check the blower wheel and air baffle for foil or food deposits, and clean the blower-wheel fins. The manual cautions that the fin edges may be sharp. Reinstall the air baffle, rack guides and racks after cleaning.
The manual describes the motor as maintenance-free, with self-lubricating sealed ball bearings. It notes that the motor cools itself through air entering at the rear of the motor case, provided proper clearance is maintained.
Troubleshooting
Cooking results
- Cakes dark at the sides but underdone in the centre: Lower the oven temperature.
- Cake edges too brown: Reduce the number of pans or lower the temperature.
- Cakes pale on the outside: Raise the temperature.
- Cake settles slightly in the centre: Bake longer or raise the temperature slightly; avoid opening the doors too often or for long periods.
- Cake ripples: The manual identifies overloaded pans or batter that is too thin as possible causes.
- Cakes too coarse, or cupcakes cracking on top: Lower the oven temperature.
- Pies have uneven colour: Reduce the number of pies per rack or stop using bake pans.
- Meat is browned but underdone in the centre: Lower the temperature and roast longer.
- Meat is too well done and browned: Reduce cooking time; the manual also says to limit moisture.
- Meat develops a hard crust: Reduce the temperature or place a pan of water in the oven.
- Rolls have uneven colour: Reduce the number or size of pans.
Ignition and burner checks
The Garland service-manual troubleshooting sequence checks for gas supply and open manual valves, adequate supply pressure, a clear pilot orifice, ignition lead and ground connections, and a steady pilot flame covering the flame-sensing rod. It also describes checking ignition-module and gas-control operation. These are service diagnostics; the service manual cautions users to disconnect electrical supply before servicing. Use the model’s service documentation for work on gas or electrical components.
Applications
The manual’s cooking guide and performance recommendations cover baked goods such as cakes, cupcakes, pies and rolls, as well as meat roasting. This range of tasks makes the MCO-GS-10 relevant to commercial kitchens preparing both baked menu items and roasted foods in a single-deck oven.
