About the Groen BPP-30E
Overview
The Groen BPP-30E Eclipse Ergonomic Tilting Braising Pan is an electrically heated floor-model cooking unit with a motor-powered tilting mechanism. It is intended for commercial heating, cooking and holding of food and water. The stainless steel pan serves as a braising and general batch-cooking surface, and the tilting body lets an operator pour or transfer product into a receiving container. The pan can also be tilted past the vertical position to help with cleaning.
The BPP-30E has an 11.5 kW heating system and a pan interior measuring 26.25 inches from left to right, 28.25 inches from front to back, and 10 inches deep. A thermostat dial sets the pan temperature, an indicator light shows when it is heating, and a separate switch controls powered tilting. Its one-piece stainless steel cover is hinged to the frame and opens toward the back. A counterbalance mechanism helps the cover remain open at the position selected by the operator.
Key Features
- Power tilt: A three-position switch on the control console provides powered movement of the pan body for pouring and return to the horizontal cooking position.
- Electric heat: Integrated heating elements heat the pan. The thermostat cycles the elements to maintain the selected temperature.
- Thermostat and indicator light: The thermostat dial sets the cooking temperature, and the heat indicator illuminates while the pan is heating. The light cycles on and off as the pan holds the set temperature.
- Stainless steel construction: The pan and heavy-gauge, one-piece cover are stainless steel. The cover includes a rear condensate drip shield on its underside.
- Counterbalanced cover: A fully enclosed torsion-bar counterbalance assists cover movement and holds the cover open at different positions.
- Cleaning access: The pan body tilts past vertical to assist rinsing and removal of food residue.

- Temperature range stated in the operator manual: 100°F to 400°F
- Electrical connection: One electrical connection is required
The operator manual calls for copper supply wire rated at least 75°C. The required supply depends on the unit’s electrical data plate and the available branch circuit. The manual states that standard equipment is shipped ready for three-phase operation at 208 V, 240 V or 480 V, and describes conversion to single-phase operation. Confirm the installed unit’s data plate and wiring diagram when checking electrical compatibility; the wiring diagram is located inside the control-box cover.
Installation & Requirements
The manual instructs the installer to place the unit in position and level it using the adjustable feet. Set the pan body fully horizontal, then check the bottom of the pan with a spirit level. The unit must be level to help prevent uneven cooking across the pan. Installation and electrical work must be performed by personnel qualified to work with electricity, and the unit must be electrically grounded at the provided terminal.
Make a waterproof connection for the incoming power line at the electrical service entrance at the bottom of the connection box at the rear of the control console. The manual does not recommend a BX connection. Supply the electrical service shown on the unit data plate and follow applicable local codes and the National Electrical Code referenced in the manual. Use copper wire rated at least 75°C and of the gauge specified for the electrical configuration. The unit is supplied with internal wiring in place and is ready for connection.
The manual describes conversion from three-phase to single-phase power. Before conversion, verify that the branch-circuit wiring can handle the increased amperage requirement. Single-phase conversion requires two jumper wires; one is on the terminal block for three-phase input and the other is supplied in a bag inside the control box. Install the jumpers according to the wiring diagram and complete and attach the supplied conversion label near the data plate. Electrical conversion should be completed by qualified personnel. The unit is electrically heated; the cited manual does not specify gas or ventilation connection requirements.
Operation
Initial start-up
After installation, remove packing materials and literature from inside and outside the unit, then turn on electrical power. With the pan horizontal, add enough water to cover the bottom to a depth of ¼ to ½ inch (6 to 13 mm). Observe how the water lies across the pan bottom as a practical level check. Set the thermostat to 235°F; the heating indicator should illuminate, and heating should continue until the water boils. Turn the thermostat to OFF to stop heating. After the water has cooled sufficiently for safe handling, operate the tilt system to confirm smooth movement. The manual directs operators to contact a local Groen service agency if the unit does not function as described.
Cooking and temperature control
Set the thermostat dial between 100°F and 400°F for the desired cooking temperature. The indicator light shows when the pan is heating; cycling of the light indicates that the pan is holding at the set temperature. Clicking sounds from the contactors during these cycles are described as normal. For braising or frying, preheat before adding food. For a more even temperature across the pan, the manual recommends preheating at 300°F or below for 15 minutes, or through several thermostat on/off cycles. Do not heat an empty pan for more than five minutes at settings above 300°F, as this can damage the pan.
For simmering or slow heating, the manual suggests a setting around 210°F or lower. Closing the cover helps reduce moisture loss; leaving it open can help dry or reduce product. The thermostat can be adjusted within its range to cook as required. Leave the cover vent open when excess steam needs to escape. Keep liquids at least 2 to 3 inches below the pan rim to leave room for stirring, boiling and safe transfer.
Tilting and product transfer
Use the power-tilt switch to raise or lower the BPP-30E pan body. Place a stable receiving container close to the pan before pouring. Wear protective oven mitts and an apron, stand to the left or right rather than directly in the pour path, and tilt slowly while maintaining control. Sauce or melted fat can cause food to slide forward suddenly and splash. Do not overfill the receiving container, and return the pan to its upright position when transfer is complete. Keep the floor in front of the work area clean and dry; clean spills promptly.
Cleaning & Maintenance
After each use, turn the thermostat to OFF and clean food-contact surfaces. At the end of the day, or at least once every 24 hours, turn off the heat, shut off electrical power, and clean the pan inside and outside. For continuous use, the manual calls for complete cleaning and sanitizing of the inside and outside at least every 12 hours. Before cleaning, turn the thermostat to OFF. Before cleaning any part other than the inside of the pan, disconnect electrical supply at the circuit breaker or fuse box.
To clear larger food residue, tilt the pan and flush it with lukewarm water. Do not scrape the pan with metal tools. Wash the pan body with a warm cleaning solution prepared according to the cleaner supplier’s directions, then rinse thoroughly with lukewarm water and drain completely. Clean the cover underside, console, and other soiled surfaces. A brush is supplied for cleaning between the pan body and the consoles. A cloth moistened with cleaning solution can be used on the controls, console and electrical conduit.
For stuck-on residue, the manual permits a brush, sponge, cloth, plastic or rubber scraper, or plastic wool with cleaning solution. Letting the solution soak or briefly heating it can help loosen residue. Do not use gritty cleaners, metal tools or steel wool; scratching makes surfaces harder to clean, and steel-wool fragments can cause rusting and pitting. The manual also cautions against leaving chlorine sanitizer in contact with stainless steel for longer than 30 minutes.
Keep water and cleaning solutions out of controls and electrical equipment. Do not spray or hose the control box or electrical connections, and do not use a high-pressure hose on the braising pan. Follow the cleaner label and wear protective gloves, goggles or a face shield, and protective clothing as appropriate. When sanitizing, the manual specifies a solution equivalent to one supplying 100 parts per million available chlorine.
Troubleshooting
- The pan heats, then the indicator goes off: This is normal thermostat cycling when the pan reaches its selected temperature. The manual notes that contactors may click during cycling.
- The pan does not heat during initial start-up: Confirm that electrical power is on and the thermostat is set above OFF. The manual says the indicator should illuminate while heating. If the unit does not operate as described, contact a local Groen service agency.
- The pan does not tilt as expected: During initial start-up, the operator manual calls for checking that the power-tilt switch moves the pan smoothly. If it does not function as described, contact a local Groen service agency.
- Heating appears uneven: The manual states that the unit must be level to avoid uneven cooking across the pan. Check pan level with a spirit level on the bottom of the pan and adjust the feet as needed.
Before replacing parts, disconnect the unit from electrical power. The service and parts manual identifies components including heating elements, a thermostat control, indicator light, tilt switch, contactor, high-limit thermostat, transformer, terminal block and fuses. The manual warns that a fuse with a higher amp rating than specified must not be used, and that service or replacement parts outside the manufacturer’s stated requirements can create hazards or affect warranty coverage.
Applications
The BPP-30E suits commercial kitchens preparing foods in batches by braising, frying, simmering, slowly heating, holding or reducing product. Its temperature-controlled pan supports staged cooking, while powered tilting assists with transferring cooked food and draining the pan for cleaning. Typical work may include preparing sauces, braised dishes, breakfast items or other menu components in a central production kitchen. The operator manual limits intended use to commercial heating, cooking and holding of water and food products.
