About the Groen DH-60
Overview
The Groen DH-60 is a floor-mounted, self-contained gas steam jacketed kettle with a 60-gallon capacity. Its 2/3-jacketed construction heats the kettle through steam generated within the unit, so a remote steam source is not required. The kettle is manually tilted using a crank mechanism to pour prepared food into a receiving vessel or serving line. This format suits high-volume production in commissaries, catering kitchens, institutional foodservice, and other commercial kitchens handling large batches.
The kettle body has a reinforced bar rim and a welded, butterfly-shaped pouring lip. The support base encloses the controls and houses the self-locking manual tilt mechanism. Stainless steel tubular legs with adjustable bullet feet support the unit. A faucet mounting bracket is standard; a 2-inch tangent draw-off valve is an option.
Key Features
- 60-gallon capacity: Suitable for batch cooking at production scale.
- 2/3 steam jacket: Uses a self-contained gas-heated steam source rather than a remote boiler.
- 316 stainless steel kettle interior: Solid, one-piece welded construction with a 180-emery-grit interior finish.
- Manual crank tilt: The kettle has a smooth-action, self-locking tilt mechanism for controlled pouring.
- Gas-fired heating: The 60-gallon model has a 150,000 BTU/hr firing rate and delivers 93,000 BTU/hr into the product. The fin-tube burner assembly is specified at 62–65% combustion efficiency, depending on size.
- Automatic safety features: The gas supply shuts off automatically when the kettle is tilted. Safety systems include a pressure-vacuum gauge, pressure relief valve, pressure limit control, water sight glass, low-water cutoff, and gas regulator valve.
- Control choices: DH-60 family documentation lists Classic, Advanced, and Cook2Temp control versions. Cook2Temp versions include a core probe; the DH-60 model designation here does not specify a control suffix.

Installation & Requirements
The DH-60 requires a gas connection and electrical service. The specification calls for a 1/2-inch IPS gas line and a 115-volt electrical connection. The operator manual specifies 115 VAC, 60 Hz, single phase, 5 amps, and notes that alternate 208–240 VAC service may be ordered. Electrical work and gas installation must be performed by personnel qualified to work with both, in accordance with applicable local requirements and the Canadian Electrical Code or other applicable code identified in the manual.
Install the kettle in a well-ventilated area with adequate air supply. The manual calls for a vent hood and exhaust fan, with no direct connection between the vent duct and the kettle flue. Do not obstruct the flue or vent duct. Keep the area directly around the appliance clear of combustible materials.
The manual gives these minimum clearances from combustible walls: 6 inches at the left side, 6 inches at the right side, and 10 inches at the rear. For non-combustible walls, it specifies 0 inches at the left and right sides and 10 inches at the rear. Recommended clearances are 6 inches left, 10 inches right, and 12 inches rear. Allow room around the appliance for cleaning, maintenance, and service. The manual permits installation on combustible or non-combustible flooring.
Level the kettle using a spirit level on the bar rim and adjust the bullet or flange feet as needed. The manual specifies a 1/2-inch gas line or approved equivalent. Bring electrical service through the entrance at the rear of the support housing using a 1/2-inch conduit connector, make a watertight connection, and ground the unit at the provided terminal. After connection, check gas joints for leaks using a suitable leak detector or soap solution; the manual explicitly warns not to use a flame. Confirm that jacket water is between the sight-glass markers and that the safety valve outlet faces downward.
Operation
The self-contained steam system is factory charged with chemically pure water containing rust inhibitors. Gas-fired heating produces steam in the jacket, and the kettle temperature is controlled by the selected DH-family controls. Classic controls include an on/off switch and indicator, a temperature control knob, a heating indicator, and a low-water warning light. Advanced controls add temperature and time settings, an LED display, preset reset buttons, and manual and timer functions. Cook2Temp controls add Auto C2T and Manual C2T functions and a core-probe connection; these features apply to that control version, not necessarily every DH-60.
The manual identifies electronic ignition and a thermostat that cycles heating to maintain the selected temperature. The newer specification describes the system as providing temperatures from 100°F to approximately 287°F; the operator manual gives 150°F to approximately 295°F. The kettle must contain liquid when the burners are operating. The gas supply automatically shuts off when the kettle is tilted. Before operation, the manual directs the operator to confirm the jacket water level is within the sight-glass marks and to follow the jacket filling and water-treatment instructions if it is low.
Cleaning & Maintenance
The specification describes the kettle interior as polished to a 180-emery-grit finish and the exterior as bright high-buff stainless steel, with the finish intended to make cleaning easier. It does not specify cleaning chemicals or a cleaning schedule. The enclosed base is described as sanitary and drip-proof, with its interior accessible for installation or maintenance.
For jacket upkeep, the manual says to check the water level between the sight-glass markers and directs operators to its jacket-filling and water-treatment procedure if the level is low. The factory charge contains chemically pure water and rust inhibitors. The manual also identifies the pressure-vacuum gauge, pressure relief valve, pressure limit control, low-water cutoff, gas regulator, and sight glass as system components. Use the model manual for the prescribed service procedures; the source material does not provide a maintenance interval.
Troubleshooting
The operator manual’s troubleshooting information assigns the listed gas and ignition checks to an authorized service representative. If the pilot lights but the main burner does not come on, the manual calls for checking the specified electrical connection between the ignition module terminals while the pilot is burning, confirming adequate gas pressure, and checking the main-valve electrical connections and valve operator. If the pilot lights but the spark continues, the manual lists checks for burner grounding, cracks in the pilot-burner ceramic insulator, a grounded cable, gas pressure, a clean pilot assembly, secure mechanical and electrical connections, and the ignition control module. If the main burner lights but will not stay on, the manual lists checking the burner ground and gas supply pressure. These are service checks, not operator adjustments.
If the user smells gas, the manual says to consult the local gas supplier’s instructions and, at minimum, turn off the gas and call the gas company and an authorized service representative. Do not use a flame to check for gas leaks.
Applications
The DH-60 can support batch preparation of soups, sauces, gravies, vegetables, pasta, rice, poultry, seafood, meat dishes, and pie fillings. Its large kettle capacity and tilting pour are practical for kitchens producing food in volume, including catering operations, commissaries, and institutional foodservice. The optional tangent draw-off provides another way to dispense product when specified with the kettle.
