About the Groen DH-80
Overview
The Groen DH-80 is an 80-gallon (302 L) gas-fired steam-jacketed kettle for commercial heating, cooking and holding of water and food products. Its self-contained steam source heats the kettle through a jacket, and a hand crank tilts the kettle for pouring. The source listing specifies natural gas for this configuration.
The kettle is furnished with a reinforced rim and butterfly-shaped pouring lip. Its interior finish is 180-emery grit, with a bright high-buff polish on the outside. The steam jacket is ASME shop inspected and registered for working pressures up to 50 PSI (3.45 bars). The listed dimensions and weight make space planning and delivery access important considerations for a kitchen project.
Key Features
- Large-batch capacity: 80 gallons (302 L), suitable for preparing soups, sauces, stocks, stews and other high-volume menu items.
- Steam-jacketed heating: The self-contained steam source provides kettle temperatures from 150°F to approximately 295°F (65°C to 150°C).
- Crank tilt: A hand crank tilts the kettle to pour its contents. The gas supply shuts off automatically when the kettle is tilted.
- Construction and finish: Stainless steel construction, reinforced rim and butterfly-shaped pouring lip, with a 180-emery-grit interior finish and bright high-buff exterior polish.
- Jacket protection and controls: The kettle includes a pressure gauge, safety valve, pressure limit control and low-water cut-off. Other listed control components include a thermostat or controller, power switch and gas regulator valve.

Installation & Requirements
The manual calls for installation by personnel qualified to work with gas, electricity and plumbing, in accordance with applicable codes. The listed DH-80 configuration is natural gas. The manual describes the DH kettle family as requiring a gas supply and electrical service; it specifies a ½-in. gas service line or approved equivalent and 115 VAC, 60 Hz, single-phase, 5-amp electrical service. It also notes that the unit must be electrically grounded at the provided terminal. Follow the applicable Canadian Electrical Code, CSA C22.2, and local requirements referenced in the manual.
Install the kettle in a well-ventilated area with adequate air supply. The manual calls for a vent hood and exhaust fan, with no direct connection between the vent duct and the kettle flue. Do not obstruct the flue or vent duct. The area directly around the appliance must be clear of combustible materials.
The manual gives minimum clearances from combustible walls of 6 in. at the left side, 6 in. at the right side and 10 in. at the rear. For non-combustible walls, its stated minimums are 0 in. at either side and 10 in. at the rear. Recommended clearances are 6 in. at the left side, 10 in. at the right side and 12 in. at the rear. Level the kettle using a spirit level on the bar rim and adjust the bullet or flanged feet. The manual also says to leave room around the unit for cleaning, maintenance and service.
Operation
The DH-80 is intended for commercial heating, cooking and holding of water and food products. Its self-contained steam source heats the kettle, and the manual lists a thermostat or controller, pressure gauge, safety valve, pressure limit control, low-water cut-off, power switch and gas regulator valve among the unit controls. The specified kettle temperature range is 150°F to approximately 295°F (65°C to 150°C).
Use the hand crank to tilt the kettle for product transfer. The gas supply shuts off automatically when the kettle is tilted. When pouring hot product, the manual cautions operators to use a container deep enough to limit splashing, place it on a stable, flat surface close to the kettle, and avoid overfilling it. Keep liquids at least 2–3 in. (5–8 cm) below the kettle rim while cooking, holding or cleaning to leave room for stirring, boiling and transfer. Avoid direct contact with hot food, water and kettle surfaces.
Cleaning & Maintenance
Clean food-contact surfaces as soon as possible after use. If the kettle is in continuous use, the manual calls for thorough cleaning and sanitizing of its interior and exterior at least once every 12 hours. Scrape and flush out food residue without scratching the kettle. Prepare and use detergent or cleaning compound according to its supplier’s instructions; clean the kettle thoroughly, then rinse it with hot water and drain completely.
For burnt-on food, use a brush, sponge, cloth, plastic or rubber scraper, or plastic wool with the cleaning solution. Allowing detergent solution to soak on residue can reduce scrubbing effort. Do not use metal tools, abrasive materials or steel wool: scratches can make the surface harder to clean and provide places for bacteria to grow, while steel-wool particles can contribute to corrosion and pitting. The manual permits cleaning the exterior with a warm-water spray of 100°F or less, but says not to use a high-pressure spray. It also describes polishing the exterior with a stainless-steel cleaner.
For sanitizing, the manual specifies a solution equivalent to one supplying 200 parts per million available chlorine and recommends sanitizing just before use. Do not leave sanitizer in contact with stainless steel for longer than 30 minutes. If hard water or food residue leaves mineral deposits or a film, use a de-liming agent according to its manufacturer’s directions, then rinse and drain the kettle thoroughly.
For maintenance, the manual advises periodic inspection and keeping a maintenance and service log recording the date, work performed and person responsible. It states that the pressure gauge should show a vacuum of 20 to 30 inches when the kettle is cold. Keep grease away from electrical parts near the gears; the manual directs lubrication through the Zerk fittings and says to grease the wheel where it contacts the worm gear. Check pressure-relief-valve operation periodically and avoid exposure to discharged steam. Before replacing parts, disconnect electrical power, close the main gas valve and allow five minutes for unburned gas to vent. The manual advises contacting an authorized representative when repairs are required.
Troubleshooting
The manual’s troubleshooting guidance assigns several checks to an authorized service representative. If the system does not produce a spark, it calls for checking secondary-side transformer voltage (which should be 24 V), the high-tension cable, the pilot electric ceramic and the pilot spark gap. If a spark is present but the pilot will not light, the manual lists checking the pilot-valve connections, voltage at the ignition-control-module terminals, gas supply to the pilot, the pilot line and orifice, the pilot burner and possible drafts. It also identifies gas pressure as a check for qualified service personnel.
If the pilot lights but the main burner does not come on, the manual lists checks of voltage between the specified ignition-module terminals, gas pressure, electrical connections to the main valve and the valve’s magnetic operator. If the burner lights but will not stay on, it lists burner grounding, the pilot burner ceramic, the cable, gas pressure, the pilot assembly and mechanical and electrical connections. For a safety valve that leaks a small amount of steam during operation, the manual suggests contamination may be preventing the valve from seating; it describes briefly pulling the lever all the way with the jacket at full pressure, then allowing it to snap back. It directs replacement of a defective valve with an identical valve. Steam can cause severe burns, so use the manual’s safety warnings and qualified service support.
Applications
The 80-gallon capacity and tilting kettle format suit high-volume foodservice operations that prepare batches of soups, stocks, sauces, gravies, stews and similar foods. The hand-crank tilt supports pouring into a receiving container, while the steam jacket provides the kettle’s stated operating temperature range for commercial heating, cooking and holding.
