About the Hobart 3713
Overview
The Hobart 3713 is a full-featured automatic slicer in the 3000 Series. Its low-profile linear automatic drive moves the product carriage using magnets and electricity, reducing the number of moving parts compared with the drive arrangement described in the specification sheet. Operators can choose among three automatic carriage speeds or use manual-assist mode. Select-A-Stroke lets the operator set the stroke length by positioning the product tray.
The 3713 has a removable knife; the related 3713N has a non-removable knife. This page covers the 3713. The slicer is specified with a 13-inch CleanCut knife, a tilting and removable carriage system, a removable ring guard cover, and a top-mounted Borazon stone sharpener.
Key Features
Automatic drive and stroke control
The linear automatic drive has three carriage speeds: 30, 42 and 52 strokes per minute. Select-A-Stroke allows the operator to set the stroke length through the position of the product tray. The specification sheet says that selecting a stroke suited to the product can reduce slicing time and bearing wear. The low-profile drive uses magnets and electricity to move the product back and forth, and the design reduces moving parts.
Manual-assist mode provides drive assistance when the operator moves the carriage manually, reducing the effort needed for manual slicing. An ergonomic-style handle supports this manual operation. The double-action indexing barrel cam provides consistent indexing numbers across machines and over time. Its first full revolution gives precise control for shaving, chipping and thin slicing; the second revolution opens the gauge plate quickly for thicker slicing.
Knife, guard and sharpening
The 3713 has a removable 13-inch CleanCut knife. Removal is described as using an optional knife-removal tool. With the knife removed, the area inside the ring guard is open for cleaning; the knife and removal tool are described as warewasher safe. The removable ring guard cover catches debris around the knife so it can be removed during cleaning and reduces the time needed to floss around the knife.
The zero-knife-exposure feature covers the knife edge when the sharpener is mounted or removed. The gauge plate also remains closed while the sharpener is operated, helping keep the knife edge covered during sharpening. The top-mounted Borazon stone sharpener sharpens and hones in a single action in five seconds. The sharpener is removable and warewasher safe, and the Borazon stones are described as lifetime guaranteed.
Carriage and frame details
The tilting, removable carriage can be tilted for midday cleaning and removed for complete cleaning and sanitation. The Enduralube carriage rail system provides continuous lubrication of the carriage rod; the specification sheet says lubrication needs replenishing once a year to maintain performance. A cleaning leg holds the slicer at an incline to allow cleaning underneath.
The rear-mounted meat grip leaves the front of the product tray open for loading and is shaped and weighted to hold product. The glass-bead finish on the gauge plate, top knife cover and product tray reduces drag for a smoother slicing motion. The burnished aluminum base has limited cracks, crevices and bolt holes where product may lodge, supporting easier cleanup. The 10-rib Poly V-belt drive system transfers energy from the motor to the knife and is described as quieter in operation.

Operation
For automatic slicing, the operator selects one of the three carriage speeds and positions the product tray to set a stroke length suited to the product. The listed speeds are 30, 42 and 52 strokes per minute. The sheet describes Select-A-Stroke as a way to choose an appropriate stroke length, which can reduce slicing time and bearing wear.
The slicer also has manual-assist mode. In this mode, the linear drive assists the operator in moving the carriage manually. The indexing knob uses a double-action barrel cam: the first full revolution provides precise gauge-plate control for shaving, chipping and thin slicing, while the second revolution opens the gauge plate quickly for thicker slices. The stated maximum slice thickness is 1¼ inches.
Cleaning & Maintenance
The 3713 includes several removable or tilting components for cleaning. The carriage tilts for midday cleaning and can be removed for complete cleaning and sanitation. The cleaning leg raises the slicer at an incline to allow access underneath. The ring guard cover can be removed to clear collected product debris around the knife and reduce the time spent flossing around it.
The removable knife can be taken out with the optional knife-removal tool. The specification sheet identifies both the knife and tool as warewasher safe. The top-mounted sharpener is also removable and warewasher safe. Its Borazon stones sharpen and hone in a single action in five seconds, and are described as lifetime guaranteed. During sharpener operation, the gauge plate remains closed; the zero-knife-exposure feature covers the knife edge when the sharpener is mounted or removed.
The Enduralube carriage rail system continuously lubricates the carriage rod. The specification sheet says to replenish it once a year to maintain performance. The burnished aluminum base limits cracks, crevices and bolt holes where product could lodge, helping with cleanup. The glass-bead finish on the gauge plate, top knife cover and product tray reduces drag for a smoother slicing motion.
Applications
The 3713 is suited to commercial food-preparation areas that need automatic carriage operation, with the option of manual slicing assistance. Its adjustable stroke length and three automatic speeds let an operator select settings for different products. The indexing control supports shaving, chipping, thin slicing and thicker slicing up to the specified maximum. The product tray capacity is stated for rectangular food approximately 12 inches by 6 inches or round food approximately 8 inches in diameter.
