About the Hobart 4822
Overview
The Hobart 4822 is a commercial meat chopper for kitchens and food-preparation operations that process meat in batches or as needed. Its #22 attachment hub drives a spiral-fluted chopping end, with a Stay-Sharp knife and perforated grind plate controlling the cut. The fineness of the grind depends on the plate-hole size, not on how tightly the adjusting ring is turned.
Specifications depend on the electrical configuration. Hobart’s specification sheet lists 60 Hz models with a 1.5 HP motor and a 230/50/1 model with a 1.25 HP motor. The operator manual also covers a 230/50/1 model and provides installation, operating, cleaning and troubleshooting instructions for it.
Key Features
- #22 attachment hub: The 4822’s attachment drive is specified as size #22.
- Spiral-fluted chopping end: The cylinder, worm and adjusting ring are heavily tinned, and the cylinder has a spiral-fluted design.
- Stay-Sharp components: The manufacturer describes the knife and plates as hardened alloy steel that holds its edge longer than standard carbon steel and can be resharpened more times than regular plates.
- Included knife and plate: Hobart’s specification sheet lists a #22 Stay-Sharp knife and a 1/8-inch-diameter grind plate.
- Stainless steel construction: The housing and standard feed pan are stainless steel. Hobart describes the finish as durable and easy to clean.
- Manual controls: A manual ON/OFF switch is fitted at the back of the machine and can be moved to the front.
- Safety and operation: The 230/50/1 operator manual describes a no-volt-release feature that prevents automatic restarting after a supply failure or mains disconnection.
- Optional equipment: Hobart lists a funnel-shaped cylinder, additional #22 Stay-Sharp knives and plates, stuffing horns, and rectangular and round pans as options or accessories.

Installation & Requirements
The operator manual says to check that the electrical service matches the rating plate on the front panel below the drive hub before installation. Electrical installation must comply with local electrical regulations and be carried out by a competent person. For the 230/50/1 model covered by the manual, Hobart specifies a properly grounded 10 A circuit with appropriate fuse or circuit-breaker protection and a suitable receptacle. The manual also describes a 1.8 m cord with a 10 A grounding-type plug. Electrical details differ by configuration, so confirm the unit’s rating plate and connection requirements before connecting it.
Install the chopper indoors, on a flat, horizontal surface. The manual specifies a level tolerance of 1 mm per metre from side to side and front to back, and says the surface must support the chopper and a full feed pan. The machine is not suitable for outdoor installation or for a location where a water jet may be used for cleaning. Operation and maintenance are restricted to trained personnel. The manual calls for moving the machine in its packaging where possible, checking for shipping damage, removing the four skid bolts and fitting the four supplied legs. Under normal operation, the machine does not need to be bolted down.
Operation
Before first use, clean and sanitize the chopper. To assemble the chopping end, make sure the drive hub and socket are clean. Insert the cylinder socket into the drive hub with a slight twisting motion to the left until the cylinder stop pin contacts the side of its receiving hole, then secure it with the thumb screw. To remove the cylinder, loosen the thumb screw three complete turns; the manual says not to remove the screw completely.
Slide the worm into the cylinder and turn it until its square shank locks into the hub drive. Fit the knife on the worm with its cutting edges facing out, then install the grind plate with its notch aligned to the pin at the bottom of the cylinder. Thread the adjusting ring on hand tight, then install the feed pan and feed stomper. The knife and plate depend on meat for lubrication, so the chopper must not be run without meat.
Cut meat into strips, switch the machine on using the green ON button, and feed the meat into the chopper. Use the feed stomper only when needed; properly sized strips should feed without assistance. When running meat through a second time, the manual recommends feeding small quantities rather than forcing large amounts with the stomper. Keep the feed pan in place on the cylinder. Do not tighten the adjusting ring beyond hand tight: plate-hole size, rather than ring tension, determines the fineness of the grind. Press the red OFF button to stop the motor. Between uses, remove the chopping end and feed pan and refrigerate them for reuse, or clean and sanitize them if required.
Cleaning & Maintenance
Disconnect the mains electricity supply before cleaning or servicing. Unplug the power cord before cleaning, servicing or removing parts, and replace parts before operating the machine again. Do not hose or pressure-clean the appliance. The manual says to clean and sanitize the chopper before putting it into service and thoroughly clean it at the end of an operating day or after an extended idle period.
Remove the feed pan, adjusting ring, grind plate, knife, worm and chopper cylinder for cleaning. Hobart lists a 12-inch-handle nylon brush that fits through the cylinder, separate pails for detergent, rinse water and sanitizer, clean cloths and a spray bottle among the recommended supplies. Follow the detergent and sanitizer manufacturer’s safety data, wear suitable gloves and eye or face protection, and prepare cleaning and rinse solutions as directed by the manual.
The manual’s sanitizing instructions specify adding one tablespoon of 5.25% sodium hypochlorite bleach to one gallon of water to make a 200 ppm solution. Use the solution in a spray bottle and sanitizing pail. Thoroughly clean and sanitize the feed pan, feed stomper, cylinder assembly, worm assembly, knife, plate, adjusting ring and machine housing. After cleaning, apply a light coat of food-grade mineral oil to the cylinder, adjusting ring, knife, plate and worm before reassembly.
Inspect the hub drain slot and the drain hole at the bottom of the cylinder periodically to ensure they are not obstructed by accumulated material. A small brush may be used for the hub drain slot and a small wire for the cylinder drain. Under normal conditions, the motor air-intake screen needs little or no attention; where sawdust or other foreign material is present, check it periodically and wipe or brush it clean as needed. The manual recommends regular servicing of the chopper and attachments at least twice a year, depending on frequency of use. For storage when the machine will not be used in the immediate future, clean it completely and cover it with a towel or other suitable cover.
Troubleshooting
If the machine will not start, the operator manual lists a tripped circuit breaker as a possible cause and says to check the fuse or circuit breaker. It also lists an internal overload trip as a possible cause. The provided manual text does not include further troubleshooting steps for that condition.
Applications
The 4822 is suited to commercial food-preparation work that calls for grinding meat through interchangeable plate-hole sizes. Its 1/8-inch plate provides a stated first-cut capacity of 16 lb/min in the standard specification; the manual also describes grinding meat for preparation in commercial kitchens. The optional FS configuration is listed separately by Hobart with a first-cut capacity of 20–22 lb/min through a 1/8-inch plate.
