About the Hobart DEC5
Overview
The Hobart DEC5 (ML-126749) is a full-size electric convection oven in Hobart's DEC/HEC series — a single-cavity oven with doors that open independently, furnished with five racks. Per the DEC/HEC series manual, these ovens feature a 500°F (260°C) thermostat, a timer, a porcelain interior and a 2-speed, 1/2 H.P. blower motor as standard equipment, with a standard 208 or 240 volt, 60 Hz, 1- or 3-phase electrical service and 480 V available optionally. An open stand with lower storage rack is available as an option, and stacked ovens are furnished with a stacking kit for mounting one oven on top of the other.
The DEC5 shares its control panel, rack assemblies, door seals, legs and heating elements with the related HEC5 (ML-126750), HEC5D (ML-126751), HEC5X (ML-126753) and HEC5DX (ML-126754); Hobart Canada's foodservice price list also carries the DEC501 full-size electric convection oven. PartHubz supplies the DEC5 and the replacement parts that keep it running, from heating elements and door seals to timers, thermostats and temperature controllers.

Installation & Requirements
The DEC/HEC series manual covers installation for this family of electric convection ovens. Immediately after unpacking, check for shipping damage; if damage is found, save the packaging material and contact the carrier within 15 days of delivery. Prior to installation, verify that the electrical service agrees with the specifications on the oven data plate, located inside the bottom front cover. Do not use the doors or their handles to lift the oven, and choose a location that allows adequate clearances for servicing and proper operation.
- The basic oven must be installed on legs or mounted on a modular stand; installations on concrete bases or other supports restricting air circulation underneath the oven are not advisable and may void the warranty.
- Attach each of the 4 leg assemblies to the bottom of the oven with 24 bolts and lockwashers (6 per leg).
- Fasten the chimney to the top rear of the oven with the flanges positioned under the top cover, and attach the flue extension.
- Electrical and grounding connections must comply with the National Electrical Code ANSI/NFPA-70 and local codes in the US; in Canada, local codes and the Canadian Electrical Code, CSA Standard C22.2 No. 3 (latest edition) apply.
- Disconnect the electrical power supply and tag the disconnect switch before working on the circuit; remove the wiring compartment cover on the front of the oven, remove the appropriate knockout on the bottom, attach the power supply conduit, and comply with the wiring diagram included with the manual.
- Level the oven by turning the bottom hex tips on the legs so the racks are level in the final installed position.
- For stacked installations, the stacking arrangement uses a 1 in. (25.4 mm) conduit nipple through the 1-3/8 in. (35 mm) hole to clamp the two ovens together, with flue extensions directing exhaust upward through and above the top oven; place the locking casters on the front legs.
Operation
- Set the thermostat and use the timer to set the cooking cycle time. The alarm sounds continuously when the elapsed time counts down to 0; the oven does not turn off. Turn the timer to OFF to stop the alarm, and keep the timer at OFF when the oven is not in use.
- End of day: turn the thermostat to OFF, leave the switch at ON with the door ajar so the fan cools the oven, then turn the switch to OFF and clean the oven.
- Power outage: the oven shuts down automatically and resumes normal operation when power is restored. If the oven will be left unattended during an outage, push the master switch to OFF.
Cleaning & Maintenance
Turn the oven off and disconnect the electrical supply before cleaning — the series panel label carries the same warning before changing fuses or any other service.
- Clean the outside of the oven daily by wiping with a clean damp cloth.
- Clean the porcelain oven interior daily with soap or detergent and water; rinse thoroughly and wipe dry with a soft clean cloth.
- On the optional stainless steel interior, routine cleaning uses soap or detergent and water. For burned-on foods and grease, an abrasive cleanser (scouring powder) mixed into a paste may be applied with stainless steel wool or sponge, always rubbing with the grain; this treatment also removes heat tint. Rinse with clear water and dry with a soft cloth.
- Lamps: the oven uses 40-watt bulbs (120 V or 240 V versions catalogued) with a lens and housing kit rated 250 V.
Troubleshooting
- Oven shuts down unexpectedly: a power outage causes automatic shutdown; the oven resumes normal operation when power is restored.
- No heat: check the supply at the disconnect, then the 15 amp Class G fuses (disconnect power first), the two 3-pole 50 A contactors and 50 A solid-state relays, the six 2000 W elements, and the high-limit thermodisc (00-346357-00001).
- Inaccurate cavity temperature: early DEC5 builds (before Feb. 2001) used thermostat 00-411506-00003; later construction uses temperature control kit 00-913149 with controller 00-353613-00002 and the solid-state stainless steel probe 00-353589-00001.
- Heat escaping at the doors: replace the horizontal door seals — 30-1/2 in. long, one top and one bottom (00-357507-00001, two per oven).
- Buzzer will not stop: the timer alarm sounds continuously at zero by design; turn the timer to OFF to silence it.
Applications
A full-size electric convection oven like the DEC5 suits bakeries, restaurants and institutional kitchens turning out breads, rolls, cakes, cookies, pies and pastries, as well as roasting meats and poultry, baking fish, and finishing potatoes, casseroles and other batch items. Hobart's series manual includes cooking guidelines for baked goods, meats, fish and fowl. With five racks furnished in a single cavity, and 8 in. double-stack legs catalogued for mounting one oven above another, the DEC5 fits kitchens that need convection capacity in a compact floor plan. PartHubz supplies the DEC5 along with the heating elements, seals, timers, probes, controllers and hardware listed in Hobart's DEC5 & HEC5 replacement parts catalogue (Form 34611).
