About the Hobart H600D
Overview
The Hobart H600D is part of Hobart’s H600 mixer series. The H600 is identified in the available specifications as a 60-quart all-purpose mixer with a 2 HP motor, and an H600D auction listing identifies a four-speed machine. Hobart’s H600-series installation and operation manual provides instructions for controls, bowls, agitators, attachments, cleaning and maintenance. The H600 parts manual lists the H600D among the series models.
Manual details below are from the H600 and L800 family manual. Configuration can vary: check the H600D’s data plate and installed controls rather than assuming that every electrical or optional feature applies to every unit.
Key Features
- 60-quart capacity: The H600 family is identified as a 60-quart mixer. The manual also says that 30- or 40-quart bowls may be used on the H600 with special agitators.
- Four mixing speeds: The operating manual describes four speed settings for different mixing tasks.
- Interlocked wire cage: The mixer will not operate unless the wire cage is in its operating position.
- Bowl support interlock: The bowl support must be fully raised for normal operation; the manual notes an exception while the START button is held.
- Optional timer control: The H600 family can have an electromechanical timer or, when equipped, an optional programmable timer controller.
- Available accessories: A separate use and applications handbook describes attachments and accessories. Listings identify a compatible 60-quart flat beater and a J-style dough hook for H600D mixers. Check attachment fit for the specific mixer before ordering.
Specifications
- Product: Hobart H600D commercial mixer.
- Series: Hobart H600 series.
- Capacity: 60 quarts for the H600 family; the manual also permits 30- or 40-quart bowls on the H600 with special agitators.
- Motor: 2 HP is stated for the H600 mixer in the available H600 specifications.
- Speeds: Four speeds are stated in the H600D auction listing and described in the H600-series manual.
- Timer: Electromechanical timer controls or an optional programmable timer controller, depending on equipment.
- Electrical example: One used H600D auction listing specifies single phase, 208 V. This is the configuration of that listed machine, not a universal electrical specification for every H600D.
- H600D parts reference: Hobart’s parts manual lists H600D model ML-104241.
Installation & Requirements
Before installation, inspect the mixer for shipping damage. The manual says to retain the packaging and contact the carrier within 15 days of delivery if damage is found. Before connecting the machine, test the electrical service against the specifications on its data plate. Electrical and grounding connections must comply with applicable electrical codes. The manual directs installers to use the wiring diagram inside the top cover; a 3/4-inch trade-size conduit opening is located at the top of the pedestal.
For three-phase machines, the manual instructs the installer to check that the planetary rotates in the direction of the arrow on the drip cup. If rotation is incorrect, disconnect power and interchange two incoming power-supply leads. This instruction applies to three-phase machines; do not use it to infer the H600D’s phase or wiring. The auction listing’s single-phase, 208 V specification describes one used example only.
Place the mixer where the operator can reach the controls and install or remove bowls. Allow room above the mixer to remove the top cover for routine maintenance and service. The base has holes for permanent floor bolting, though the manual says bolting is not necessary in normal installations; supplied plastic plugs can cover unused holes. Level the mixer front-to-back and side-to-side using shims under the base legs. The manual also says to check lubrication before use: the mixer is shipped with transmission oil, while planetary lubrication depends on production date.
Operation
Controls and interlocks
On mixers with electromechanical timer controls, START starts the mixer and STOP stops it. For timed mixing, set the timer; it stops the mixer when the selected time elapses. For untimed mixing, set the timer to HOLD and stop the mixer with the STOP button. On units equipped with the programmable controller, the display shows that no time is set when idle. The P1 and P2 keys access stored preset times, the TIME knob changes the displayed time, and SAVE replaces a preset.
Keep hands, clothing and utensils out of the bowl while the beater is moving. The manual warns not to operate the mixer without its interlocked guard. The wire cage must be in position for the mixer to run. The bowl support must be fully raised for normal operation; if it is not all the way up, the mixer will not operate unless START is held in.
Bowls, agitators and mixing speeds
Install the bowl before the agitator. Lower the bowl support fully, position the bowl so its rear alignment bracket sits under the support retainer and the front alignment pins enter the bowl holes, then rotate the bowl clamps over the bowl ears. If a bowl adapter is needed, fit it to the support first and then install the bowl on the adapter. With the bowl installed and fully lowered, install the agitator.
The manual describes the speeds as follows: speed 1 (low) for heavy mixtures such as pizza dough, heavy batters and potatoes; speed 2 (medium-low) for cake batters, mashed potatoes and developing bread dough; speed 3 (medium-high) for incorporating air into light batches and finishing whipped items; and speed 4 (high) for maximum, accelerated air incorporation into light batches. Do not treat these descriptions as a substitute for the separate use and applications handbook, which covers mixing procedures and specific uses for agitators and accessories.
Attachments and wire cage
To install an attachment, loosen the attachment-hub thumbscrew, remove the plug, insert the attachment with its square shank seated in the mixer’s square driver, and tighten the thumbscrew. Select the desired speed with the gear-shift lever. The manual says to operate an attachment with the bowl support fully raised and the wire cage in its front-centre position. Do not use the attachment hub while mixing. For a meat and food chopper attachment, use speed 2 or 3. If material stalls the mixer, stop it at once; the manual says not to restart at a lower speed and instead instructs the operator to remove the adjusting ring, knife, plate and worm to clear an obstruction. It also says not to use that attachment to chop bread crumbs.
The wire cage can be rotated out of the way to access the bowl, agitator or ingredients. Some liquids or powders may be added through the cage while mixing, and an ingredient-chute accessory is available. Return the cage to the front-centre operating position before running the mixer. When reinstalling the cage, align the grooves in all three nylon retainers with the ridge on the planetary drip cup.
Cleaning & Maintenance
Disconnect electrical power and follow lockout/tagout procedures before cleaning or maintenance. The manual calls for thorough daily cleaning and says not to hose the mixer. Wash the mixer with a clean, damp cloth. A flat scraper is supplied to help clean bowls and agitators. New bowls and agitators should be washed with hot water and mild soap, rinsed with a mild soda or vinegar solution, and then thoroughly rinsed with clear water before use. The manual calls for the same preparation before whipping egg whites or whole eggs.
The apron can be removed by loosening its thumbscrews; the access cover behind it can also be removed for cleaning. Periodically remove and wipe the drip cup-splash guard. The stainless-steel splash guard can be wiped or washed with a cloth or sponge and warm, soapy water, then rinsed and dried. The wire cage can be removed, washed in a sink, rinsed with clear water and dried with a clean cloth.
Lubrication instructions depend on production date. For mixers produced before September 2002, the manual says to check planetary oil periodically. With power disconnected, remove the drip cup-splash guard and fill plug; the oil should reach the bottom of the fill-plug hole. If draining is necessary, drain the planetary and refill it with 6 fluid ounces of the recommended planetary lubricant. The manual says mixers produced after September 2002 have a grease-filled planetary that does not require routine lubrication maintenance. If the planetary seal becomes dry and squeaks, apply lubricant under the seal lip.
Check transmission oil with the motor stopped; it should be even with the line on the oil-level gauge. If it is below that line, disconnect power, remove the top cover and fill plug, and add a small amount of the recommended transmission oil until the level is correct. Do not overfill, as leakage may result. The manual says to lubricate the bowl-support slideways and lift screw approximately twice a year. With the bowl support fully lowered and the apron removed, apply a thin coat of Lubriplate 630AA to the bowl-clamp area of the bowl supports, each slideway and the lift screw. For a manual bowl lift, periodically lubricate the handwheel gearing with power disconnected and the top cover removed.
Agitator clearance
Check agitator clearance with each bowl change; the agitator must not touch the bowl. The manual gives a maximum clearance of 1/8 inch (3 mm) between the bowl bottom and the B flat beater, and 5/16 inch (8 mm) between the bowl bottom and the E or ED dough arm. To measure, cover the bowl bottom with flour, raise the bowl fully, briefly run the mixer in speed 1, switch it off, disconnect power and measure the beater’s flour track at several points. If adjustment is needed, remove the apron, loosen the lower locking nut, turn the stop screw counterclockwise to increase clearance or clockwise to decrease it, then tighten the locking nut while holding the stop screw. The manual cautions that the bowl-height-sensing switch button must never be below the bottom of the nylon actuator.
Troubleshooting
If the mixer will not start, the manual lists these possible causes: the gear-shift lever is between gears rather than fully engaged; the circuit protector is open, requiring a check of the fuse or disconnect switch; the mixer or attachment is overloaded; the bowl is not all the way up; or the wire-cage assembly is not in the front-centre position. Disconnect power and follow lockout/tagout procedures before inspecting electrical components. The manual also identifies agitator-to-bowl contact as a condition to address by checking the bowl/agitator clearance and adjusting it as described above.
Applications
The manual describes the H600 as an all-purpose mixer and gives examples for its four speeds, including heavy mixtures, batters, potatoes, bread dough and light whipped mixtures. In a commercial kitchen, these tasks may arise in bakery production, food preparation and batch cooking. The supplied material does not specify production rates or batch sizes for individual recipes; consult the separate use and applications handbook for guidance on specific agitators, attachments and mixing procedures.
