About the Hobart HCM450
Overview
The Hobart HCM450 is a commercial cutter mixer with a 45-quart stainless steel bowl. Hobart lists cutting, mixing, blending, kneading and cleaning among the tasks the machine supports. The supplied attachments include a two-blade cut/mix knife and a knead/mix attachment. A stainless steel mixing baffle is also included; its pour-through centre shaft allows liquid ingredients to be added while the cover is closed.
The bowl has a pouring lip and tilts to a 90-degree angle. Hobart states that, when tilted, the bowl reaches a pour height of 15 3/8 inches from the floor. The machine has a steel base finished with gray epoxy-based enamel. The HCM450 is also listed with a clear, counterbalanced Lexan polycarbonate bowl cover and a stainless steel support bar.
Key Features
- 45-quart capacity: The stainless steel bowl has a pouring lip and tilts for pouring and product removal.
- 5 HP motor: The motor is single speed, runs at 1,140 RPM and has thermal overload protection.
- Timed and continuous operation: The 5-minute timer shuts the machine off when the selected time elapses. Hobart also specifies non-timed operation by setting the timer to run or jog.
- Mixing baffle: The stainless steel baffle has a built-in scraper to help keep the cover clean during operation. The baffle can be removed for cleaning.
- Pour-through cover: The cover's centre shaft permits adding liquid ingredients with the cover closed. The counterbalanced clear cover is made of Lexan polycarbonate and has a stainless steel support bar.
- Interlocks: Electromagnetic safety interlocks prevent operation unless the bowl cover is closed and latched. They also prevent operation when the bowl is tilted more than 20 degrees from vertical.
- Controls: Magnetically operated start and stop selectors are sealed and washable. Electrical controls are housed in a high-impact-resistance, reinforced polyester enclosure.
- Included components: The listed standard equipment includes a cut/mix knife, knead/mix attachment, stainless steel mixing baffle, polypropylene strainer basket and a 6-foot power cable with plug and receptacle.
- Optional accessory: Casters are listed as an accessory.

Installation & Requirements
The specification sheet lists three-phase electrical configurations: 200 volts at 60 Hz, 230 volts at 60 Hz, and 280–415 volts at 50 Hz. The 200- and 230-volt configurations are specified at 22 amps and should be connected to a 30-amp branch circuit. The 280–415-volt, 50 Hz configuration is listed at 9.6 amps; Hobart directs users to consult local codes for that unit. The sheet identifies the 200- and 230-volt configurations as UL listed and the 280–415-volt configuration as not UL listed.
A 6-foot flexible SO power cable is furnished. The plug and receptacle depend on the electrical configuration: Hobart lists Hubbell 2811/L21-30P and Hubbell 2810/L21-30R for 200/60/3, and Woodhead 28W75 L15-30P and Woodhead 69W75 L15-30R for 230/60/3. For 380–415/50/3, the machine is furnished with a 6-foot cord without a plug. Confirm the machine's electrical configuration and connection details against its data plate and supplied documentation.
Operation
The HCM450 uses magnetically operated start and stop selectors. Its 5-minute timer automatically stops the machine when the set time has elapsed. The specification sheet also describes non-timed operation using the timer's run or jog setting. A separate product listing describes hold and jog modes; the manufacturer sheet specifies hold and jog settings for the timer.
The bowl cover must be closed and latched for operation. The electromagnetic interlocks prevent the machine from running if the bowl is tilted more than 20 degrees from vertical. The bowl tilt lever allows the bowl to tilt as far as 90 degrees for pouring and product removal. The mixing baffle's centre shaft allows liquid ingredients to be added while the cover remains closed.
Select the attachment suited to the task: the two-blade knife is specified for cutting and mixing, while the knead/mix attachment is included for kneading and mixing. The product information also identifies blending as a use for the HCM450. The supplied specification sheet does not give processing times or ingredient-specific operating instructions.
Cleaning & Maintenance
The operator material supplied for the HCM450 includes a bowl seal instruction sheet. It directs users to disconnect the electrical power supply and follow lockout/tagout procedures before removing the seal. The sheet says the bowl seal should be cleaned at least once per day or once per shift.
To remove the bowl seal, unscrew the seal cover and pull out the rubber seal. Detents in the lower seal housing provide gripping points. Wash, rinse and dry both the seal and seal cover. Before reinstalling the seal, clean the bowl area. Insert the rubber seal into the lower seal housing and press it fully into the housing. Screw the seal cover back onto the housing until finger tight.
The stainless steel mixing baffle is removable for cleaning. Its built-in scraper helps keep the cover clean during operation and allows the cover to be cleaned before it is opened. The start and stop selectors are specified as sealed and washable. The supplied operator excerpt does not provide additional cleaning procedures for the bowl, knife or other components.
Applications
The HCM450 is suited to commercial kitchen prep that calls for cutting, mixing, blending or kneading ingredients in batches sized for its 45-quart bowl. Its cut/mix knife and knead/mix attachment support different preparation tasks, while the tilting bowl helps pour and remove finished product. The pour-through centre shaft is useful when a recipe calls for liquid ingredients to be added with the cover closed. These functions make the unit relevant to foodservice operations preparing mixtures or doughs in larger batches; the supplied sources do not specify particular recipes or ingredient limits.
