About the Hobart HEC5D
Overview
The Hobart HEC5D (ML-126751) is a single-deck electric convection oven in Hobart's DEC5/HEC5 series — a parts family that also takes in the DEC5 (ML-126749), HEC5 (ML-126750), HECV5X (ML-126753) and HEC5DX (ML-126754). Dealer listings for the HEC5D-18 configuration describe a single-deck electric convection oven mounted on a cart with casters and wired for 208V service.
Each deck carries a 12.5 KW input, and the controls adjust from 150°F to 500°F. Listings describe the HEC5D with a computer thermostat and a 24-hour digital timer. The cabinet is stainless steel on the front, sides and top (the HEC5 series listing adds the back), with stainless steel doors fitted with double-pane windows. Oven interior depth is 26 1/2″ (67.3 cm) against a 41 1/2″ (105.4 cm) exterior depth.
PartHubz supplies parts and equipment for the HEC5D. Hobart's current parts catalog for the DEC5 and HEC5 electric convection ovens (Form 34611, Rev. G, March 2023) documents the replacement components covered on this page.

Installation & Requirements
The installation notes below are taken from Hobart's manual for its DEC/HEC series electric convection ovens, the series documentation provided with this oven; confirm every detail against the data plate and manual supplied with your unit.
Unpacking and placement
- Check for shipping damage immediately after unpacking. If damage is found, save the packaging material and contact the carrier within 15 days of delivery.
- Verify that the electrical service agrees with the specifications on the oven data plate, located inside the bottom front cover.
- Do not use the doors or their handles to lift the oven.
- The oven must be installed on legs or mounted on a modular stand. Hobart advises that installations on concrete bases or other supports restricting air circulation underneath the oven are not advisable and may void the warranty.
Legs, leveling and casters
- Attach each of the four leg assemblies to the bottom of the oven with 24 bolts and lockwashers (six per leg), then carefully raise the oven to its normal position.
- Level the oven by turning the bottom hex tips on the legs so the racks sit level in the final installed position.
- Where casters are fitted, Hobart's manual places locking casters on the front legs and non-locking casters on the rear legs.
Electrical connection
- Electrical and grounding connections must comply with the applicable portions of the National Electrical Code, ANSI/NFPA-70 (latest edition), and/or other local electrical codes.
- In Canada, Hobart specifies installation in accordance with local codes and the Canadian Electrical Code, CSA Standard C22.2 No. 3 (latest edition).
- In the United States, installation must also follow state and local codes and ANSI/NFPA 96, Vapor Removal from Cooking Equipment (latest edition).
- Disconnect the electrical power supply and tag the disconnect switch before working on the circuit. Remove the wiring compartment cover on the front of the oven, attach the power supply conduit to the appropriate knockout on the bottom of the oven, and follow the wiring diagram supplied with the oven.
Operation
- Push the master switch to ON to power the controls. The ON light lights when the On/Off/Cooldown switch is at ON, and the heat light cycles on and off with the heating elements.
- Set the thermostat and timer for the cook cycle. The timer alarm sounds continuously when the count reaches zero — the oven does not shut itself off — so turn the timer to OFF to stop the alarm, and leave the timer at OFF when the oven is not in use.
- Select fan speed with the Hi/Low fan switch to suit the product being cooked.
- At the end of the day, turn the thermostat to OFF, leave the On/Off/Cooldown switch at ON with the door ajar so the blower cools the cavity, then switch to OFF and clean the oven.
- During a power outage the oven shuts down automatically and resumes normal operation when power is restored. If the oven will be left unattended during an outage, push the master switch to OFF; when power returns, push it to ON, wait for the oven to preheat, then resume cooking.
Cleaning & Maintenance
Hobart's manual directs operators to turn the oven off and disconnect the electrical supply before cleaning.
- Clean the outside of the oven daily with a clean damp cloth.
- Clean the porcelain oven interior daily with soap or detergent and water; rinse thoroughly and wipe dry with a soft clean cloth.
- Where a stainless steel oven interior is fitted, soap or detergent and water usually handle routine cleaning. For burned-on food and grease, mix an abrasive cleanser (scouring powder) into a paste and apply with stainless steel wool or a sponge, always rubbing with the grain; the same treatment removes heat tint (slightly darkened areas caused by oxidation). Rinse with clear water and dry with a soft cloth.
Wear items catalogued for this model include the horizontal door seals (30 1/2″ long, top and bottom, two per oven), the 40-watt oven lamp bulbs and lenses, the drip pan, and the rack assemblies.
Troubleshooting & Service Parts
For an oven that fails to heat, the parts catalog documents the components in the power and control path: the six 2,000-watt heating elements, two 3-pole 50-amp contactors, two 50-amp solid state relays, the 208–240V transformer with 24V output, the solid state temperature probe, and the thermodisc high-limit thermostat. Heat loss around the doors points to the 30 1/2″ horizontal door seals. The control panel hardware is also documented — part 00-354575-00001 (NSN 6210-01-487-6296) is identified as used on the control panel of the HEC5D, HEC5 and DEC5 electric convection ovens.
Some components are catalogued by construction date — transformers built before November 11, 2002 carry a separate part number from later assemblies — so have your model and serial information ready. Applications
With a 150°F–500°F range and 12.5 KW per deck, the HEC5D covers bakery, roasting and general cooking work. Hobart's cooking guidelines for its electric convection ovens (from the same series manual) illustrate typical convection settings:
- Bakery: 30 pies at 350–375°F (177–190°C) for 25–30 minutes on 5 racks; sheet cake (5 lb per pan) at 315°F (157°C) for 20–22 minutes; sugar cookies at 300°F (149°C) for 15 minutes; chocolate cake and cinnamon buns at 335°F (168°C) for 20 minutes; brownies at 350°F (177°C) for 15 minutes; danish at 335°F for 12 minutes; cream puffs at 350°F for 20–25 minutes.
- Meats: hamburger patties at 400°F (204°C) for 10–12 minutes; meat loaf at 325°F (163°C) for 40–45 minutes; shell steaks at 450°F (232°C) for 7–8 minutes.
- Other: 7″ frozen pizza at 435°F (224°C) for 11 minutes; a 120-count load of Idaho potatoes at 440°F (227°C) for 50 minutes; 120 melted cheese sandwiches at 400°F for 10 minutes.
- Rack loading: where five racks are used, Hobart places the first rack on the second position from the bottom and the others on every other rung.
These settings come from Hobart's guidelines for its convection oven series rather than an HEC5D-specific test, so validate times and temperatures against your own recipes and product.
