About the Hobart HEC5DX
Overview
The Hobart HEC5DX, catalogued under model number ML-126754, is the deep-depth, digital-control electric convection oven in Hobart's HEC5 series. Hobart's Form 34611 parts catalog (Rev. G, March 2023) covers the related DEC5 (ML-126749), HEC5 (ML-126750), HEC5D (ML-126751), and HEC5X (ML-126753); within that family, the HEC5D and HEC5DX carry the digital electronic controls, while the X suffix marks the deep-depth cavity of the HEC5X series. The HEC5DX is supplied as a basic deck without legs, leaving the mounting configuration to the buyer: painted or stainless 25-3/4-inch leg sets, leg assemblies fitted with 7.5-inch casters, or 8-inch legs for double-stack installations. Stacked pairs of this oven appear on the used market listed as the 'HEC5DX Double Stack Full' configuration. As Hobart states in its own literature, continued product improvement is a policy, and specifications are subject to change without notice.
Key Features
- Digital electronic controls. The HEC5DX is one of the two digital models in the HEC5 family, with a program mode entered by holding the Up and Down keys.
- Six 2000-watt heating elements per oven. The parts catalog lists the element in 208 V, 240 V, and 480 V versions (00-426635-00001, -00002, -00003).
- Heavy power switching. Two 3-pole, 50-amp, 230 V contactors and two 50-amp solid-state relays, fed through a 208-240 V control transformer with a 24 V output.
- Solid-state temperature probe (SST) with a high-limit thermodisc for over-temperature protection.
- Two-speed fan (HI/LO) plus a dedicated 230 V cooling fan for the equipment compartment.
- Interior oven lighting. 250 V lamp-and-housing kits with 40-watt oven bulbs listed in both 120 V and 240 V versions.
- Glass door window. The replacement window glass measures 13 inches and mounts with four brackets (00-358534-00001).
- Five nickel-plated oven racks per section per the HEC5 series listing.
- Audible 230 V buzzer for end-of-cycle alerting.

Installation & Requirements
Hobart's installation instructions begin at unpacking: check the oven for shipping damage immediately, save the packaging material, and contact the carrier within 15 days of delivery if damage is found. Before installation, verify that the electrical service agrees with the specifications on the oven data plate, located inside the bottom front cover. Never use the doors or their handles to lift the oven.
The installation location must allow adequate clearances for servicing and proper operation. The basic oven must be installed on legs or mounted on a modular stand; installations on concrete bases or other supports that restrict air circulation underneath the oven are not advisable and may void the warranty. Each of the four leg assemblies attaches to the oven bottom with six bolts and lockwashers. Level the oven in its final installed position by turning the hex tips at the bottom of the legs until the racks are level. Where the oven sits on casters, the locking casters belong on the front legs.
Code compliance: in the United States, Hobart calls for installation per state and local codes, ANSI/NFPA 96 (Vapor Removal from Cooking Equipment), and the National Electrical Code, ANSI/NFPA-70. In Canada, installation follows local codes and the Canadian Electrical Code, CSA Standard C22.2 No. 3 (latest edition).
Electrical connection: disconnect the electrical power supply and place a tag at the disconnect switch before working on the circuit, and keep electrical and grounding connections compliant with the applicable electrical codes. The procedure is to remove the wiring compartment cover on the front of the oven, remove the appropriate knockout on the oven bottom, attach the power supply conduit, and make connections per the wiring diagram supplied with the manual.
Exhaust and stacking: fasten the oven chimney to the top rear of the oven with its flanges positioned under the top cover, and attach the flue extension. On a stacked pair, the manual specifies a short flue extension over the upper oven's exhaust vent and a long flue extension tube on the lower oven so exhaust fumes discharge upward through and above the top oven, with a 1-inch conduit nipple through the 1-3/8-inch hole joining the two decks, clamped from underneath with a locknut. Interconnecting power leads run from the upper oven's terminal block down behind the lower oven's control panel to its terminal block per the wiring diagram, and all wiring is checked for tightness and proper routing away from moving parts and pinch points before the control panels are refitted.
Operation
Hobart's manual documents the control set for these convection ovens: an On/Off/Cooldown switch, thermostat, cook-time timer, two-speed fan switch (HI/LO), light switch, and a vent damper control that pulls open. On the digital models, displays show cook, hold, and time/temperature values with Start/Stop control and a ready light; pressing the thermometer button overrides the set-point display with the actual cavity temperature for 8 seconds before the display returns to the set temperature. Program mode on the digital HEC5D/HEC5DX controls is entered by holding the Up and Down keys.
Timer behavior: the alarm sounds continuously when the elapsed time counts down to zero, and the oven does not turn itself off — stop the alarm at the timer control, and leave timing at OFF when the oven is not in use.
End of day: turn the thermostat to OFF, set the On/Off/Cooldown switch to ON, and leave the door ajar while the fan runs to cool the oven. Once the oven has cooled sufficiently, switch it OFF and clean it.
Power outage: the oven shuts down automatically and resumes normal operation when power is restored to the lines. If it will be left unattended during an outage, push the master switch to OFF.
Cleaning & Maintenance
Turn the oven off and disconnect the electrical supply before cleaning. Wipe the outside daily with a clean damp cloth. Clean the porcelain oven interior daily with soap or detergent and water, rinse thoroughly, and wipe dry with a soft clean cloth.
On the optional stainless steel oven interior, soap or detergent and water handle routine cleaning. For burned-on food and grease that resist simple washing, an abrasive cleanser mixed into a paste may be applied with stainless steel wool or a sponge, always rubbing with the grain; the same treatment removes heat tint, the slightly darkened areas caused by oxidation. Rinse with clear water and dry with a soft cloth.
The manual's maintenance section covers lamp replacement, and the parts catalog supports it with complete oven lamp assemblies (lens, base, and bulb), individual lenses, and 40-watt bulbs in both 120 V and 240 V versions.
Troubleshooting
Power interruptions: an outage shuts the oven down automatically, and it resumes normal operation when power returns — switch it off at the master switch if it will be unattended. A continuously sounding alarm indicates the timer has reached zero; the oven keeps running until the control is stopped. The digital control displays fault codes, and Hobart's manual includes an error-message reference for its digital-control ovens. Over-temperature protection is handled by the high-limit thermodisc (00-346357-00001) listed in the parts catalog. If the oven arrives damaged, save the packaging material and contact the carrier within 15 days of delivery.
Applications
Deep-depth electric convection ovens earn their place in institutional kitchens, bakeries, and roasting operations where cavity depth matters — deeper pans, taller roasts, and more product per rack. Hobart's convection oven documentation includes cooking guidelines that run from bakery work such as sheet cakes, cookies, and breads through meats, fish, and fowl, with rack-placement guidance for five-rack loading. In double-stack installations on the 8-inch stacking legs, two HEC5DX decks put paired cavities in a single footprint for high-volume service. PartHubz supplies the replacement parts documented for this oven — heating elements, contactors and relays, door glass and seals, probes, legs, and casters — under the Hobart part numbers listed above.
