About the Hobart HFC225
Overview
The Hobart HFC225 is an electric fryer in the Hobart HFD/HFC series. Its model number is HFC225, and the manuals identify it as ML-114630. Unlike HFD models in the same series, the HFC models use a microprocessor thermostat and timer control. The HFC225 is intended for commercial kitchen frying work where operators need timed product cycles and temperature control.
The manual lists a shortening capacity of 25 lb per vat section. It refers to full-vat and split-vat arrangements; confirm the fryer’s actual vat configuration before ordering baskets, elements, or other parts. The parts catalog lists a dedicated element head assembly for the HFC225/HFD225 and two heating element assemblies for the HFC225, with element part numbers dependent on electrical rating.
Key Features
- Microprocessor control: HFC models use a computer thermostat and timer control.
- Programmable product cycles: Product pads 1–8 can store a product name, cook time, cook temperature, duty time and message, and hold time.
- Manual cooking mode: Manual Product pad 9 allows an operator to set the time and temperature for a batch.
- Fat-melt function: The controller can enter melt mode when the oil is below 135 °F (57 °C), if fat-melt mode is enabled.
- Temperature setback: When setback is enabled, the idle temperature is 275 °F (135 °C), and the fryer enters idle automatically after 30 minutes. When disabled, the idle temperature is 350 °F (176 °C), with no automatic idle transition after 30 minutes.
- Optional configurations: The HF series manual lists basket lifts, basket configurations, filter-ready equipment, battery interplumbing, stainless-steel sides, and casters as options across the series. Confirm the HFC225’s installed options before ordering accessories or parts.

Installation & Requirements
Install the fryer in accordance with state and local codes, the National Electrical Code, ANSI/NFPA No. 70, and NFPA Standard #96, as stated in the manual. The manual specifies 0 in clearance from back or side walls and 16 in (40.6 cm) between the fryer and an open-top flame burner. Position the unit for service access. The fryer must be restrained with adequate ties to prevent tipping and splashing of hot liquid.
The HFC225 is electric; the manual does not specify a gas connection for this model. The electrical supply options listed for the HF series include 208/240 V, 3 phase; 220/380 V, 3 phase, 4 wire; 240/415 V, 3 phase, 4 wire; and 480 V, 3 phase. The manual directs the installer to use the fryer data plate for its electrical information. It describes connecting the 3-phase line to terminals X, Y, and Z on the terminal block. If a fan interlock is needed, terminals 1 and 2 on the 4-pole barrier strip connect to a set of dry contacts on the power switch.
For leg installation, place the fryer near its final location, carefully tilt it onto its side, and thread the legs clockwise into the mounting holes until tight. Return it upright and level it front-to-back and side-to-side by adjusting the legs. Casters are optional; the manual recommends casters on all batteried appliances and notes that a strain relief is supplied to protect the electrical supply line. Disconnect the electrical supply before disconnecting the restraint, and reconnect the restraint before restoring power and returning the fryer to its installation position. Caster instructions are supplied with the casters.
Operation
Before use and filling
Before first use, clean protective metal oils from the fryer’s surfaces and tank interior using a non-corrosive, grease-dissolving commercial cleaner and following that cleaner’s instructions. Rinse thoroughly, drain, and, after the fryer has cooled, wipe the tank and heating elements completely dry. Clean, rinse, and dry the fryer accessories as well. Do not dry-fire the elements.
Liquid shortening may be used. The manual warns that melting solid shortening without using the melt cycle can damage the fry tank and scorch the shortening. Fill the tank with liquid or melted shortening before turning on the heating elements; operating them without shortening can damage the tank. Use the melt function for solid shortening when enabled.
Heating and cooking
After power-up, the controller performs a self-check and then enters Fat Melt or Heating mode. If the oil is below 135 °F (57 °C) and fat-melt mode is enabled, MELT displays. For liquid shortening only, the controller can be programmed to disable the melt cycle. During heating, WAIT displays and the HEAT indicator is lit. The manual says READY displays after the oil reaches 335 °F (168 °C), with a default heating setpoint of 350 °F (176 °C).
Select a product using pads 1–8 to run a stored cook cycle. Press START/STOP to begin timing for the left or right basket; the display shows the time remaining and the selected product. The product’s programmed temperature controls the oil during that cycle. The MANUAL PRODUCT pad (9) provides a manually set time and temperature. Press OIL TEMP to display the oil temperature. When cooking is complete, remove the basket or product and hang the basket on the rear basket hanger. The manual cautions against salting food over the shortening because salt could cause a chemical change in the oil.
Programming controls
Product settings include a product name of up to 12 characters, cook time, cook temperature, duty time, duty message, and hold time. The duty message can be used for an in-cycle prompt, such as a reminder to shake the basket. The hold-time buzzer signals when the programmed holding period has elapsed. Product cook temperature can be set from 320–375 °F (161–190 °C); the listed cook, duty, and hold time ranges are 00:00–99:59.
Other controller functions include temperature calibration, boil-out temperature, recovery-time programming, melt enable/disable, manual setup enable/disable, and an oil timer. The oil timer range is 1–255 hours, with 0 meaning off. The manual says to calibrate only when the temperature is stable at 350 °F (176 °C), comparing the displayed reading with a thermometer measurement. Follow the control-panel instructions in the manual for programming; avoid changing settings without understanding their effect on operation.
Cleaning & Maintenance
Filtering shortening
Filter shortening while it is liquified; cold shortening may not drain properly because fat beneath the cold-zone area can remain solid. The manual recommends filtering at least once daily, or more often if conditions warrant, to extend shortening life. Turn the fryer off when draining or filling. Do not move the fryer with frying compound in the tank: the manual warns that spilled hot compound can cause severe burns.
For filtering a non-filter-ready unit, turn the fryer off, remove the baskets, and raise the elements out of the tank, taking care to prevent hot shortening from splashing. Open the door, attach the drain pipe to the drain valve, and position a container with sufficient capacity beneath it. If using a filter bag, secure it to the drain pipe; otherwise place the filter medium in the container. Carefully open the drain valve and direct the oil through the filter. Flush scraps and sediment from the tank with a small amount of warm shortening, drain thoroughly, and wipe the tank clean. Close the valve, return the strained shortening to the tank, and add shortening to the fill-level line. Follow the separate mobile filter manual for filter-ready units. For optional battery interplumbing, open only one tank drain valve at a time and monitor draining with adequate container capacity.
Exterior and weekly cleaning
Wash exterior surfaces at least once daily with a cloth, warm water, and mild soap or detergent; rinse with clear water and dry. For stainless-steel surfaces, use a non-corrosive cleaner or soap and water. A self-soaping scouring pad may be used for stubborn discoloration, rubbing horizontally with the grain. Do not use a scouring pad or harsh cleaner on the computer keypad, particularly the display area.
For weekly cleaning or as required, drain the shortening and flush scraps and sediment with a small amount of warm shortening. Close the drain valve and fill the tank with a non-corrosive, grease-dissolving commercial cleaner, following its instructions. Set the thermostat to the cleaner manufacturer’s recommended temperature and boil the solution for 15–20 minutes. For a water-based cleaner, the manual gives a temperature range of 190–212 °F (87–100 °C); use the lowest possible temperature and monitor the boil to prevent overflow. Drain the solution, refill the tank with water, add 1 cup (226 g) of vinegar to neutralize alkaline cleaner residue, bring the solution to a boil, and allow it to stand for a few minutes. Drain and rinse thoroughly.
Troubleshooting
- The display shows MELT: The controller may be in Fat Melt mode because the oil is below 135 °F (57 °C) and melt mode is enabled. Allow the shortening to melt; the controller can be programmed to disable this mode when using liquid shortening only.
- The display shows WAIT: The fryer is in Heating mode and has not yet reached the manual’s READY threshold of 335 °F (168 °C). The HEAT indicator is lit during this mode.
- The fryer does not heat normally after power-up: The controller runs a self-check. The manual refers operators to its Error Messages section on page 23, but the error-code details are not included in the available text. Use the complete manual to identify a displayed error rather than guessing at its cause.
- Shortening drains slowly: The manual notes that cold shortening may remain solid under the cold-zone area. Filter only when shortening is liquified; do not attempt to force a drain with solid fat in the tank.
- The tank or shortening is damaged after startup: The manual warns not to turn on the heating elements unless the tank contains liquid or melted shortening, and not to melt solid shortening without the melt cycle.
Applications
The HFC225’s programmable cook cycles, manual time-and-temperature mode, and basket operation support commercial kitchen frying workflows with repeatable product settings. Operators can use product pads for stored batches, program duty prompts for in-cycle handling, and set hold times with a buzzer notification. Confirm the fryer’s vat arrangement and installed options to ensure baskets and accessories suit the intended menu and workflow.
