About the Hobart HL200
Overview
The Hobart HL200 Legacy+ is a 20-quart maximum heavy-duty planetary mixer for professional kitchens. Its standard accessory package includes a 20-quart stainless steel bowl, a B beater, a D wire whip and an ED dough hook. The mixer has a 1/2 HP high-torque motor, an all-gear transmission and three fixed speeds plus a stir speed. A 15-minute SmartTimer™ provides automatic time recall, and the manual bowl lift is self-locking in the raised and lowered positions.
The HL200 is covered in Hobart’s operating manual alongside other mixer sizes and models. Follow the capacity chart for the correct batch size, speed and agitator. The mixer is intended for professional use by properly trained operators.
Key Features
- Four mixing speeds: Stir and three fixed speeds, with agitator speeds of 59 RPM for stir, 107 RPM for first, 198 RPM for second and 365 RPM for third.
- Gear-driven transmission: Hobart describes the drive as an all-gear, direct-drive system, with constant-mesh, heat-treated hardened alloy-steel gears and anti-friction ball bearings.
- Shift-on-the-Fly™ controls: The spec sheet says speeds can be changed while the motor is running; pulse and jog operation is also available.
- SmartTimer™: The standard 15-minute timer remembers the last time set for each speed.
- Safety interlocks: The triple interlock system with MagnaLock technology prevents operation unless the bowl is raised and locked and the bowl guard is secured.
- Removable bowl guard: The stainless steel guard has a rotating front section for adding ingredients and fitting or removing an agitator. The spec sheet says it can be removed without tools and is dishwasher-safe.
- Convenient bowl handling: The bowl swings out to the side, and the single-point installation is intended to make bowl mounting easier.
- #12 attachment hub: The front-mounted taper hub accepts Hobart #12-size attachments. Do not use the attachment hub while mixing.
- Finish: Metallic gray hybrid powder coat.

Recommended maximum capacities
Hobart’s capacity chart gives the following recommendations for the HL200. Dough capacities are based on 70°F water and 12% flour moisture.
- Egg whites: 1 qt, D whip.
- Mashed potatoes: 15 lb, B or C agitator.
- Whipped cream: 4 qt, D or C whip.
- Cakes: 21 lb, B beater.
- Sugar cookies: 15 lb.
- Light-to-medium bread or roll dough, 60% absorption ratio: 25 lb, ED dough hook.
- Heavy bread dough, 55% absorption ratio: 15 lb, ED dough hook.
- Thin pizza dough, 40% absorption ratio: 9 lb, ED dough hook; maximum mixing time 5 minutes.
- Thick pizza dough, 60% absorption ratio: 20 lb, ED dough hook.
- Whole-wheat bread dough, 70% absorption ratio: 20 lb, ED dough hook.
- Fondant icing: 12 lb, B beater.
- Marshmallow icing: 2 lb, C or I agitator.
- Basic egg-noodle pasta: 5 lb, ED dough hook; maximum mixing time 5 minutes.
The chart defines absorption ratio as water weight divided by flour weight. Capacity depends on dough moisture. With high-gluten flour, reduce the listed dough batch size by 10%; using ice also requires a 10% batch-size reduction. Hobart cautions against using second speed on products at 50% absorption ratio or lower. The attachment hub should not be used while mixing.
Installation & Requirements
Before installation, check that the electrical service matches the mixer data plate. Place the mixer on a sturdy, level surface with enough space for the operator to use the controls and install or remove the bowl. The area above and behind the mixer must allow the top and back covers to be removed for routine maintenance and service.
The 12-quart and 20-quart models are single-phase and have a three-pronged grounding plug. Connect the plug to a properly grounded receptacle; do not remove the grounding prong. If the receptacle is not the proper grounding type, the manual says to contact an electrician. Electrical and grounding connections must comply with applicable electrical codes. The spec sheet lists different voltage and plug options, so verify the model data plate and local power requirements before connecting the mixer.
Operation
Only properly trained operators should use the mixer. Keep hands, feet, clothing and utensils away from the bowl, bowl support, slideways and agitator whenever the mixer or its components are moving. Do not operate the mixer with parts disassembled, in improper operating condition or without the interlocked bowl wire cage in place. Do not override safety switches.
For the initial operation check, apply power and set the speed selector to STIR. Install the bowl and lock it in position, raise the bowl support until it locks, and rotate the wire cage to its front-center position. Momentarily run the mixer using START, then stop it using STOP. The mixer will not operate unless the bowl is locked on the support, the support is raised and locked, and the wire cage is closed in the front-center position.
Choosing a speed
- STIR: Slow speed for incorporating ingredients.
- Speed 1: Low speed for heavy mixtures such as pizza dough, heavy batters and potatoes.
- Speed 2: Medium speed for cake batters, mashing potatoes and developing bread dough.
- Speed 3: High speed for incorporating air and finishing whipped items.
Use the capacity chart to select the appropriate agitator, speed and batch size. Stop the mixer before adding ingredients unless using a food chute. Use the STOP button to stop the mixer; do not open the wire cage or use the bowl lift as a way to stop it. When mixing ingredients that create dust, start at STIR until the dust is eliminated and follow the manual’s dust-hazard instructions.
Cleaning & Maintenance
Disconnect electrical power and follow lockout/tagout procedures before cleaning or servicing. Hobart says the mixer should be thoroughly cleaned daily. Wash the mixer with a clean, damp cloth; do not hose or pressure-clean it. Do not use scouring powder or a scouring pad, and do not clean aluminum agitators in a dishwasher.
Before first use, thoroughly wash new bowls and accessories such as beaters, whips and dough arms with hot water and mild soap. Rinse with a mild soda or vinegar solution, then rinse thoroughly with clear water. The manual says to follow this cleaning procedure for bowls and agitators before whipping egg whites or whole eggs.
To remove the wire cage, rotate it left until its carriers line up with the escape slots in the drip cup, lift it straight up and pull it toward you. Wash it in a sink, rinse with clear water and dry with a clean cloth. Reinstall it by aligning the carriers over the slots, lowering it and rotating it right to the front-center stop. Wipe the splash guard with a cloth or sponge and warm, soapy water, rinse and dry. The spec sheet also describes the removable stainless steel bowl guard as dishwasher-safe.
The manual recommends regular service at least twice a year for typical usage; actual service needs may vary with frequency of use. It also says to check agitator clearance periodically. The agitator must not touch the bowl. Maximum clearance is 1/8 inch between the bowl bottom and B flat beater, and 5/16 inch between the bowl bottom and ED dough arm. For the 12- and 20-quart mixers, the manual describes adjusting the stop screws after removing the apron. Disconnect power and follow lockout/tagout procedures before maintenance.
Troubleshooting
- Mixer will not start: Check whether the branch-circuit protector is open, whether the mixer is overloaded, whether the wire cage is closed in the front-center position, and whether the bowl is locked and raised. A flashing time display is also listed as a symptom.
- Agitator touches the bowl: Confirm the bowl is locked in position and the agitator is installed correctly. If clearance is incorrect, follow the manual’s agitator-clearance adjustment procedure.
- Planetary seal squeaks: The manual says the seal may occasionally become dry. Apply a little mineral oil under the seal lip.
- Flashing alarm code: For a flashing error code, such as OL1 for motor overload, unplug the mixer until the display goes blank, then plug it back in. If the symptoms continue, contact a local Hobart Service office.
Applications
The HL200 capacity chart covers whipping egg whites and cream, mashing potatoes, cake and cookie mixes, icings, bread and roll dough, pizza dough, whole-wheat dough and basic egg-noodle pasta. Use the listed agitator and batch limits for the specific product, and observe the chart’s speed and maximum mixing-time notes. Hobart lists additional #12 attachments and accessories at extra cost, including other agitators, dough tools, a bowl scraper, ingredient chute, vegetable slicer and meat chopper attachment.
