About the Hobart HL200C
Overview
The Hobart HL200C is a 20-quart Legacy+ planetary mixer with a maximum-security correctional package. It pairs a heavy-duty 1/2 HP motor and gear-driven transmission with three fixed speeds plus stir, making it suitable for commercial kitchens that mix batters, doughs, icing, and other batch preparations.
The HL200C has a manual bowl lift and an ergonomic swing-out bowl. Single-point bowl installation simplifies mounting and removal, while the open base allows access beneath the mixer for cleaning. The mixer uses Hobart Quick Release™ agitators and has a front-mounted #12 taper attachment hub. The hub is not to be used while mixing.
Key Features
- Correctional package: The HL200C is described as a 20-quart mixer with a maximum-security correctional package.
- Mixing speeds: Three fixed speeds and a stir speed support different mixing tasks. The agitator speeds are 59 RPM at stir, 107 RPM at low, 198 RPM at intermediate, and 365 RPM at high.
- Shift-on-the-Fly™ controls: Operators can change speeds while the mixer is running. Follow the capacity chart for appropriate capacities, speeds, and agitators.
- Soft-start agitation: The mixer transitions gradually into higher speeds to help reduce ingredient splash-out.
- SmartTimer™: The 15-minute timer includes automatic time recall, which remembers the last time set for each speed.
- Safety interlocks: The triple interlock system with MagnaLock technology prevents operation unless the bowl is raised and locked and the bowl guard is secured. The mixer also has maximum-capacity overheat protection and a reinforced planetary shaft system.
- Included mixing equipment: The listed standard accessory package includes a 20-quart stainless steel bowl, 20-quart B beater, 20-quart D wire whip, and 20-quart ED dough hook.
- Finish and construction: The mixer has a metallic gray hybrid powder-coat finish, open base, and removable stainless steel bowl guard.

- Heavy bread dough, 55% absorption ratio: 15 lb. with ED dough hook
- Thin pizza dough, 40% absorption ratio: 9 lb. with ED dough hook; maximum mix time 5 minutes
- Medium pizza dough, 50% absorption ratio: 10 lb. with ED dough hook
- Thick pizza dough, 60% absorption ratio: 20 lb. with ED dough hook
- Whole-wheat dough, 70% absorption ratio: 20 lb. with ED dough hook
- Raised-doughnut dough, 65% absorption ratio: 9 lb. with ED dough hook
- Pie dough: 18 lb. with B beater and P pastry knife
- Fondant icing: 12 lb. with B beater
- Marshmallow icing: 2 lb. with C or I agitator
- Basic egg-noodle pasta: 5 lb. with ED dough hook; maximum mix time 5 minutes
The capacity chart says to reduce dough batch size by 10% when using high-gluten flour and to reduce batch size by 10% when using ice. It also says not to use second speed on products at 50% absorption ratio or lower. Do not operate the attachment hub while mixing.
Installation & Requirements
Before installation, check that the electrical service matches the mixer data plate. Place the mixer on a sturdy, level surface. The manual calls for enough space around the mixer to operate the controls and install or remove bowls, and space above and behind it for removal of the covers during routine maintenance and service. The manual does not give numeric clearance dimensions.
The 12-quart and 20-quart mixers are single-phase and have a three-pronged grounding plug. Connect it to a properly grounded receptacle; do not remove the grounding prong. If the receptacle is not the correct grounding type, the manual directs the operator to contact an electrician. Electrical and grounding connections must comply with applicable electrical codes. The spec sheet lists 100–120 V and 200–240 V single-phase options for the HL200 family, so confirm the particular mixer’s data plate and plug configuration before connecting power.
The manual requires the bowl to be locked in place and raised, and the interlocked wire cage to be closed in the front-centre position, for the mixer to operate. It does not specify a gas connection or ventilation requirement.
Operation
This mixer is for professional use by properly trained operators. The manual says operators must read and understand the instructions and receive training. Keep hands, feet, clothing, and utensils away from the bowl, bowl support, slideways, and agitator whenever the mixer or its components are moving. Do not operate the mixer without the interlocked bowl wire cage in place, with parts disassembled, or when it is not in proper operating condition. Do not override safety switches. Use the STOP button to stop the mixer; do not stop it by opening the wire cage or using the bowl lift.
Before use, make sure the bowl, agitator, and wire cage are correctly fitted. Use only the correct bowl size with agitators specified for that bowl size. Stop the mixer before adding ingredients unless using a food chute. For the initial check, apply power, set the speed selector to STIR, install and lock the bowl, raise the bowl support until it locks, and close the wire cage at the front-centre position. Briefly run the mixer using START, then stop it with STOP.
- STIR: Slow speed for incorporating ingredients.
- Speed 1, low: For heavy mixtures such as pizza dough, heavy batters, and potatoes.
- Speed 2, medium: For cake batters, mashed potatoes, and developing bread dough.
- Speed 3, high: For incorporating air and finishing whipped items.
Use the capacity chart to select the correct bowl capacity, agitator, speed, and batch size. For ingredients that create dust, the manual says to use STIR until the dust is eliminated and to follow its dust-hazard instructions. Avoid inhaling ingredient dust, including flour, and do not install or leave an agitator on the mixer without a bowl in place.
Cleaning & Maintenance
Disconnect electrical power and follow lockout/tagout procedures before cleaning or maintenance. The manual calls for thorough daily cleaning. Clean the mixer with a clean, damp cloth; do not hose or pressure-clean it, and do not use scouring powder or a scouring pad. The manual also cautions against washing aluminum agitators in a dishwasher.
Before first use, thoroughly wash new bowls and accessories, including beaters, whips, and dough arms, with hot water and mild soap. Rinse with a mild soda or vinegar solution, then rinse thoroughly with clear water. Follow the same procedure for bowls and agitators before whipping egg whites or whole eggs.
To remove the wire cage, rotate it to the left until its three carriers align with the escape slots in the drip cup, lift it straight up, and pull it toward you. Wash the cage in a sink, rinse with clear water, and dry with a clean cloth. To reinstall it, position the carriers above the slots, lower the cage through the slots, and rotate it right to the stop at the front-centre position. Wipe the splash guard with a cloth or sponge and warm, soapy water; rinse with clear water and dry with a clean cloth.
The manual recommends regular service at least twice a year for typical use; service needs can vary with frequency of use. It specifies that the slideways should be lubricated approximately twice a year. With the bowl support fully lowered, remove the apron on the 20-quart mixer and apply a thin coat of Lubriplate 630AA to the bowl-pad area of each slideway, then reinstall the apron. If the planetary seal becomes dry and squeaks, work a small amount of mineral oil under the seal lip.
Check agitator clearance periodically. The agitator must not touch the bowl. The maximum clearance between the bowl bottom and B flat beater is 1/8 in.; for the ED dough arm, it is 5/16 in. The manual describes checking clearance with flour in the bowl: briefly run the mixer at its lowest speed with the bowl raised, stop the mixer, disconnect power, and measure the flour depth along the agitator path at several points. For the 12- and 20-quart mixers, remove the apron and adjust the stop screws: counterclockwise increases clearance and clockwise decreases it. Refit the apron, carefully raise and lower the bowl support several times to check the adjustment, and reconnect power.
Troubleshooting
- Mixer will not start: If the time display is flashing, check whether the branch-circuit protector is open, including the fuse or disconnect switch. The mixer may be overloaded. Confirm that the wire cage is closed in the front-centre position and that the bowl is locked and raised.
- Agitator touches the bowl: Confirm that the bowl is locked in place and the agitator is installed correctly. If clearance is incorrect, follow the bowl/agitator clearance adjustment instructions in the maintenance section.
- Planetary seal squeaks: The seal may need occasional lubrication. Apply a small amount of mineral oil under the seal lip as described in the manual.
- Flashing alarm code: The manual gives OL1 as an example of a motor-overload code. Unplug the mixer until the display is blank, then plug it back in. If the symptoms continue, contact a local Hobart Service office.
Applications
The capacity chart covers commercial preparations including cake batters, sugar cookies, mashed potatoes, whipped cream, icing, bread and roll dough, pizza dough, whole-wheat dough, raised-doughnut dough, pie dough, and basic egg-noodle pasta. Select the listed agitator and follow the chart’s batch-size, speed, absorption-ratio, and maximum-mix-time notes for the specific product. The front-mounted #12 hub accommodates Hobart #12 attachments, but the spec sheet cautions that the hub should not be used while mixing.
