About the Hobart HL300C
Overview
The Hobart HL300C Legacy+ is a 30-quart maximum-capacity, heavy-duty planetary mixer with Hobart’s Maximum Security Correctional Package. A 3/4 HP motor and gear transmission power its mixing action. The HL300C is a floor model with a manually operated, self-locking bowl lift, a swing-out bowl and a front-mounted #12 taper attachment hub.
Key Features
- PLUS System: Includes VFD advantage variable frequency drive, maximum-capacity overheat protection and a reinforced planetary shaft system.
- Four mixing settings: Three fixed speeds plus STIR, with Shift-on-the-Fly controls for changing speeds while the motor is running.
- Soft-start agitation: Gradually starts agitation to help minimise ingredient splash-out.
- SmartTimer: The 15-minute timer has automatic time recall, remembering the last time set for each speed.
- Operator protection: Triple interlock system with MagnaLock technology links operation to the bowl and guard being in their required positions.

Recommended maximum capacities
The Hobart capacity chart gives these recommended maximum batch capacities for the HL300. Dough capacities are based on water at 70°F and flour moisture of 12%; actual capacity depends on dough moisture.
- Egg whites: 1 1/2 quarts.
- Mashed potatoes: 23 lb.
- Whipped cream: 6 quarts.
- Cakes: 30 lb.
- Sugar cookies: 23 lb.
- Light-to-medium bread or roll dough, 60% absorption ratio: 45 lb.
- Heavy bread dough, 55% absorption ratio: 30 lb.
- Thin pizza dough, 40% absorption ratio, maximum mixing time 5 minutes: 14 lb.
- Thick pizza dough, 60% absorption ratio: 40 lb.
- Whole-wheat dough, 70% absorption ratio: 40 lb.
- Fondant icing: 18 lb.
- Marshmallow icing: 3 lb.
- Basic egg-noodle pasta, maximum mixing time 5 minutes: 8 lb.
The chart notes that high-gluten flour calls for reducing the listed dough batch size by 10%. Using ice also calls for a 10% batch-size reduction. Do not use second speed for products with an absorption ratio of 50% or lower.
Installation & Requirements
Before installation, check that the electrical service matches the mixer data plate. Place the mixer on a sturdy, level surface with enough space for operators to reach the controls and install or remove bowls. The area above and behind the mixer must allow the top and back covers to be removed for routine maintenance and service. The manual specifically instructs installers to level 30- and 40-quart models after positioning: remove the top cover and use shims under the base contact surface as needed to level the mixer front-to-back and side-to-side.
Electrical connections and grounding must comply with the applicable electrical code. For 30-quart single-phase units, the manual specifies a three-prong grounding plug connected to a properly grounded receptacle; do not remove the grounding prong. For 30-quart three-phase units, disconnect power and follow lockout/tagout procedures before making connections. The manual specifies connecting field-supply leads to L1, L2 and L3 and the ground wire to the mixer ground lug. The manufacturer’s sheet lists 100–120 V and 200–240 V single-phase options, as well as 200–240 V and 380–460 V three-phase options. Confirm the unit’s data plate and local electrical requirements for the specific configuration.
Operation
This mixer is for professional use by properly trained people. Operators should read and understand the manual and receive training before use. Keep hands, feet, clothing and utensils away from the bowl, bowl support, slideways and agitator whenever the mixer or its components are moving. Do not operate the mixer with parts disassembled, bypass its safety switches or use it without the interlocked wire cage in place. Use the STOP button to stop the mixer; do not stop it by opening the cage or using the bowl lift.
For the initial check, apply power, set the speed selector to STIR, install and lock the bowl, raise the bowl support until it locks, and close the wire cage at the front-centre position. Momentarily run the mixer using START, then stop it using STOP. The mixer will not operate if the wire cage is not closed at the front-centre position, if the bowl is not locked, or if the bowl support is not raised and locked.
Choosing a speed
- STIR: Slow speed for incorporating ingredients.
- Speed 1: Low speed for heavy mixtures such as pizza dough, heavy batters and potatoes.
- Speed 2: Medium speed for cake batters, mashed potatoes and developing bread dough.
- Speed 3: High speed for incorporating air into batches and finishing whipped items.
Follow the mixer capacity chart for the correct capacity, speed and agitator. Stop the mixer before adding ingredients unless using a food chute. The SmartTimer can be set for up to 15 minutes and recalls the last time set for each speed. Shift-on-the-Fly controls allow speed changes while the motor is running. Use the attachment hub only for compatible Hobart #12 attachments, and do not operate the hub while mixing.
Fit the correct bowl and agitator size. The manual directs operators to check the accessories chart when using a reduced-size bowl, such as a 12-quart bowl on a 20-quart mixer. Ensure the bowl, agitator and wire cage are correctly fitted before operation. When mixing dusty ingredients, start at STIR until the dust is eliminated and follow the manual’s dust-hazard guidance.
Cleaning & Maintenance
Disconnect electrical power and follow lockout/tagout procedures before cleaning or servicing. Thoroughly clean the mixer daily with a clean, damp cloth. Do not hose or pressure-clean the mixer. Do not use scouring powder or a scouring pad, and do not wash aluminum agitators in a dishwasher. Wash new bowls and accessories—including beaters, whips and dough arms—thoroughly with hot water and mild soap before use, rinse with a mild soda or vinegar solution, then rinse thoroughly with clear water. The manual also calls for this bowl-and-agitator cleaning procedure before whipping egg whites or whole eggs.
Remove the wire cage for cleaning by rotating it left until its carriers align with the escape slots, lifting it straight up and pulling it toward the operator. Wash it in a sink, rinse with clear water and dry with a clean cloth. To reinstall it, lower the carriers through the slots and rotate the cage right to the stop at the front-centre position. Wipe or wash the splash guard with a cloth or sponge and warm, soapy water, then rinse and dry it. The stainless-steel bowl guard is described in the manufacturer’s sheet as removable without tools and dishwasher-safe.
The manual says to lubricate the slideways approximately twice a year. On 30- and 40-quart models, apply a thin coat of Lubriplate 630AA to the bowl-pad area of the bowl support and each slideway. If the planetary seal becomes dry and squeaks, work a little mineral oil under the seal lip. The manual also recommends regular service, at least twice a year for typical usage; frequency may vary with use.
Check agitator clearance periodically. The agitator must not touch the bowl. The stated maximum clearance between the bowl bottom and the “B” flat beater is 1/8 in. (3 mm); for the ED dough arm, the maximum is 5/16 in. (8 mm). For 30- and 40-quart mixers, the manual says to turn the stop screws counterclockwise to decrease clearance or clockwise to increase it. Raise and lower the bowl to recheck the adjustment, then reconnect power.
Troubleshooting
- Mixer will not start: Check whether the time display is flashing. The manual lists an open branch-circuit protector—such as a fuse or disconnect switch—as a possible cause. It also lists an overloaded mixer, a wire cage that is not closed at the front-centre position, or a bowl that is not locked or raised.
- Agitator touches the bowl: Check that the bowl is locked in position, confirm the agitator is installed correctly and check the agitator clearance. Adjust the stop screws as described in the maintenance section if needed.
- Planetary seal squeaks: The seal may need occasional lubrication. Apply a little mineral oil under its lip, following the manual.
For service, the manual lists Hobart Service at 1-888-4HOBART.
Applications
The HL300C capacity chart covers mixing and preparation tasks including bread and roll dough, heavy bread dough, thin and thick pizza dough, whole-wheat dough, cake batter, sugar cookies, mashed potatoes, whipped cream, egg whites, fondant and marshmallow icing, and basic egg-noodle pasta. Match the batch size, speed and agitator to the chart; observe its maximum mix times and dough-capacity notes. The mixer’s #12 hub can also accept compatible attachments, such as the listed vegetable slicer and meat chopper attachment, when the mixer is not mixing.
