About the Hobart HS7-PHS
Overview
The Hobart HS7-PHS is an automatic heavy-duty marine slicer in Hobart’s HS Series. It has a removable 13-inch CleanCut knife with a cobalt alloy edge and a 1/2 HP knife drive motor. The automatic product carriage has four speeds and three stroke lengths, with controls mounted at the front. Hobart identifies the HS7-PHS as the marine slicer model with a removable knife.
The slicer’s one-piece burnished aluminum base has fewer crevices where food can lodge. Its carriage tilts and can be removed, and the knife and ring guard cover are removable to support cleaning access. Hobart lists the HS7 series for slicing meat and cheese; the gauge plate adjusts for slice thickness up to 1 inch.
Key Features
- Removable CleanCut knife: The approximately 13-inch knife is made from 304L stainless steel and high-performance Stellite alloy. The spec sheet identifies a cobalt alloy edge and says the CleanCut knife lasts two to three times longer than carbon-coated or stainless-steel knives.
- Automatic carriage: Four carriage speeds and three stroke lengths let the operator select settings for different products. The Select-a-Stroke option allows selection of the carriage stroke length; shorter strokes can increase the number of slices, as described in the HS Series manual.
- Slice adjustment: The gauge plate is a heavy aluminum extrusion with machined grooves and adjusts for slices up to 1 inch thick. Hobart describes a double-action indexing cam: the first full turn of the index knob gives control for shaving, chipping and thin slicing, while the second opens the gauge plate for thicker slicing.
- Cleaning access: The carriage tilts and is removable. The knife is removable, the ring guard cover comes off, and the knife cover is held magnetically. The ring guard cover catches food debris; removing it reveals a 0.12-inch space between the knife and guard for flossing.
- Operator safeguards: Zero knife exposure, a no-volt release and a home-to-start interlock are listed features. The slicer must be restarted after a power interruption, and it will not start unless the carriage is in its home position.
- Sharpener: The top-mounted Borazon sharpening system is removable for cleaning. The spec sheet says its single-action system sharpens and hones in five seconds; it also states the Borazon stones have a lifetime guarantee.

Installation & Requirements
Place the slicer on a suitable counter or tabletop, leaving enough room for the carriage to move freely forward and back. The product tray must be installed before use: lower the support arm onto the carriage hinge pins, tilt the tray toward the gauge plate, and tighten the support-arm knob.
The HS7-PHS electrical specification is 240/60/1 at 2.8 amps. The manual says the slicer must connect to a properly grounded receptacle. If the receptacle is not the proper grounding type, contact an electrician; do not remove the grounding prong. The Hobart spec sheet lists a six-foot, three-wire power cord and identifies the HS7-PHS as having no plug. Electrical and grounding connections must comply with applicable local electrical codes.
Before first use, thoroughly clean and sanitize the slicer. The manual also says to replace parts before operating the machine if they have been removed.
Operation
The HS7-PHS is an automatic slicer. Before starting, place the carriage in its home position; the home-to-start interlock prevents the slicer from starting when the carriage is not home. The manual describes a no-volt release: after a power failure or unplugging, the slicer must be restarted. It also describes automatic shutoff if the carriage has not moved back and forth for 30 seconds.
Set the gauge plate for the required slice thickness, up to 1 inch, and select a carriage speed and stroke length suited to the product. The HS7 series has four carriage speeds and three stroke lengths. The manual says the Select-a-Stroke option lets the operator choose a stroke length for the product; shorter strokes can increase the number of slices. Use the meat grip when handling product near the rotating knife.
The gauge plate has a locking feature: the carriage tray cannot be tilted or removed unless it is at the home position and the gauge plate is closed. Turning the index knob fully clockwise closes the gauge plate and activates the stop setting; the slicer also stops when the OFF button is pressed.
Cleaning & Maintenance
Unplug the power cord before cleaning, servicing or removing parts. Before maintenance, close the gauge plate by turning the index knob fully clockwise. The manual recommends removing the parts for thorough cleaning, then washing, rinsing, sanitizing and allowing them to dry before reassembly. Clean and sanitize the machine after installation and before its first use, and clean it at intervals that comply with applicable health codes.
Cleaning removable parts
- The sharpener lifts straight off its mount. Remove residue from its housing, then wash, rinse and sanitize it in a sink or dishwasher.
- The meat grip can be removed from the product tray and washed, rinsed and sanitized in a sink.
- The product tray can be washed, rinsed and sanitized in a sink. The manual also describes cleaning the product-tray pin with a brush.
- Wash, rinse and sanitize the top knife cover and plastic ring guard cover in a sink or dishwasher. The ring guard cover is also described as warewasher-safe.
- The HS7-PHS has a removable knife. The manual says to use the knife removal tool and carry both the knife and tool by the tool handle. Wash, rinse and sanitize them in a sink or dishwasher. The knife is very sharp; use extreme caution around it.
Cleaning the slicer and sharpening
Wipe surfaces with a clean cloth, mild detergent and warm water, paying particular attention to areas where food or liquids may collect and to frequently touched handles, knobs and controls. Rinse with a clean cloth and water, then apply sanitizer after removing food soil. Use products formulated for stainless steel or aluminum, and do not exceed the detergent or sanitizer manufacturer’s recommended concentration. Do not use steel pads. When cleaning the knife, wipe outward from the centre.
The HS7 and HS9 series use a gas-assist spring to help raise the slicer for cleaning underneath. Follow the manual’s instructions when raising the unit so it is supported before cleaning below it.
Sharpen only when necessary; sharpening too long or too often causes unnecessary knife wear. Clean and sanitize the slicer before sharpening so food debris does not transfer from the knife to the sharpener, and clean and sanitize it again afterwards. The manual’s sharpening procedure says to hold the KNIFE ON button for 15 seconds while pulling the sharpener lever fully forward, then release the lever, press OFF and unplug the machine. The spec sheet separately describes the Borazon system as sharpening and honing in five seconds.
Lubrication and inspection
Lubricate the carriage slide rod monthly with four to five drops of the supplied Lubriplate FMO-200-AW oil on each side of the carriage transport. Move the carriage back and forth several times to spread the oil along the rod. Lubricate the meat-grip slide rod periodically, or when resistance is felt.
The manual requires gasket inspection at intervals no longer than six months. The inspection must be performed by the manufacturer or an authorized service agent. If a gasket or seal is damaged or missing, take the slicer out of service until the manufacturer or an authorized service agent repairs it.
Applications
The HS7-PHS is specified for commercial food preparation, including slicing meat and cheese. Its automatic carriage, adjustable gauge plate and removable components support repeated slicing tasks and access for cleaning in commercial kitchens and food retail settings.
