Installation & Requirements
The product specification calls for copper wiring and a 230V, 50/60Hz single-phase electrical connection with a 1 x 16A breaker size. Other voltages are noted as available on request. The listed gas connection is 3/4-inch NPT. Water requirements are a 3/4-inch connection and a flow pressure of 1.5–6 bar; the listed drain is DN 50 mm.
The installation notes recommend 500 mm of clearance on the left for service and maintenance. They state that this may be reduced to a minimum of 350 mm if heat sources affect the left side of the unit. The notes also say installations must comply with local electrical, plumbing and ventilation codes. The specification diagram identifies a steam vent pipe of DN 3 inches / 78 mm, a steam-burner exhaust pipe and a hot-air-burner exhaust pipe. Confirm the applicable gas configuration, connections and site requirements against the unit documentation before installation.
Operation
Choose steam, hot-air or combined cooking according to the preparation. Steam is adjustable from 30°C to 130°C; hot air and combined cooking are adjustable from 30°C to 300°C. ClimaPlus measures humidity and offers five-stage setting and regulation. The control arrangement provides separate settings for cooking mode, temperature, core temperature and time. Operators can program up to 100 cooking programs, with up to six steps in each program, and set the five fan speeds as required.
The operating instructions list a maximum load of 90 kg for the 20 x 1/1 GN size, with a maximum of 15 kg for each rack. Exceeding the stated maximum load can damage the appliance. For steaming, the manual notes that fish, meat, vegetables, side dishes and fruit can be cooked together when they are being prepared by the same method. It recommends perforated GN containers for potatoes to allow steam circulation. Rice and cereals are the foods for which the manual specifically instructs adding water, at a ratio of one part grain to 1.5–2 parts water.
The manual advises leaving the cooking cabinet door slightly open during a prolonged idle period, such as overnight. For a long stoppage, such as a non-work day, it instructs users to shut off the water, power and gas supplies. On floor units, the door is not fully closed unless the handle is vertical.
Cleaning & Maintenance
The operating instructions require daily cleaning for hygiene and to help prevent malfunctions and corrosion, including when the unit is used only in steam mode. The automatic CleanJet cleaning system has three programs for different soil levels. The manual describes CLE1 as a powerful clean for heavy roasting and grilling deposits, CLE2 as an economical clean for light soiling, and CLE3 as an interim clean without drying and rinsing. Its program table lists durations of 3 hours 30 minutes for CLE1, 2 hours 30 minutes for CLE2 and 40 minutes for CLE3. A separate manual description gives an approximate duration of 3 hours 45 minutes for CLE1.
Use only the appliance manufacturer’s cleaner and rinse-aid tabs; the manual warns that other cleaning chemicals can damage the appliance. Do not put tabs into a cooking cabinet hotter than 50°C. The manual also warns that excessive cleaning chemicals can cause foaming and says to reduce the tab quantity if foaming occurs. For the press-fit door gasket, it recommends daily cleaning with a soft cloth and washing-up liquid or a non-abrasive rinsing agent; abrasive cleaners are not to be used.
Do not clean the appliance with a high-pressure cleaner, steam cleaner or direct water jet. The manual says not to use acids or expose the unit to acid fumes, and to clean exterior panels with mild household cleaning agents on a damp soft cloth. For the door glass, use a soft cloth or sponge and glass cleaner or mild dish soap. Do not use scouring pads, abrasive cleaners, strong acids or bases, undiluted alcohols, acetone, methanol, oven or grill cleaner, benzine, benzene, toluene or xylene on the glass. Let hot surfaces cool before cleaning and rinse cleaning agents away completely before heating the unit.
On 20 x 1/1 GN floor units, the manual says air-filter replacement is to be carried out by a Rational service partner. The operating instructions also say to leave the door slightly open during extended idle periods. The manual advises against operating the appliance without its air filter and states that the filter and cover must be correctly assembled for protection against sprayed water.
Troubleshooting
- Unit shows no function after switch-on: the manual lists a switched-off external main switch or a tripped fuse on the premises’ distribution board as possible causes. Check the main switch and the relevant fuses.
- Unit has been in an ambient temperature below 5°C for a long time: the manual says to heat the cooking cabinet above 20°C and notes that the appliance must be used in frost-free conditions.
- “CHnG FILt” message: the manual identifies a soiled air filter. Replace the filter and acknowledge the message using the cooking-time button. For the 20 x 1/1 GN floor unit, air-filter replacement is assigned to a service partner.
- Gas appliance shows “CHnG PoL”: the manual identifies incorrect power-supply polarity. It says to have the unit permanently connected with the correct polarity by an electrician.
- Gas appliance continually displays “rES”: the manual lists interrupted gas supply, an unpowered ventilation cover or low gas pressure as possible causes. It says to open the gas valve, switch on the ventilation cover and have the gas supply checked if pressure is too low.
- Drain blockage: the manual says to remove and clean the outlet pipe at the back of the unit. It notes that blockages can occur with frequent cooking of high-fat products or when the outlet pipe has too shallow a drop; the pipe should be run as described in the installation instructions.
The manual specifies that inspection, maintenance and repair work must be carried out by trained technicians. Disconnect the appliance from the mains for cleaning, except during CleanJet cleaning, and for inspection, maintenance or repair.
Applications
The stated daily meal range is 150–300. With steam, hot air and combined cooking available, the oven supports a variety of commercial-kitchen methods. The operating instructions give examples including steaming potatoes in perforated GN containers, cooking fish, meat, vegetables, side dishes and fruit together when they share the same cooking method, and preparing rice or cereals with the stated water ratio. The 20 x 1/1 GN capacity is suited to kitchens handling multiple trays or batches in a service period.
