About the Rational SCC61G
Overview
The Rational SCC61G SelfCooking Center is a gas-fired combi oven with capacity for 6 x 1/1 GN containers or grids. It combines moist heat, dry heat and the two together, supporting cooking methods used in commercial kitchens as well as automatic cooking and finishing functions. The specification sheet lists a daily production range of 30–80 meals. A separate seller describes capacity for six 13 x 18 inch half-size sheets or six 12 x 20 inch full-size hotel pans; the specification sheet also identifies lengthwise loading for 1/1, 1/2, 2/3, 1/3 and 2/8 GN accessories.
The supplied materials include documentation for more than one SCC generation and market configuration. In particular, electrical information differs between the SCC61G specification sheet and the 2006 SCC61G parts manual. Confirm the exact unit version, gas type and electrical rating from its identification plate and matching installation documents.
Key Features
- Automatic cooking: The specification sheet lists seven operating modes and applications for meat, poultry, fish, side dishes, egg dishes and baked goods, along with automatic finishing. It describes automatic adjustment of the cooking path and support for mixed loads in production and à la carte service.
- Three combi-steamer choices: Select steam, hot-air cooking, or a combination of steam and hot air. The specification lists steam from 30°C to 130°C and hot air and combined cooking from 30°C to 300°C.

Installation & Requirements
The SCC61G specification sheet says installation must comply with applicable local electrical, plumbing and ventilation codes and local ventilation-system regulations. It recommends 500 mm of left-side clearance for service and maintenance when the unit cannot be moved while connected. Where heat sources affect the left side, the stated minimum is 350 mm. The sheet’s installation drawing identifies a DN 60 mm steam vent pipe, a gas connection and separate steam-burner and hot-air-burner exhaust pipes.
The supplied SCC-line user manual gives an exhaust-gas pipe diameter of 180 mm for gas appliances and describes a draft diverter as a gas-appliance item. Check this requirement against the installation documentation for the exact SCC61G version. Provide the gas type and connection specified for the appliance, and verify gas pressure and electrical supply against its rating plate and applicable installation instructions. The SCC61G product data gives different electrical ratings for different documentation and configurations, so the 120 V parts-manual entry should not be substituted for the 240 V specification-sheet entry without confirming the specific unit.
For network functions, the specification sheet calls for an RJ45 network socket and states that a wired connection of at least 10 Mb/s is preferred for ConnectedCooking; it also allows suitable WLAN adaptors. The supplied commissioning checklist calls for documenting the gas type and checking gas pressure with the unit off and while it is operating with other kitchen gas consumers on. It also includes checks for water connections, drainage, electrical connections, ventilation and function testing. Use the checklist and installation instructions applicable to the actual appliance.
Operation
The specification sheet describes automatic cooking and finishing as well as combi-steamer operation. The supplied SCC-line operating manual explains the three manual cooking modes: moist heat, dry heat, and moist and dry heat together. It describes moist-heat methods including steaming, stewing, blanching, simmering, soaking, vacuum cooking, thawing and preserving. Dry-heat methods include baking, roasting, grilling, deep-frying, gratinating and glazing. The combined mode provides a hot, humid cabinet climate. The SCC61G specification sheet gives the mode temperature ranges in the specifications above.
The SCC-line manual describes using the core-temperature probe for cooking by internal product temperature and displaying current cabinet humidity, cabinet temperature, elapsed cooking time and current core temperature. The SCC61G specification sheet identifies a six-point probe with automatic error correction. The manual warns that the probe and its positioning aid may be hot and instructs users to use oven gloves. It also says to remove the probe and place it in its holding position before removing a mobile plate rack.
The supplied manual warns about hot vapour, hot containers and grids, and the risk of scalding from liquid. For mobile racks, it instructs users to lock GN-container catches, secure the transport trolley to the appliance, and use the trolley’s transport safety catch. It cautions that mobile equipment can tip when moved over an inclined plane or threshold. The manual’s stated maximum load for a 6 x 1/1 GN appliance size is 30 kg, with a maximum of 15 kg per rack. It advises that containers holding liquid, or food that liquefies during cooking, should not be placed above rack levels where their contents cannot be seen.
Cleaning & Maintenance
The SCC61G specification sheet lists Efficient CareControl, which recognizes soiling and scale and removes them automatically, automatic steam-generator cleaning and descaling, seven cleaning stages, and prompts showing cleaning stage and chemical quantity in relation to soiling. The supplied SCC-line manual also contains CleanJet instructions. Because the supplied operating manual is for SCC202E rather than SCC61G, confirm the correct cleaning program and chemical instructions for the exact appliance before using them.
Care points stated in the supplied SCC-line manual include cleaning the cabinet regularly, including when it is used only in moist-heat mode, and cleaning the door seal with a soft cloth and non-abrasive cleaner. The manual says to leave the door slightly open when the unit will be idle for a prolonged period, and to remove and clean the incoming-air filter once per month. It cautions against high-pressure cleaners, scouring products and acids or acid fumes, and says not to put cleaner or rinse-aid tablets into a hot cabinet above 60°C. It directs users to follow the cleaner packaging and the manual’s cleaning procedure. These instructions are from the supplied SCC202E manual; confirm that the cleaning products and procedure match the SCC61G version being operated.
The supplied preventative-maintenance checklist for SCC/CM units includes checks of water, drain, gas and electrical connections; door lock, catch, hinges and gasket; cabinet components; and electrical connections and contacts. Its gas-specific list includes burner-head cleaning, burner-blower condition, gas flow pressure, combustion readings, ignition-electrode cleaning and inspection of external flue-gas venting. The checklist specifically notes yearly burner maintenance for gas units. It also calls for checking steam-generator condition and scale and confirming that components and connections are functioning correctly.
Troubleshooting
The supplied SCC-line operating manual associates a flashing water-valve symbol or low-water indication with a closed water valve or a clogged water-intake filter. It instructs the operator to open the valve or close the water supply, remove and clean the inlet filter as applicable, reconnect the water intake and check for leaks. If the low-water message appears at startup, the manual says it can mean that the steam generator is filling; if the indication does not clear, check the water valve and strainer.
For water running from the bottom of the unit, the manual lists an unlevel appliance or blocked drain as possible causes. Its suggested checks are to level the unit and remove and clean the outlet pipe; it also notes that frequent cooking of high-fat products or an insufficient fall in the outlet pipe can contribute to blockage. For the gas message Change polarity, the manual says the power supply polarity is incorrect and describes turning a plug through 180 degrees where the unit is plug-connected; it says an electrician can make a permanent connection with correct polarity. For a gas unit showing Reset, it lists interrupted gas supply or low gas pressure and directs the user to check the gas valve, ventilation cover and gas supply. Have electrical and gas work handled by an appropriately qualified person.
The SCC-line service manual lists fault indications involving water detection, drain-valve position, CleanJet operation and short circuits in steam or hot-air solid-state relays. It identifies some faults as requiring service or switching the unit off. The supplied SCC61G parts manual identifies gas-system components including the automatic ignition controller, gas valves, burner blowers and premix disc, as well as separate steam-generator and hot-air burner assemblies. Use the fault display and documentation for the exact unit when deciding whether a fault requires service.
Applications
The SCC61G’s capacity and cooking modes suit kitchens producing mixed menus and batch loads. The specification sheet lists meat, poultry, fish, side dishes, egg dishes, desserts and bakery products among its automatic-cooking applications, with automatic finishing also included. Its moist-heat, dry-heat and combination modes cover tasks such as steaming vegetables, cooking rice, roasting, baking, grilling and reheating prepared food. These examples describe cooking uses; the exact program choices depend on the installed controls and software version.
