About the Traulsen G31011
Overview
The Traulsen G31011 is a Dealer’s Choice G-Series, three-section, self-contained reach-in storage freezer with three full-height solid doors. The doors are hinged left/left/right. Its stated net capacity is 69.15 cu. ft.; manufacturer capacity figures may not represent usable storage space, so confirm required capacity against the actual products and shelving arrangement.
A top-mounted refrigeration system and an evaporator coil located outside the food zone leave the cabinet interior available for stored product. The microprocessor control has a three-digit LED temperature display and can show temperatures in Fahrenheit or Celsius. The manufacturer lists a standard operating temperature of 0 to -5°F and says the unit can be adjusted to operate as low as -10°F in ambient conditions of 90°F or less.
Key Features
- Three-section storage: Nine factory-installed epoxy-coated steel wire shelves, three per section. The recommended load limit is 225 lb. per shelf.
- Solid doors: Full-height stainless steel doors help retain cold. The left/left/right hinge arrangement is specific to model G31011.
- Cabinet materials: Stainless steel front and doors, with anodized aluminum sides, interior and door liners. The exterior top, back and bottom are galvanized steel.
- Door operation: Self-closing cam-lift hinges operate up to 90 degrees; the doors have a stay-open feature at 120 degrees. Concealed hinge switches activate the interior LED lighting.
- Refrigeration and airflow: The self-contained refrigeration system is top-mounted. Its front-facing condenser is accessible behind the louver assembly, and the evaporator coil is outside the food zone.
- Interior and access: LED interior lighting, cylinder locks, long-life EZ-Clean door gaskets and four 6-inch locking casters are included.
- Loading protection: The G-Series specification lists a Load-Sure Guard to help prevent problems from improper loading.

Installation & Requirements
Use the unit’s serial tag to confirm its electrical ratings before connection. The G-Series operation manual calls for a separate, dedicated 20-amp circuit, with wiring and overcurrent protection selected to match the unit’s nameplate. The manufacturer’s specification for this model lists 115 V, 60 Hz, single phase, 16.0 full-load amperes and an attached NEMA 5-20P plug. The manual instructs users not to cut or remove the grounding prong and not to use an extension cord. Electrical connections must follow local codes and be made by a qualified electrician.
The service manual calls for at least 12 inches of clearance above the condensing unit, or unrestricted airflow at the back of the cabinet, and notes that 12 inches above is needed for certain maintenance tasks. The G31011 specification sheet separately states a required 12-inch overhead clearance. Locate the freezer away from extreme heat or cold. Allow the doors to open at least 90 degrees; the door stay-open feature engages at 120 degrees. The operating manual identifies the power toggle switch on top of the unit, beside the evaporator housing.
Operation
The G31011 has an electronic microprocessor control and LED temperature display. Its G-Series operation manual describes a customer access code for viewing and changing customer parameters: press Set to reach Customer/Service Access, then enter 0, A, 1 using the arrow and Set buttons as prompted. The manual cautions that parameter changes are not normally needed because settings are factory preset.
The listed customer parameters include thermostat set-point high and low, temperature scale, 24-hour clock, date, daylight-saving setting, manual defrost, defrost lockouts, room-temperature offset, evaporator-coil sensor temperature and cabinet-air temperature. The manual gives typical freezer settings of -3 to 0°F for the high set point and -6 to -4°F for the low set point. The high and low set points cannot be identical; the manual specifies a difference of at least 1–2 degrees. The G31011 manufacturer specification gives the product’s standard operating range as 0 to -5°F and says it can be adjusted as low as -10°F under the stated ambient conditions.
The freezer runs automatic, time-activated defrost cycles. The operation manual says the controller is factory-set for six evenly spaced cycles in each 24-hour period. During defrost, the display reads “dEF,” and the compressor and evaporator fans stop while the electric defrost heater operates. On models with electric defrost, a coil sensor reading of 70°F ends the defrost heat cycle. The evaporator fans restart after a delay, either by time or when the coil sensor reaches 32°F. The manual says the microprocessor is set to terminate defrost after 20 minutes if a sensor fails and cautions against changing that setting without consulting the factory. A manual defrost can be started through the controller’s Start Manual Defrost parameter; the defrost lockout settings can prevent defrost during selected two-hour periods.
Cleaning & Maintenance
Disconnect electrical power before cleaning. The operation manual identifies regular condenser-coil cleaning as important for reliable operation and efficiency because lint and dust can accumulate on the coil. To access the front-facing condenser, remove the two screws at the bottom sides of the front louver assembly and pivot the assembly upward. Clean the stainless steel exterior with warm water, mild soap and a soft cloth, wiping in the direction of the metal grain. Avoid strong detergents and gritty or abrasive cleaners; do not use chlorine-containing cleansers because they may promote corrosion.
The service manual’s gasket procedure calls for inspection every three months. Open the doors and check the gaskets for tears, dirt, mould or wear; clean them with mild soap and water, avoiding cleaners containing chlorine or chlorides. Replace a damaged gasket as needed. The service manual identifies part number 341-60083-00 as a full-height gasket. It also advises inspecting the cabinet for visible wear during cleaning. For electrical or refrigeration service, consult the wiring diagram and provide the model and serial number to Traulsen Service.
Troubleshooting
Condensing unit will not start: Check whether the cord and plug are disconnected and check the control temperature setting. The operation manual’s service information also lists the electrical cord, fuse or circuit breaker, and power switch among the basic checks if the unit is not operating.
Condensing unit runs for a long time or continuously: Check that the doors close properly and inspect the condenser or filter for dirt; clean as needed. An iced evaporator coil may require a manual defrost. The manual identifies a refrigerant shortage as a service issue and advises calling for service.
Food compartment is too warm: Check the doors and gaskets for a proper seal, and check that the condenser coil is clean. A large quantity of warm product or a door left open for an extended period can require recovery time. The manual also advises checking whether the control setting is too high.
Display reads “dEF”: The operation manual identifies this as the defrost indication. During a freezer defrost cycle, the compressor and evaporator fans stop while the coil is defrosted; normal refrigeration resumes after the defrost and fan delays complete.
Applications
The three-section layout and 69.15-cu.-ft. stated capacity suit commercial kitchens that need substantial reach-in frozen storage, such as restaurant back-of-house storage, institutional foodservice or catering operations. The full-height solid doors, nine shelves and locking casters support organised storage and access in a commercial kitchen. Check door-opening space, electrical service and the stated capacity against the planned location and storage load before ordering.
