About the Vulcan Hart 948RX
Overview
The Vulcan Hart 948RX is a heavy-duty countertop gas griddle in Vulcan’s 900RX series. Its 48-inch-wide cooking plate is 1 inch thick and made of polished steel. Four U-shaped burners provide 108,000 BTU total, with an independent snap-action thermostat for each 12-inch cooking zone. This arrangement lets kitchen staff manage several cooking temperatures across the plate for items such as eggs, burgers, sandwiches and breakfast meats.
The 900RX uses electric spark ignition to light its pilots. Thermocouples and pilot safety valves monitor the pilot flames; if a pilot goes out, the safety valve shuts off gas to the pilot and main burners. The griddle has a stainless steel front, sides and front top ledge, a welded grease chute and a front grease trough.
Key Features
- Four independently controlled zones: One mechanical snap-action thermostat and one 27,000 BTU U-shaped burner serve each 12-inch section.
- Thick polished steel plate: The 1-inch plate provides a substantial cooking surface for busy foodservice kitchens.
- Electric ignition with pilot safeguards: The 900RX spark ignition system works with pilot safety valves and thermocouples.
- Welded grease management: A fully welded grease chute helps prevent grease migration; a front grease trough collects cooking grease.
- Commercial construction: Stainless steel exterior components and a fully welded stainless and aluminized steel body frame.
- Thermostat range: Each cooking zone adjusts from 200°F to 550°F.

Installation & Requirements
The griddle must be level from side to side and front to back during operation. The manual notes that poor leveling can cause uneven temperature distribution, cold spots and possible electrical component damage. Adjust the legs by turning the bullet feet; do not extend the legs more than 1 3/4 inches.
A gas pressure regulator is supplied and must be installed externally, as close to the griddle on the gas supply line as possible. Orient the regulator arrow in the direction of gas flow and position its vent plug and adjustment screw upright. Set and verify outlet pressure with all burners operating: 4 inches W.C. for natural gas or 10 inches W.C. for propane. The manual recommends that a trained gas service technician perform installation of the griddle and regulator.
Connect the gas supply at the rear of the unit using a 3/4-inch NPT supply line. The manual calls for a gas shutoff valve upstream of the griddle. Check gas-line joints for leaks with a soap-and-water solution; do not use an open flame. After leak checks, purge gas lines receiving gas to remove air. The gas supply pressure must not exceed 1/2 psig (3.45 kPa) or 14 inches W.C.
The 900RX electric ignition circuit uses 120V, 50/60Hz, 1 amp, single-phase power and a NEMA 5-15 plug. Do not obstruct the flue at the rear. The manual recommends that qualified personnel install ventilation to exhaust flue gases outside the building and specifies at least 18 inches between the flue termination and hood filters. If the griddle is mounted on a stand with casters, the manual specifies a compliant flexible gas connector, quick-disconnect device and restraint; casters are supplied with a stand, not identified as part of the griddle itself.
Operation
For normal startup, turn the griddle shutoff valve on and use the electric ignition system to light the pilots. Hold the power switch in the ON position to supply power to the igniters while depressing and holding the corresponding red pilot safety button. Watch the pilot through its sight hole. After the pilot has burned for about 45 seconds, release the safety button. Repeat for the other pilot or pilots. At initial installation, or after the main gas supply has been off for a long period, the pilot may need more time before the safety button is released.
Once the pilots are lit, set each thermostat to the desired cooking temperature. Each 12-inch section is independently controlled, with a thermostat operating range of 200°F to 550°F. The ignition power switch supplies power to the igniters only while held in the ON position; the burners and pilots can continue operating after it is released. The pilot safety system shuts off gas to the pilot and main burners if a pilot goes out.
To shut down cooking, turn the thermostats off or turn the griddle shutoff valve off. Turning the griddle shutoff valve off cuts gas to the pilots and thermostats, so the pilots must be relit when the unit is next put into service. For extended shutdown, the manual instructs operators to turn off the griddle shutoff valve and/or main gas supply and unplug the electrical cord, if applicable. It also instructs applying a heavy coat of vegetable oil over the plate to inhibit rust.
Cleaning & Maintenance
The griddle and its parts become hot during use. Allow the unit to cool before cleaning and use care around hot components. Clean the cooking surface after each use according to the instructions for the surface finish on the specific unit. Empty the grease drawer throughout the day as needed.
Once per day, thoroughly clean the back splash, sides and front. Do not strike the back splash with a spatula or another tool, since that can create a gap between the splash and plate that is difficult to clean. Remove, empty and wash the grease drawer as an ordinary cooking utensil.
Once per week, clean the plate thoroughly using the instructions for its surface finish, then season it according to the manual’s seasoning instructions. Clean stainless steel surfaces with a damp cloth and polish with a soft, dry cloth. The manual says a griddle cleaner can be used to remove discoloration. When the unit is cool, check the flue daily and clear obstructions. The manual also calls for periodic checking and lubrication of valves, with details available from a service agency.
Troubleshooting
The manual identifies the following operator checks and service causes. If the issue remains or involves gas pressure, valves, wiring or other service work, contact an authorized service contractor; the service manual is intended for trained Vulcan service technicians.
- Heat does not come on: Check whether the pilot burner is lit and whether the griddle shutoff valve is ON. The manual also lists a thermostat problem or low gas pressure as possible causes requiring service.
- Pilot will not light: Check that the griddle shutoff valve is ON. Possible service causes include an obstructed pilot orifice, a pilot safety valve or thermocouple problem, or low gas pressure. The manual also lists pilot gas being turned off at the pilot.
- Pilot will not stay lit: Possible causes include air blowing out the pilot, air remaining in the gas supply, a blocked or incorrectly sized pilot orifice, a pilot safety valve or thermocouple problem, or low gas pressure. The manual advises holding the pilot safety button until air is purged and contacting service for component problems.
- Fat smokes excessively: The manual lists a temperature set too high or moisture in the food turning to steam.
- Food sticks, burns around the edges or has dark specks: The manual lists a temperature set too high or a griddle surface that needs cleaning.
- No spark at pilot: The service manual lists an unplugged power cord, faulty ignition switch, shorted igniter electrode, faulty igniter cable or interconnecting wiring, or a malfunctioning electric igniter module.
- Spark occurs but gas does not ignite: Possible causes include a closed service gas valve, air in the gas supply, gas supply off or insufficient pressure, pilot adjustment, or a faulty safety valve.
- Burners ignite but do not remain lit, or flame levels differ: The service manual lists incorrect or fluctuating gas pressure, a blocked flue, obstructed or misaligned orifices, burner problems, external airflow and burner air-shutter adjustment.
- Delayed burner ignition or excessive/low heat: Listed causes include gas pressure, burner seating or alignment, pilot adjustment, a shutoff valve not fully open, thermostat calibration or malfunction, an uninstalled or malfunctioning regulator, incorrect gas type, or an obstructed or incorrect orifice.
Applications
The 48-inch cooking surface and independently controlled zones suit commercial kitchens that cook several menu items on a shared griddle. Separate thermostat settings can support different cooking tasks across the plate, such as preparing breakfast service, burgers, sandwiches and other griddled foods. The countertop format is intended for installation as part of a commercial cooking line.
