About the Vulcan Hart C24EA3
Overview
The Vulcan Hart C24EA3 is a single-compartment electric convection steamer for countertop use in commercial kitchens. It is a pressureless cooker with an internal electric steam generator that maintains water at approximately 195°F. The compartment can hold three steam pans, making it suitable for cooking batches of vegetables, eggs and other foods. The installation and operation manual identifies Basic and Professional C24EA3 configurations; their electrical ratings and some controls differ, so check the unit’s data plate and configuration before connecting or servicing it.
Key Features
- Three-pan capacity: The compartment accommodates three pans, 2½ inches deep.
- Electric convection steaming: The internal generator supplies steam for cooking fresh foods and for steaming and cooking frozen foods.
- Timed cooking: The C24EA series manual describes a 0–60-minute timer. The Professional configuration also has a constant-steam position for continuous steam operation.
- External delime port: The port on top of the unit allows deliming solution to be added to the steam generator as described in the operation manual.
- Listings and origin: The product listing identifies ULC and NSF certification and states that the item is made in the USA.
Specifications
- Model: Vulcan Hart C24EA3, three-pan configuration.
- Equipment type: Single-compartment electric countertop convection steamer; pressureless steam cooker.
- Pan capacity: 3 pans.
- Dimensions: 24" wide x 33" deep x 19½" high, as listed for the 208 V, single-phase product configuration.
- Weight: 130 lb, as listed for that configuration.
- Electrical supply: The product listing describes a 208 V, single-phase, hardwired configuration. C24EA3 manuals also cover 208/240 V and 480 V builds; match the supply to the unit’s data plate.
- Frequency: The service manual gives 50/60 Hz for the C24EA series; the listed 208 V configuration is specified at 60 Hz.
- Power rating: The service manual’s electrical table lists 8.5 kW for C24EA3 Basic and 9.25 kW for C24EA3 Professional. A product listing for a 208 V single-phase configuration reports 8.5 kW. Confirm the rating on the individual unit’s data plate.
- Amperage: The service manual lists, for Basic models, 26.5 A at 208 V three-phase, 26.5 A at 240 V three-phase, 17.7 A at 480 V three-phase, 40.9 A at 208 V single-phase and 35.4 A at 240 V single-phase. For Professional models it lists 26.5 A at 208 V three-phase, 28.9 A at 240 V three-phase, 20.0 A at 480 V three-phase, 43.6 A at 208 V single-phase and 38.5 A at 240 V single-phase. The product listing separately reports 44 A for its 208 V single-phase configuration.
- Steam-generator water temperature: Approximately 195°F, as stated in the installation and operation manual.
Installation & Requirements
The C24EA3 is specified for countertop installation. The installation manual says to verify that the electrical supply agrees with the specifications on the data plate at the back of the unit. Electrical work and initial field start-up and adjustment are for personnel qualified to install the equipment. The unit is electric; the supplied material does not state a gas connection or ventilation requirement.
The service manual notes that, except for 480 V steamers, C24EA series units are shipped prewired for 208/60/3 operation. A heating-element wiring change is required when connecting to 208/60/1, 240/60/1 or 240/60/3 service. Because the C24EA3 is available in different electrical configurations, use the data plate and the instructions for the specific unit when confirming its supply and connection; do not assume the listed 208 V single-phase configuration applies to every C24EA3.
The service manual lists a water supply pressure of 20–60 psig and says an in-line supply strainer is supplied. Its stated water-quality limits are total dissolved solids below 60 ppm, total alkalinity below 20 ppm, silica below 13 ppm, chloride below 4.0 ppm and pH from 6.5 to 8. The supplied excerpts do not provide clearance dimensions.
Operation
The C24EA3 uses atmospheric convection steam to cook fresh food or steam-defrost and cook frozen food. The manual describes the compartment as allowing the operator to open and close the door during a cooking cycle. When the door opens, the generator element shuts off; it restarts when the door closes. A timed cycle is set using the 0–60-minute timer. On Professional models, the timer also has a constant position for continuous steam.
At the end of a timed cycle, the buzzer sounds. The service manual states that it remains on until the timer is turned to Off, a new time or Constant is selected, or the steamer is turned off. When the unit is switched off, allow its generator drain cycle to complete. The operation manual notes that power must remain on for 15 minutes after the main power switch is set to Off so the blowdown cycle can finish. For an extended shutdown, the manual directs the operator to switch the unit off, turn off water and the main power supply, clean the compartment and disconnect power.
The manual cautions not to attempt to operate the steamer during a power failure. The cooking compartment contains live steam and hot water; use care when opening the door.
Cleaning & Maintenance
Compartment drain: Keep the drain running freely and inspect it daily for blockage. Remove particles and debris from the perforated strainer daily or more often if needed. After cooking greasy foods or seafood, close the door and operate the compartment for 25–30 minutes to flush residual grease and oil down the drain. Then pour ½ gallon of warm water with non-chloride detergent down the compartment drain and rinse with ½ gallon of hot water.
Steam generator: The manual says to drain the generator every day to flush accumulated minerals and help prevent scale that could interfere with operation. It warns that failure to drain the generator daily will void the steamer warranty. After operation, switch the unit off at the cooking compartment and allow the approximately 15-minute drain cycle to run. The manual notes that murky or milky water in the first portion of drained water indicates minerals in suspension.
Compartment and door: Wash the inside of the compartment with warm water and non-chloride detergent, then rinse with warm water. Weekly, clean exposed surfaces—including sides, front, door and top—with a damp cloth and polish with a clean cloth. Use a nonabrasive cleaner for discoloration. Clean the door-gasket sealing surface with a cloth and mild detergent in warm water, rinse with a fresh cloth moistened with warm water, and wipe dry. Do not use solvents or sharp instruments on the gasket, and do not apply food oils or petroleum lubricants directly to it. Leave the compartment door slightly open when the steamer is not in use; do not latch it and leave pressure on the gasket.
Deliming: The manual says deliming is not a substitute for a water-treatment program. Follow the deliming-material manufacturer’s instructions and use plastic or rubber gloves and safety goggles or a face shield. Keep the cap installed and tightened securely except during the procedure, and keep deliming solution off skin and eyes.
Professional configuration with automatic drain
- Switch the power off, wait five minutes for the generator to drain and the drain valve to close, and turn cooking timers off.
- Prepare the deliming solution according to its package instructions. Remove the cap from the top delime port, insert a funnel and slowly pour in the solution.
- Remove the funnel, rinse the port with clean water, lightly coat the threads with Petrol-Gel or equivalent food-grade grease, and securely reinstall the cap.
- Switch the unit on. When the Ready light comes on, run the cooking timer for three minutes to delime the steam tubes and nozzles.
- After 40 minutes, switch the unit off and allow five minutes for the generator to drain. Rinse by switching the unit on, waiting for Ready, running the timer for three minutes, switching off and allowing the generator to drain. Repeat the rinse once, then clean the interior and exterior with mild soap and water, rinse and dry.
Basic configuration with manual drain lever
The manual describes a separate procedure for Basic units. With the unit off, pull the drain lever to open the generator drain and wait five minutes for it to drain; turn the timer off. Prepare the solution according to its package instructions, remove the delime-port cap and insert a funnel. Lightly coat the port threads with Petrol-Gel. Push the drain lever in to close the valve and turn the unit on, then slowly add the solution. Remove the funnel, rinse the port and securely replace the cap. The manual requires these steps—from closing the drain and turning on the unit through replacing the cap—to be completed within five minutes. Continue with the manual’s timed deliming and rinse instructions for the Basic configuration. Follow the complete manual procedure for the specific unit.
Troubleshooting
- Water collects in the cooking compartment: Check for a blocked compartment filter or drain opening and clean the compartment filter. If the unit is not level, consult the levelling instructions in the installation section of the manual. Clear an obstructed drain line. If symptoms continue, contact Vulcan service.
- Drainage remains incorrect or requires adjustment: The manual directs the operator to contact Vulcan service for adjustments. It also identifies damage to the gasket sealing surface as a cause of steam leakage; a gasket with a nick or cut must be replaced.
The service manual is intended for trained service technicians. Electrical diagnosis, adjustment and repairs requiring service work should be handled by qualified personnel.
Applications
The manual identifies vegetables, eggs and other foods as intended uses. Its cooking guidance also covers seafood, meats, pasta, rice, canned vegetables and frozen foods. The three-pan capacity is suited to preparing several pans in a commercial kitchen; use the food-specific pan and cooking guidance in the operation manual.
