About the Vulcan Hart GCO2D
Overview
The Vulcan Hart GCO2D is a single-deck, half-size gas convection oven for commercial foodservice kitchens. Its single cavity uses a 25,000 BTU/hr burner and a 1/2 HP motor. Solid-state temperature control and a 1-hour dial timer provide straightforward control over cooking time and temperature. The manual identifies the GCO2D as the solid-state-control model; the related GCO2C has a programmable controller.
Key Features
- Solid-state controls: Set the cooking temperature within the stated 150°F–500°F range.
- Gas heat: A 25,000 BTU/hr burner is specified for the GCO2D.
- Convection airflow: A single-speed fan circulates air in the oven cavity.
- Five racks: The oven is furnished with five racks.
- Porcelain interior: The standard interior is porcelain, which the product description identifies as easier to clean.
- Electronic spark ignition: The gas burner ignition system uses electronic spark ignition.
- Convenient operating details: Includes a 60-minute timer.
- Leveling: The oven has adjustable 4-inch or 6-inch legs.

- Gas manifold pressure: Natural gas, 3.5 inches water column; propane, 10 inches water column
Installation & Requirements
The installation and operation manual says to check the oven rating plate, located inside the top front cover, to confirm that the electrical service and gas type match the site supply. If they do not agree, the manual says not to proceed with installation. The unit must be installed by personnel qualified to install gas equipment, and its initial field start-up should be performed by qualified personnel.
Location and ventilation
The manual specifies at least 3 inches of clearance at the sides and 3 inches at the back, from combustible or non-combustible construction. The location must allow service access and must not obstruct combustion or ventilation airflow. Provide enough room air for gas combustion and keep the equipment area clear of combustibles. The oven should be located under a hood connected to an exhaust duct. The manual states that the flue should not be connected directly to the oven and refers to NFPA 96 and local codes for ventilation requirements. It also says the hood should extend 6 inches beyond the oven.
Gas connection
The gas shutoff valve is supplied with the oven and located at the bottom of the control panel. The oven has a regulator integral to the gas solenoid valve, so the manual says an external regulator is not required. The gas supply line must be at least the equivalent of 3/4-inch iron pipe. For natural gas, the specified manifold pressure is 3.5 inches water column; for propane, it is 10 inches water column. The burner orifices are sized for 25,000 BTU/hr at the relevant pressure. Before lighting, check gas joints with a soap-and-water solution; do not use an open flame. The manual requires gas piping and joint compound to be suitable for propane where applicable.
Electrical connection and code notes
The 120-volt configuration is supplied with a cord and plug and requires a properly grounded three-prong receptacle. Do not remove the grounding prong. The manual says not to turn on the electrical supply until gas connections have been made and checked for leaks. Electrical and grounding connections must comply with applicable electrical codes. The manual's installation references include state and local codes, the National Fuel Gas Code (ANSI/Z223.1/NFPA 54) and NFPA 96; consult the applicable local requirements for the installation site.
Operation
Use the solid-state temperature control to set the cooking temperature and the dial timer to set a cooking period of up to 60 minutes. The oven uses a fan and spark ignition. The manual advises that, when cooking a food for the first time in this convection oven, operators check doneness periodically before the suggested cooking time has elapsed. It recommends recording useful time and temperature settings for repeat cooking. The manual notes that convection cooking can be faster than conventional deck-oven cooking, with lower temperature settings and shorter cooking times, and stresses that its recipe times and temperatures are suggestions because foods and recipes vary.
For a failed ignition, the operation manual gives a specific response: if the GCO2D's NO IGNITION light remains on for more than 20 seconds after three trials, turn the oven off for 5 minutes before attempting to relight it. Check that gas supply valves are open and check the electrical power source and connections. If the issue remains, contact a local Vulcan authorized service representative, as directed by the manual.
Cleaning & Maintenance
The manual cautions that the oven and its parts become hot. Use care when operating, cleaning or servicing it. Before cleaning or service, disconnect electrical power and follow lockout/tagout procedures.
- Wipe the exterior daily with a clean, damp cloth.
- Clean the standard porcelain oven interior daily with soap or detergent and water. Rinse thoroughly and dry with a soft, clean cloth.
- The manual also describes cleaning an optional stainless-steel interior: routine soap or detergent and water, followed by thorough rinsing and drying. For persistent burned-on food, grease or heat tint, it permits an abrasive cleanser mixed into a paste, applied with stainless-steel wool or a sponge while rubbing with the grain. This guidance is for the optional stainless-steel interior, not the standard porcelain interior.
- The fan motor has sealed bearings and requires no lubrication. The door hinges and mechanism require occasional lubrication with mineral oil.
- Check the flue annually, when cool, to ensure it is free of obstructions.
- If the oven is on casters and the gas restraint must be disconnected, turn off the gas first. Reconnect the restraint before restoring the gas supply and returning the oven to its installed position.
Troubleshooting
The service manual is prepared for trained service technicians and warns that repair procedures should not be performed by people who are not properly qualified. Gas and electrical service should be referred to qualified service personnel. The following are the causes listed in the manuals, not instructions to disassemble or repair the oven.
- No power to oven controls: The operation manual directs the operator to check the power source and connections. The service manual lists an unplugged unit, an inoperative power/cooldown switch or, on applicable controls, an inoperative 12/6-volt transformer as possible causes.
- Oven does not operate although controls have power: Listed possible causes include an open or inoperative door switch, a solid-state relay fault on applicable electronic-control units, blower motor malfunction or electronic-control malfunction.
- Gas does not ignite and there is no spark: Possible causes listed in the service manual include a failed 24-volt transformer, an inoperative or ungrounded spark ignition control, a control or probe fault, or an inoperative blower-motor centrifugal switch.
- Sparks but the burner does not ignite: The manual lists a closed manual gas valve, a malfunctioning gas-valve solenoid or an inoperative spark ignition control.
- Burner lights but will not maintain flame: Listed possible causes include insufficient gas pressure, a flame sensor not positioned in the flame, a spark ignition control fault or an orifice issue.
- Oven heats slowly or does not get hot enough: The service manual lists incorrect gas pressure, a control malfunction, an inoperative probe, a blower motor malfunction or an orifice issue.
- NO IGNITION light stays on: For the GCO2D, if it remains lit for more than 20 seconds after three ignition trials, turn the oven off for 5 minutes, check that gas valves are open and check the electrical power source and connections. Contact a Vulcan service representative if it still fails to ignite.
Applications
The manual's cooking guidance and examples include macaroni and cheese, cheese sandwiches, baked potatoes, stuffed peppers, scalloped potatoes and lasagna. These examples illustrate the kinds of baked and roasted foods that can be cooked in the oven; the manual treats its listed temperatures and times as suggestions. For a new product, check doneness during the first cook and record the settings that work for the kitchen's recipe and portions.
