About the Vulcan Hart MSA36
Overview
The Vulcan Hart MSA36 is a heavy-duty, natural-gas countertop griddle for commercial kitchens. Its 36-inch cooking width and 24-inch-deep plate provide a broad surface for cooking menu items such as burgers, eggs, breakfast meats, sandwiches and vegetables. Three independently controlled cooking zones let operators set heat across the plate for different foods or stages of service.
The MSA series uses mechanical snap-action thermostats and standing pilots that are lit manually. Unlike the 900RX models described in the service manual, the MSA36 does not use that series’ electric spark-ignition system. A supervised pilot safety valve protects the burners: if a pilot goes out or the gas supply is interrupted, the valve shuts off gas to the pilot and main burners.
Key Features
- Thermostatic zone control: An embedded mechanical snap-action thermostat controls each 12-inch section of griddle width.
- Commercial cooking power: Three U-shaped aluminized steel burners provide 27,000 BTU/hr per 12-inch section, for 81,000 BTU/hr total.
- Thick polished steel plate: The 1-inch-thick plate is 24 inches deep; a 30-inch-deep plate is available for other configurations in the MSA series.
- Manual pilot ignition: The MSA has standing pilots that must be lit manually. A pilot serves two burners through a flame tube between them.
- Pilot safety system: A supervised pilot safety valve is provided for every two burners. It shuts off gas to the pilot and burners if the pilot extinguishes or gas supply is interrupted.
- Welded grease management: The grease chute is fully welded to help stop grease migration, and the unit has a 3½-inch-wide stainless steel grease trough.
- Cool bull nose: The front bull nose is specified to remain cool to the touch during operation.
- Listed certifications: The product information identifies the griddle as NSF Certified, CSA Design Certified and CSA Blue Flame Certified.

Installation & Requirements
The MSA36 requires a natural-gas connection through its ¾-inch rear inlet. The service manual states that the supplied gas pressure regulator must be mounted externally, as close to the griddle on the gas supply line as possible. Orient the regulator arrow in the direction of gas flow and position it with the vent plug and adjustment screw upright. The manual specifies 4 inches water column manifold pressure for natural gas while all burners are operating, and upstream supply pressure of 7–9 inches water column. It also states the griddle must not be connected to supply pressure greater than ½ psig (3.45 kPa) or 14 inches water column.
The griddle must be level from side to side and front to back during operation. The service manual warns that poor leveling can cause uneven temperature distribution, cold spots and possible equipment damage. The provided product information does not state a required electrical connection for the MSA36; the service manual distinguishes its manually lit standing pilots from the 900RX electric ignition system. The supplied material does not give clearance measurements.
Operation
The MSA36 has standing pilots that require manual lighting. The service manual explains that its BASO pilot safety valves must be pressed to allow gas to feed the pilot burner. Each pilot serves two burners through a flame tube. If a pilot goes out, the safety valve shuts off gas to the pilot and main burners. The manual identifies the MSA as a manual-ignition model; the momentary electric ignition switch described for 900RX models does not apply to the MSA36.
Set each snap-action thermostat to control its 12-inch cooking section. The service manual gives a thermostat adjustment range of 200°F to 550°F. For a temperature check, it describes stabilizing the griddle at the selected set point and comparing plate temperature readings over three cycles; the stated calibration tolerance is ±15°F. Keep the unit level during operation for even temperature distribution.
Cleaning & Maintenance
The service manual refers operators to the Installation & Operation Manual supplied with the griddle for detailed cleaning procedures; those step-by-step procedures are not included in the available manual text. The service manual identifies the plate, grease system and flue area as components that may require attention, and notes that the back panel must be removed by a qualified service person when changing a burner or removing excessive grease build-up from the flue area.
For service work, the manual calls for shutting off gas and following lockout/tagout procedures. Any gas joints disturbed during service must be checked for leaks with a soap-and-water solution; do not use an open flame. The manual also states that burner flames should have no yellow tips after adjustment of the burner’s primary-air shutter. Thermostat calibration and gas-pressure checks are service procedures, not routine operator adjustments. The service manual warns never to adjust the screw in the centre of the thermostat shaft, as this can ruin factory calibration and require thermostat replacement.
Troubleshooting
The following possible causes are drawn from the Vulcan service manual. Gas-system diagnosis and repairs should be handled by a qualified service technician.
- Pilot will not light: Check for a closed gas supply, insufficient gas pressure, air in the gas line, a pilot adjustment that does not allow enough gas, an obstructed pilot orifice or a malfunctioning safety valve.
- Pilot lights but will not stay lit: The manual lists airflow affecting the pilot, air in the gas line, insufficient pilot flow, a thermocouple that is not sufficiently immersed in the flame or has failed, an obstructed pilot orifice, low gas pressure or a faulty safety valve.
- Burners light but will not remain lit: Possible causes include incorrect or fluctuating gas pressure, an obstructed flue, an obstructed or incorrectly aligned or spaced orifice, or a burner malfunction.
- One or more burners have a lower flame than the others: The manual advises checking gas pressure, external airflow around the affected burners, the burner orifice and the burner air-shutter adjustment.
- Delayed burner ignition: The service manual lists gas pressure, burner seating, alignment of burner ignition ports with the pilot flash tube and pilot burner, an obstructed or incorrectly positioned orifice, burner-shutter adjustment and pilot-flame adjustment as checks.
- Heat is too high, too low or does not come on: Possible causes include a thermostat needing calibration or having failed, incorrect gas pressure, a missing or malfunctioning regulator, incorrect gas type, an obstructed or incorrect orifice, or an unlit pilot.
Applications
The MSA36 suits commercial kitchens that need a natural-gas griddle with multiple thermostatically controlled zones. Its broad plate can support busy breakfast, lunch or dinner service, including cooking eggs and breakfast meats alongside burgers, sandwiches or vegetables. Separate 12-inch control sections give operators a way to manage different foods across the plate without relying on a single control for the full cooking width.
