About the Vulcan Hart V24
Overview
The Vulcan Hart V24 is included in Vulcan-Hart’s V Series medium-duty gas restaurant range documentation. Its installation and operation manual covers gas supply preparation, pilot lighting, oven operation and cleaning. The parts catalog identifies V24-specific components, including an oven door assembly, a standard-oven rack and a drip-pan assembly. The catalog also contains griddle-body parts information; it does not establish that every V24 has the same cooking-surface configuration.
The manual describes the range as equipment requiring appropriate installation, use and maintenance for satisfactory performance. It states that qualified personnel should install gas equipment and perform initial field start-up and adjustments.
Key Features
- Gas operation: The manual addresses natural-gas and propane supplies and gives regulator settings for both.
- Open-top burners and pilots: The lighting instructions cover open-top burner pilots and explain nightly and complete shutdown.
- Oven operation: The manual includes standard-oven pilot-lighting instructions, rack guidance and cooking recommendations.
- V24 parts identification: The parts catalog lists a V24 oven door assembly, a 24-inch standard-oven rack and a V24 drip-pan assembly.

Installation & Requirements
Before installation
After unpacking, inspect the range for shipping damage. The manual instructs operators to retain the packaging and contact the carrier within 15 days of delivery if damage is found. Remove shipping wire and wood blocking, then check the rating plate inside the lower kick panel. The gas supply must match the type specified on that plate. The manual also says to check electrical service for convection-oven series ranges; it does not provide an electrical specification for the V24 in the supplied material.
Location and air supply
Keep the equipment area clear of combustible substances. Allow the listed clearances from surrounding construction and at the front of the range. The installation location must leave room for servicing and operation. Do not obstruct the flow of combustion or ventilation air, and provide adequate room air for gas combustion and adequate clearance at the combustion-chamber air openings.
Gas connection and regulator
Before lighting, check gas-supply joints for leaks with a soap-and-water solution; the manual expressly says not to use an open flame. After checking the piping, purge gas-receiving lines fully. It also cautions against overtightening the thermocouple: tighten it one-quarter turn past finger-tight.
Operation
Open-top burner pilots
Turn on the main gas supply and wait 30 seconds before lighting the open-top pilot with a taper. If it does not light, turn off the main gas supply, wait 5 minutes and repeat the procedure. Turn one open-top burner valve on to clear air from the line, then turn it off when gas begins to flow. For nightly shutdown, turn the burner valve off; the pilot remains lit. For complete shutdown, turn the burner valve off and turn off the main gas supply. The manual gives similar pilot-lighting and shutdown instructions for hot-top and griddle-top burners where those sections apply.
Standard oven
Light the open-top or griddle pilots before lighting the oven pilot. The manual’s standard-oven procedure begins with the thermostat in the OFF position and a 5-minute wait. Remove the lower panel, depress the red safety-valve button and light the pilot through the observation area. Hold the button down for at least 30 seconds; when released, the pilot should remain lit. Replace the lower panel and set the thermostat to the desired temperature. If the pilot goes out, repeat the procedure. For nightly shutdown, turn the oven thermostat off. For complete shutdown, turn the thermostat off and turn off the main gas supply.
The standard oven has two rack positions and is supplied with one rack. For cakes and pastries, the manual recommends using one rack position. Rack placement otherwise depends on the operator’s cooking needs. For a large roast, it says the rack may be removed and the roasting pan placed directly on the oven bottom. To clear odors that may remain after initial operation, the manual recommends running the unloaded oven at 500°F (260°C) for 30 to 45 minutes.
Cleaning & Maintenance
The manual warns that the range and its parts are hot during operation, cleaning and servicing. Let hot components cool before handling them. Empty the broiler grease pan or trough daily or as needed; the manual recommends emptying it when it is three-quarters full and cautions operators to remove it slowly because liquid may move inside. Wash the drip shield, grids and grease pan or trough with a mild grease-dissolving solution. Regularly scrub the broiler chamber and body front to reduce smoking.
Clean cast-iron open-top grates with mild soap and water, rinse thoroughly and dry with a clean, absorbent towel. With the grates removed, apply a light coating of liquid vegetable oil or spray-type cooking oil. Replace the grates, turn the open-top sections to LOW and let them burn for at least 15 minutes before placing pots or pans on them. The manual says to season the grates after each cleaning to help prevent rust. Weekly, boil burners in a washing-soda solution, then rinse and dry them thoroughly. When reinstalling burner heads, ensure they are properly connected. Do not light a pilot or turn on a burner valve with a burner head removed.
For a griddle-equipped configuration, the manual says to clean the surface after use with a wire brush or flexible spatula. Clean the backsplash, sides and front daily, and empty and wash the grease pan. While the surface is warm, clean with a griddle stone, wire brush or steel wool, working with the grain of the metal. If detergent is used, remove it thoroughly and apply a thin film of oil to help prevent rust and sticking. For an extended shutdown, the manual recommends a heavier coat of grease on the plate. Check the vent for obstructions when cool every six months.
Applications
The manual’s operating and cooking guidance covers open-top burner cooking as well as standard-oven baking, roasting, broiling and reheating. It includes temperature and timing guidance for products such as cakes, breads, pies, cookies, chicken, fish portions, baked potatoes and prepared foods. Actual cooking results depend on the food, load and operating conditions; use the manual’s relevant cooking tables as a starting point.
