About the Vulcan Hart V60
Overview
The Vulcan Hart V60 is a 60-inch gas restaurant range in Vulcan-Hart’s V Series medium-duty range family. Product information identifies it as a 10-burner gas range, with the burner specification listed as 28,000 BTU per burner. The V Series installation and operation manual includes instructions for the gas range and oven, including pilot lighting, shutdown, cleaning and maintenance. The model’s exact gas type must match the rating plate on the range.
The V Series documentation also lists related models V24, V36, V36F, V60F and V260. Those are separate models; confirm that a manual instruction or replacement part applies to the V60 before using it for another version.
Key Features
- Ten-burner cooking top: Product information identifies the V60 as a 10-burner range and lists the burners at 28,000 BTU each.
- Gas oven: The V Series parts catalog includes gas oven components, and the manual provides oven pilot and operating instructions.

Installation & Requirements
The manual states that the range must be installed by personnel qualified to install gas equipment, who should perform the initial field start-up and adjustments. Before installation, check the range rating plate, located inside the lower kick panel, to confirm the required fuel. The gas supply must agree with the rating plate; do not proceed if it does not. The manual also calls for checking the electrical service on convection-oven series ranges. Confirm the V60’s actual configuration and rating plate rather than assuming an electrical requirement.
Keep the equipment area free of combustible substances and provide the stated clearances: 12 inches at the sides and 10 inches at the rear from combustible construction, or 0 inches at the sides and 6 inches at the rear from non-combustible construction. Allow at least 40 inches at the front for service. The location must permit adequate service access and must not obstruct combustion or ventilation air. The manual emphasizes that the room needs an adequate air supply for burner combustion and that the air openings into the combustion chamber must remain clear.
The stated gas connection is a 3/4-inch, 14 FPT ANSI Schedule 40 standard pipe. The manual requires clean, unobstructed gas piping and a gas shutoff valve in the line ahead of the range. The range is factory-equipped for the fuel type shown on its rating plate. The pressure regulator must match that fuel type. The manual notes that the regulator is not factory installed and must be installed in the field by a qualified installer. It gives preset regulator values of 4 inches water column for natural gas and 10.0 inches water column for propane.
For regulator installation, the manual instructs the installer to connect it at the rear gas pipe with its arrow pointing toward the range body, secure it upright, and mount it horizontally to maintain the preset outlet pressure. Do not obstruct the regulator’s leak limiter. Before lighting, check gas-line joints for leaks with a soap-and-water solution; the manual expressly warns not to use an open flame. Purge gas piping of air after leak checks. If supply pressure exceeds 1/2 psig (3.45 kPa), the range and its individual shutoff valve must be disconnected from the gas supply piping system. At 1/2 psig or less, isolate the range by closing its individual manual shutoff valve until start-up.
Level the range by checking across the oven rack in both directions. The manual says adjustable leg inserts can be adjusted as needed. Casters are non-adjustable, so the floor must be level when the range is installed on casters. The manual warns that an uneven floor can cause cooking problems. Follow applicable local requirements for the installation; the cited manual’s specific code references are for the United States.
Operation
Open-top, hot-top and griddle pilots
The manual describes pilot lighting for open-top burners and, where fitted, hot-top or griddle-top burners. Turn on the main gas supply, wait 30 seconds, and light the pilot with a taper. If a pilot does not light, turn off the main gas supply, wait five minutes and repeat the procedure. Once lit, turn a burner valve on to clear air from the gas line, then turn it off when gas begins to flow. For nightly shutdown, turn the burner valve off; the pilot remains lit. For complete shutdown, turn the burner valve off and then turn off the main gas supply. The manual says pilot adjustment procedures are for an authorized Vulcan-Hart installation or service person.
Oven pilot and shutdown
For the standard oven, the manual says to light the open-top or griddle pilots before lighting the oven pilot. Set the thermostat to OFF and wait five minutes. Remove the lower panel, depress the red button on the safety valve and light the pilot through the observation area. Hold the button down for at least 30 seconds; when released, the pilot should remain lit. Replace the lower panel and set the thermostat to the desired temperature. If the pilot goes out, repeat the procedure. For nightly shutdown, turn the oven thermostat OFF. For complete shutdown, turn the thermostat OFF and turn off the main gas supply.
The standard oven has two rack positions and is supplied with one rack, according to the manual. It recommends using one rack position for cakes and pastries, while rack selection depends on the cooking task. For a large roast, the manual says the rack may be removed and the roasting pan placed directly on the oven bottom. The manual also includes approximate baking and broiling guidance; actual results depend on the food and load.
Cleaning & Maintenance
The manual warns that the range and its parts are hot and calls for care during operation, cleaning and service. For open-top cast-iron grates, it instructs operators to wash with mild soap and water, rinse thoroughly and dry with a clean, water-absorbent towel. While the grates are removed and still dry, apply a light coating of liquid vegetable oil or spray-type cooking oil. After replacing them, turn all open-top sections to LOW and let them burn for at least 15 minutes before placing pots or pans on the range. The manual recommends seasoning the grates after each cleaning to help prevent rust.
For weekly burner cleaning, the manual says to boil burners in a washing-soda solution, rinse them and dry the parts thoroughly. It notes that flash rust may occur and says this is normal and does not affect product performance. When reinstalling a burner, make sure the burner head is properly connected. Do not light the pilot or turn the burner valve on while the burner head is removed.
Where a griddle section is fitted, clean it after use with a wire brush or flexible spatula. Clean the backsplash, sides and front daily, and remove, empty and wash the grease pan. Clean the griddle surface while warm, working with the grain of the metal. A detergent may be used, but remove it thoroughly and apply a thin film of oil afterward to help prevent rust and sticking. If the griddle will be shut down for an extended period, the manual recommends applying a heavier coat of grease to the plate. These instructions apply to a griddle section where present.
For the oven, the manual notes that manufacturing odors may be cleared by running it unloaded at 500°F (260°C) for 30 to 45 minutes. Empty the broiler grease pan or trough daily or as needed, and whenever it is three-quarters full; remove it slowly and take care with hot liquid. Wash the drip shield, grids and grease pan or trough with a mild grease-dissolving solution. The manual recommends frequent cleaning of the broiler chamber and body front to reduce smoking. When cool, check the vent every six months for obstructions.
Troubleshooting
- A top-section pilot fails to light: Turn the main gas supply OFF, wait five minutes, then repeat the lighting procedure. If it lights but a burner does not receive gas, the manual directs the operator to turn a burner valve on to clear air from the line and turn it off when gas begins to flow.
- The oven pilot will not remain lit: Follow the standard oven lighting sequence, including holding the safety-valve button down for at least 30 seconds. If the pilot becomes extinguished, the manual says to repeat the procedure.
- Burner performance is affected after cleaning: Check that the burner head is properly connected after reinstallation. Do not operate the burner with its head removed.
- Cooking problems on a range with casters: The manual identifies an uneven floor as a possible cause and states that casters are non-adjustable; the floor must be level.
- Gas odor or suspected leak during setup: Do not use an open flame to check joints. The manual specifies a soap-and-water leak check before lighting. Gas installation and pilot adjustments should be handled by qualified personnel.
Applications
The V60’s listed 10-burner top and gas oven support commercial cookline tasks that call for several burner positions alongside oven cooking. The manual’s operating guidance covers burner and pilot use, baking, oven broiling and reheating prepared foods. It also provides oven guidance for items such as cakes, breads, pies, casseroles and baked potatoes. Use the manual’s approximate times and temperatures as starting guidance for the food and load being prepared, and select rack positions according to the cooking task.
