About the Vulcan Hart VC4GC
Overview
The Vulcan Hart VC4GC is a single-deck, full-size gas convection oven for commercial kitchens. Gas supplies the oven heat, while electricity powers its controls and components. The computer controls provide digital time and temperature readouts, a 99-hour timer with audible alarm, and a roast-and-hold cycle. The oven has five nickel-plated racks and eleven rack positions, giving operators options for arranging pans and batches.
Specifications in the supplied material are not entirely consistent across document revisions and product listings. The manufacturer specification sheet lists the overall dimensions as 40 inches wide by 42 1/4 inches deep by 56 3/4 inches high (depth including door handles). Check the unit’s data plate and applicable current documentation when confirming a tight installation fit.
Key Features
- Gas convection heat: A 44,000 BTU burner heats the oven. A two-speed, 1/2 HP blower-motor circulates heated air through the cavity.
- Computer controls: Digital time and temperature readouts, a 99-hour timer with audible alarm, and a roast-and-hold cycle are specified for the VC4GC. The manufacturer specification sheet also describes six preset menu selections and shelf identification programming.
- Rack capacity: Five nickel-plated oven racks are included. The rack guides provide eleven rack positions and positive rack stops.
- Commercial construction: The front, top and sides are stainless steel. The interior is porcelain enamel on steel. Insulation is specified at the top, rear, sides, bottom and doors.
- Doors and visibility: Two independently operated stainless steel doors have double-pane windows. Two interior oven lights help operators view the cavity.
- Cooling features: An oven-cool switch supports rapid cool-down.
- Certifications listed: Product information identifies CSA design certification and NSF listed.

Installation & Requirements
The oven’s gas inlet is at the rear. The installation manual specifies a gas supply line at least equivalent to 3/4-inch iron pipe and requires a gas shutoff valve in the line ahead of the oven. The manual states that standard electronic-ignition ovens have a regulator integrated with the gas solenoid valve and do not require an external regulator. It also directs installers to specify the gas type and altitude when ordering; the manufacturer sheet specifies altitude when above 2,000 ft.
Before lighting, check gas joints with a soap-and-water solution, not an open flame. The manual directs installers to check joints before the gas valve before lighting and joints beyond the valve after the unit is lit, then purge gas piping to remove air. If supply pressure exceeds 1/2 psig, the oven and its individual shutoff valve must be disconnected from the gas supply piping system. At 1/2 psig or less, isolate the oven by closing its individual manual shutoff valve. Gas work and installation must follow the appliance manual and applicable local requirements.
The VC series electrical specification is 120 V, 60 Hz, single phase, with a cord and plug supplied as standard. The manual calls for connection to a properly grounded three-prong receptacle and warns not to remove the grounding prong. Electrical and grounding connections must comply with applicable electrical codes.
Do not obstruct the flue at the rear of the oven. The installation manual recommends that flue gases be ventilated outside the building through a ventilation system installed by qualified personnel. The clearances listed in the specifications section are from the manufacturer’s VC4G series specification sheet.
Operation
The VC4GC’s computer controls display time and temperature digitally. Product information specifies a 99-hour timer with audible alarm and a roast-and-hold cycle. The manufacturer sheet describes preset menu selections and shelf identification programming. The oven also has a two-speed blower, interior light switch and oven-cool switch; the manual identifies the cool switch as a way to run the fan with the doors ajar to speed cooling.
The manual’s suggested cooking guidance includes examples for cakes, casseroles, roasted meats, poultry, frozen foods and pizzas. Its tables are examples rather than guaranteed settings; the manual says cooking temperatures, times and rack counts should be adapted to recipes, ingredients, installation and preference. For roasting, it suggests placing a 12 x 20 x 1 in. pan of water in the oven to add moisture and reduce product drying, replenishing it as needed.
Cleaning & Maintenance
Before cleaning, the manual directs operators to disconnect electrical power and follow lockout/tagout procedures. Allow the oven to cool before cleaning. The rear-cavity heat-circulation tube, called the snorkel in the manual, must not be blocked and must remain clear. The supplied manual excerpt does not specify cleaning chemicals or a maintenance interval, so follow the complete manual for cleaning procedures applicable to the unit.
Troubleshooting
- Uneven browning or overcooked edges: The manual lists an oven that is too hot or too many racks in use as possible causes. Its suggested actions are to reduce the temperature setting or use fewer racks to improve circulation.
- Uneven results or product movement: The manual advises checking that racks are level side to side and front to back, with the front 1/8 in. lower than the rear. It also identifies warped sheet pans as a possible cause and recommends separating pans used for batter from general-purpose pans.
- Excessive drying or shrinkage during roasting: The manual identifies failure to maintain water in the oven or a roasting temperature that is too high. It suggests placing a 12 x 20 x 1 in. pan of water in the bottom of the oven and reducing the temperature.
- No gas supply: The manual’s troubleshooting table directs operators to check that gas supply valves are open. It also says to turn the oven off for five minutes before attempting to relight.
- Ignition indication remains lit: The manual identifies an ignition light remaining on for more than 20 seconds after three trials as an issue requiring attention. For service or ignition-system diagnosis, use a qualified service representative; the service manual is prepared for trained service technicians.
Applications
The VC4GC suits commercial kitchens that need a full-size gas convection oven for repeated batches of baked goods, casseroles, roasted meats, poultry, frozen products or pizzas. Its five racks and eleven rack positions support different loading arrangements; adjust rack count, temperature and time to the product and recipe rather than treating the manual’s sample cooking tables as fixed settings.
