About the Vulcan Hart VC6EC
Overview
The Vulcan Hart VC6EC is a single-deck, full-size electric convection oven with bakery depth and computer controls. Its cavity accommodates full-size pans in front-to-back or side-to-side configurations. The control display shows temperature and timer settings, and the oven includes a 99-hour timer with an audible alarm, up to 100 programmable menu settings and a roast-and-hold cycle.
For kitchen teams preparing repeat batches, menu programming can store common cooking settings, while the timer provides a clear end-of-cycle alert. Five adjustable racks and 11 rack positions provide flexibility for baking trays and other oven loads.

Installation & Requirements
Before installation, verify that the available electrical service matches the oven data plate, located inside the top front cover. The manual directs installers to follow the wiring diagram inside the right side panel and connect the supply conduit at the bottom of the oven. Electrical and grounding connections must comply with applicable electrical and local codes. For Canadian installations, the manual specifies local codes, the Canadian Electrical Code, CSA C22.2 No. 1, and the Canadian standard for commercial cooking equipment, CSA C22.2 No. 109.
Install the basic oven on legs or a modular stand. The manual cautions against a concrete base or other support that restricts airflow beneath the oven, as this may void the warranty. Level the oven so its racks are level in the final position. For digitally controlled models, the manual calls for 18 in. (45 cm) of clearance on the right side from any open flame. Keep the rear air intake slots and holes clear; the manual warns that blocked intakes may lead to component failure. Check the flue periodically when the oven is cool to ensure it is unobstructed.
Operation
Use the computer controls to set cooking temperature and time or select a programmed menu setting. The VC6EC has a temperature and timer readout, and its 99-hour timer sounds an audible alert when cooking time is complete. The roast-and-hold cycle is standard. The manual’s contents identify separate instructions for manually setting temperature and cook time, programming menu items and rack-number cook times, and setting roast and hold; follow the supplied operating manual for the control sequence.
The VC series manual describes a two-speed blower and advises that forced-air cooking is faster than cooking in a conventional oven, so overcooking can occur if established recipes are not adjusted. For VC6EC and VC6ED models, the manual recommends placing pans horizontally in the centre of the oven rack and reducing the suggested cooking temperature by 50°F for a more even bake. Make recipe adjustments based on the results achieved in the oven.
After a power outage, the oven shuts down and resumes normal operation when power returns. If it is to be left unattended during an outage, the manual says to turn the master switch off. Once power is restored, turn the switch on, allow the oven to preheat, and then resume cooking.
Cleaning & Maintenance
Disconnect the electrical supply and place a tag at the disconnect switch before cleaning, as directed in the manual. The oven and its parts can be hot; use care during operation, cleaning and maintenance. Clean the exterior daily with a clean, damp cloth. Clean the porcelain interior daily using soap or detergent and water, rinse thoroughly, and dry with a soft, clean cloth.
Troubleshooting
If the oven does not heat, first consider the operating conditions identified in the service manual: the oven must be connected to the correct voltage, the power switch must be on, the temperature control must call for heat, the high-limit thermostat must be closed, and the doors must be closed for the cook cycle. A supply voltage that does not match the data plate can also prevent proper operation.
The service manual’s heating-element test directs a technician to check voltage at the element terminals against the data-plate voltage. If voltage is incorrect, the source of the supply problem must be found. If voltage is correct, the technician checks current draw; an incorrect draw can indicate a malfunctioning element. The manual also describes testing the temperature control’s supply and relay input/output, and checking the temperature probe and its connections. These checks involve electrical measurements and internal components. The service manual is intended for trained Hobart service technicians, and it directs technicians to disconnect power and follow lockout/tagout procedures for applicable work. Use a qualified service technician for internal diagnosis and repair.
Applications
The VC6EC’s bakery-depth cavity, adjustable racks, programmable menu settings and roast-and-hold function suit commercial kitchens producing baked goods, roasting menu items or preparing repeat batches. The manual’s sample cooking chart includes bakery products such as croissants, bread loaves, sheet cake, scones, muffins, rolls, Danish rounds and cookies. Full-size pan capacity and multiple rack positions support kitchens that need to organize different products across oven loads.
