About the Vulcan Hart VC6ED
Overview
The Vulcan Hart VC6ED is a full-size, single-deck electric convection oven in bakery depth. Its solid-state temperature control and circulating-air blower suit kitchens that bake or roast multiple pans during service. The oven is listed with a 60-minute timer, a stainless steel front, top and sides, a windowed stainless steel door, and a porcelain oven interior. Independently opening doors are standard in the product-family manual.
Convection cooking moves heat across the product surface, so cooking can be faster than in a conventional oven and overcooking is more common. The operating manual notes that the oven can cook full or partial loads at standard recipe temperatures. It also advises recording preferred convection cooking times and control settings once they have been established for a product.
Key Features
- Solid-state temperature control: The VC6ED is the D-control model in the VC6E family; the service manual identifies it as using solid-state temperature control.
- Convection blower: A two-speed, 1/2 HP blower motor circulates air through the oven cavity.
- Timer: The product listing specifies a 60-minute timer.
- Five racks: The electric convection oven manual states that the oven is furnished with five racks.
- Door and exterior: The product listing describes a stainless steel door with a window and stainless steel front, top and sides. The manual states that independently opening doors are standard.
- Interior: Porcelain is the standard interior described in the manual; a stainless steel oven interior is optional.
- Oven lights: The manual lists oven lights with an on-off switch as standard equipment.

Installation & Requirements
Before installation, compare the available electrical service with the oven data plate, located inside the top front cover. The VC6ED family is documented for 208, 240 and 480 V, 60 Hz service, with single- and three-phase configurations. The 12.5 kW oven’s nominal current and recommended circuit protection depend on voltage and phase, as listed above. Electrical and grounding connections must comply with applicable local requirements. The manual specifies the Canadian Electrical Code, CSA Standard C22.2 No. 1, and the Canadian standard for commercial cooking equipment, CSA Standard C22.2 No. 109, for Canadian installations.
The electrical connection instructions call for removing the wiring-compartment cover at the front of the oven, routing the supply conduit through the appropriate knockout in the bottom, and making connections according to the wiring diagram inside the right side panel. Replace the wiring-compartment cover and side panel after making the connection. The manual instructs installers to disconnect electrical power and tag the disconnect before working on the circuit.
Install the basic oven on legs or a modular stand. The manual cautions against a concrete base or another support that restricts air circulation underneath the oven. Level the legs so the racks are level in the final position. For this solid-state model, the manual specifies 18 in. of clearance on the right side from any open flame. It also calls for adequate access for servicing and proper operation. In Canada, follow local codes and the cited Canadian electrical and commercial cooking equipment standards.
Operation
The manual’s control information identifies a master switch with ON, OFF and COOL DOWN positions, a temperature control, a timer, a two-speed fan selection and an oven-light switch. Set the controls for the desired cooking temperature and time; the solid-state control monitors the oven temperature and cycles the heating system. The fan speed can be selected for operation, while the light switch controls the oven lights. Allow the oven to preheat before resuming cooking after a power outage. The manual says the oven shuts down during an outage and resumes normal operation when power returns; if it is to be left unattended, move the master switch to OFF and return it to ON after power is restored and the oven has preheated.
Forced-air convection cooks faster than conventional oven cooking, so check products to avoid overcooking. The manual notes that thicker or more massive products take longer to absorb enough heat, even with convection. The oven can be used with full or partial loads at standard recipe temperatures; the manual suggests that an operator may adjust a recipe temperature by up to 25°F above or below to achieve the preferred result.
The manual’s sample chart includes frozen croissant dough at 350°F for 25 minutes, small bread loaves at 350°F for 30 minutes, an 18 × 26 in. sheet cake at 300°F for 25 minutes, cookies at 325°F for 16 minutes, and a tray of Kaiser rolls at 350°F for 16 minutes. For roasting, it gives 225–325°F as a suggested range for beef, lamb, poultry and ham, and 325°F for fresh pork. It describes placing a pan of water in the oven to supply humidity and reduce shrinkage. These are reference examples; actual results depend on the product and load.
Cleaning & Maintenance
Disconnect the electrical supply and tag the disconnect before cleaning, as directed in the manual. Clean the outside daily with a clean, damp cloth. Clean the porcelain oven interior daily with soap or detergent and water, rinse thoroughly, and dry with a soft, clean cloth. For an optional stainless steel interior, routine cleaning can be done with soap or detergent and water. For resistant burned-on food, grease or heat tint, the manual permits an abrasive cleanser mixed into a paste, applied with stainless steel wool or a sponge while rubbing with the grain. Rinse with clear water and dry with a soft cloth.
Wait for the oven doors to cool before washing. The manual warns that splashing or submerging hot doors in water may cause the glass to shatter. Periodically check the flue when the oven is cool to ensure it is unobstructed. Keep the rear air intake slots and holes clear and clean them regularly with a damp cloth; the manual warns that failure to keep the rear air intakes clear may lead to component failure. The fan motor has sealed bearings and requires no lubrication.
For lamp replacement, the manual directs the operator to let the oven cool and remove the racks. For a side-mounted lamp, remove the right rack guide, pry off the glass cover with a flat tool under its bottom lip, replace the bulb while wearing gloves, and reinstall the cover, rack guide and racks. The manual also describes unscrewing the glass dome from the light body to replace a rear-mounted lamp, then reassembling it and the racks.
Troubleshooting
The service manual is intended for trained service technicians and warns that it is not for unqualified personnel. Electrical testing can expose technicians to hazardous voltage; the manual calls for disconnecting all circuits and following lockout/tagout procedures before service work. If the oven does not heat correctly, the service manual’s diagnostic material directs a technician to check the temperature-control circuit, temperature probe and heating elements using the procedures and electrical diagram for the oven’s voltage and serial-number range. The manual provides a temperature-probe resistance table with values specified at selected temperatures and a ±10% tolerance; probe testing and replacement should be handled by a qualified technician.
For heating-element diagnosis, the service manual describes checking element voltage against the data plate and, when possible, checking current draw. It provides nominal side-mounted element values of 2 kW per element: at 208 V, 9.6 A and 21.6 ohms; at 240 V, 8.3 A and 28.8 ohms; and at 480 V, 4.1 A and 115.2 ohms. These are service checks, not operating instructions for kitchen staff. If the oven has an unresolved fault, consult the model’s service information and a qualified commercial-equipment technician.
Applications
The VC6ED is suited to commercial kitchens that need convection baking and roasting in a full-size, bakery-depth cavity. The manual’s examples include breads, croissants, rolls, cakes, scones and cookies, as well as roasting beef, lamb, poultry, ham and pork. Its five racks and full- or partial-load guidance make it applicable to production baking and routine hot-line cooking where recipes can be adjusted and verified for convection performance.
