About the Baxter BV400G
Overview
The Baxter BV400G VersaOven is a single-chamber, natural gas commercial oven for bakery and high-volume kitchen production. It brings convection, steam and rotisserie-style cooking together in one oven. A rotating interior rack moves product during cooking, while the self-contained steam system supplies steam for cooking and baking. The unit has programmable touch-screen controls and a USB port.
According to the operation manual, the BV400G can hold forty chickens weighing 3–4 lb each, ten standard 18 × 26-inch pans, or five 12 × 20 × 2.5-inch steam pans. The product description also lists capacity for twenty 13 × 18-inch pans and thirty 12 × 7 × 2.5-inch steam pans. Capacity varies with the pan or product configuration.
Key Features
- Versatile cooking: The VersaOven combines convection, steam and rotisserie-style cooking for baking, cooking and steaming.
- Rotating rack: A mechanism in the oven ceiling rotates the interior rack during cooking.
- Self-contained steam system: The patented system generates steam for oven cooking and baking.
- Programmable controls: The touch-screen controller supports recipe setup and saved recipes, with a USB port.
- Automated washing: Short and long wash options support cleaning without relying solely on manual interior cleaning. The manual specifies a 30-minute short wash and a two-hour long wash.
- Grease collection: A gravity-based separation system uses a valve rather than a pump. Grease collects in two 5-gallon containers stored on a transit trolley below the oven.
- Storage: The oven stand provides storage for additional pans or tools and space for the grease collection system.

Installation & Requirements
The BV400G product information specifies a 1/2-inch gas inlet and a natural gas power type. The operation manual states that the gas burner system is rated at 95,000 BTU/hr for natural or propane gas. Confirm the intended fuel configuration for the unit before connecting it.
Electrical requirements listed for the oven are 120 V, 60 Hz, single phase and 15 A. The installation information specifies a maximum 15-amp dedicated circuit, an 8-foot cord and a NEMA 5-15 plug. The water connection is 3/8-inch FNPT, with cold water at 30–60 psi. The product installation information calls for installation under a Type I exhaust hood. Follow the unit’s installation documentation for connection and installation procedures.
Operation
The touch-screen controller provides Quick Start, Standard Mode, Recipes and Wash options. Quick Start offers a more direct way to enter cooking settings, but recipes created in that mode cannot be saved. Standard Mode provides access to oven features for recipe setup and allows recipes to be saved. The Recipes option provides access to the recipe directory.
Cooking steps can be set by temperature and time. The maximum oven temperature is 525°F (274°C). Steam settings include Constant and Single Shot options. Constant steam can be pulsed through a recipe or step; the manual specifies a maximum pulse length of 10 seconds and a minimum interval of one minute between pulses. Single Shot steam is applied at the beginning of a recipe or step. The rack rotates during cooking.
The grease separation system directs grease by gravity through a valve into two 5-gallon containers. The containers sit on a transit trolley below the oven for removal and disposal or recycling. The manual recommends emptying them daily, with the actual frequency depending on the products cooked.
Cleaning & Maintenance
The BV400G has automatic wash cycles. The short wash takes 30 minutes and is intended for mid-day cleaning needs; the long wash takes two hours and uses 24 gallons of water. The oven cannot be used while a wash cycle is running. Do not open the loading door during a wash, because suspended wash water may exit the oven. If the oven is above 170°F when a wash starts, it enters cooldown; the wash begins after the oven reaches 170°F and the door is closed. The oven shuts down after the wash completes.
Use Ecolab Retail CIP or another approved cleaner for the wash system. The manual warns that unapproved chemicals can cause foaming, dispensing, washing or draining problems and may damage seals or other components. Do not add chemicals beyond the approved, self-dispensed cleaner. The cleaner is caustic: consult its packaging or safety data sheet for protective equipment and handling requirements. If a wash is stopped or an error leaves chemicals in the oven, run the Auto-rinse before using the oven again.
Daily cleaning includes wiping the exterior with a clean, damp cloth, cleaning the inner and outer doors, emptying and cleaning the grease containers, and running an automatic wash cycle. The manual recommends weekly cleaning of the door gasket and side racks. Allow the oven and door glass to cool before cleaning. Use warm, soapy water for the gasket and removable rack sides; the rack sides can be washed in a standard commercial dishwasher.
Clean the filter weekly to help prevent overheating of the electrical compartment, which can shut down the heating system. The oven should not be operated without the filter installed. The filter must be cleaned by hand, not in a dishwasher or other automated cleaner, and must be dry before it is reinstalled. For the wash arm, remove the end plugs with a flathead screwdriver, clear debris from inside and replace the plugs. Disconnect electrical power and follow lockout/tagout procedures before the maintenance tasks for which the manual requires it.
The manual cautions against abrasive or gritty cleaners, bleach, harsh or chlorinated chemicals, steel wool on stainless steel, and spraying the oven with water, steam or a power washer. Take care around probes, sensors and the rotating mechanism.
Troubleshooting
The available manual information instructs operators to disconnect electrical power and follow lockout/tagout procedures before troubleshooting. It also identifies wash-cycle errors as a condition that may leave cleaner in the oven; run Auto-rinse before returning the oven to use. The supplied troubleshooting excerpt does not include a complete list of other problems and corrective actions.
Applications
The BV400G is suited to commercial bakery and foodservice operations that need a single oven for baking, convection cooking, steaming and rotisserie-style batch cooking. Its documented capacities support production of whole chickens, full-size sheet-pan batches and steam-pan loads. The programmable controls and saved-recipe mode support repeatable cooking steps, while the automatic wash functions provide short-cycle cleaning during production and a longer cycle for more thorough washing.
