About the Baxter OV520
Overview
The Baxter OV520 is a full-size rotating rack oven equipped with Smart Touch™ controls. It accommodates a roll-in rack for baking, roasting and steaming applications. During a timed bake or cooking cycle, a mechanism in the oven ceiling lifts and rotates the rack.
The OV520 is available in single- and double-oven configurations, with gas or electric heating. Baxter describes the oven as its most advanced full-size rotating rack oven and lists Precision Airflow and steam capability among its features. Hood configurations include Type I or Type II options; confirm the required hood arrangement when specifying the unit.
Key Features
- Rotating rack: A ceiling mechanism lifts and rotates the roll-in rack during a timed cycle.
- Smart Touch™ control: The control supports baking, roasting and steaming, with recipe and manual operating options described in the operator manual.
- Steam capability: The oven can be used for steaming applications. The manual recommends allowing 30 minutes after preheating for optimum steaming capability.
- Precision Airflow: Listed by Baxter as an OV520 feature.
- Gas or electric heating: Offered in single- and double-oven configurations.
- Hood options: Type I or Type II hood configurations are listed for the OV520.
- Warranty information: The product information lists a 10-year heat exchanger warranty. The operator manual says the oven must receive startup by an authorized Baxter servicer to activate warranty coverage; failing to follow the manual’s use, care, cleaning or maintenance instructions may void a warranty provided by Baxter.

Installation & Requirements
The provided electric OV520 installation instructions state that the oven is UL/CSA listed for zero-inch clearance at the rear and sides. A clearance of 1–4 inches is recommended if a rear drain connection is required. The top of the oven requires at least 24 inches of clearance for service access.
The installation instructions specify a level floor area of at least 85 × 57 inches (depth × width) for a single oven and 104 × 74 inches (depth × width) for a double oven, to accommodate the oven structure and door swing. The floor must be level within a maximum slope of 1/8 inch per foot, with a maximum of 3/4 inch in any direction. Floor anchors require at least 1 inch of solid substrate.
Do not obstruct combustion or ventilation airflow, and keep the area around the oven clear of combustible materials. The room must have sufficient make-up air for combustion. The installation document notes that utility connections are made by others. It calls for electrical connections to be made by an electrician and identifies 120 V control power, high voltage and an externally powered roof exhaust. Refer to the unit’s service-access label and the appropriate installation manual for connection details. The provided electric installation instructions are for qualified, trained service technicians, not unqualified users.
Operation
Starting and preheating
For best results, preheat the oven to baking temperature before loading product. The door must be closed for the oven to heat. Press the POWER button below the user display to turn the oven on; it preheats to the default preheat temperature. The manual says the default temperature can be changed in Client Parameters and that temperature can also be adjusted in Auto or Manual mode. For optimum steaming capability, allow 30 minutes after preheating.
The rack carrier lifts and rotates only during a timed bake. At the end of the previous cycle, it remains in the unload position. If it has been moved from its home position, opening the door returns it to the unload position.
Using the controls
In Auto mode, the manual describes recipe-based operation; in Manual mode, the operator can set cooking parameters. In Classic Manual mode, the temperature display shows the set temperature and can be adjusted with its arrows. The timer display shows the set and remaining time; its arrows adjust the time. Separate controls adjust steam time and fan delay time. The vent button opens or closes the vent. Touch Start to begin a cycle; the Start button is green when the oven is preheated and yellow while it is preheating. Touch Stop to end a cycle in progress.
To add time during a bake or cooking cycle, use the + or − control; the added time applies to the last step. After the cycle ends, touch the time display to add time using the keypad. Touch End to finish a cycle. The Client Parameters screen includes settings for the current date and time, date and time formats, temperature units, default preheat temperature and default operating mode.
Cleaning & Maintenance
Before maintenance, disconnect electrical power and follow lockout/tagout procedures; the manual cautions that there may be multiple circuits. Parts of the oven can be hot, and hot air and steam may escape when the loading door is opened. Open the door slowly and keep clear of the opening.
Cleaning
- Clean the rack as a cooking utensil with warm, soapy water and a brush, then rinse and dry it.
- Use a clean cloth and warm, soapy water to wash the stainless-steel interior; rinse with clear water and dry with a clean cloth.
- Take care around probes, sensors and the rotating mechanism.
- Gently scrape heavy buildup from the door glass. When the oven is cool, remove residue with glass cleaner.
- If equipped, clean hood filters with soap and warm water.
- Do not use oven cleaners or steel wool on stainless-steel surfaces. Do not spray the oven with water or steam, and do not use cleaners containing chlorine.
Maintenance schedule in the operator manual
- As needed: Check that the area around the oven is clear of combustibles and that airflow is unobstructed.
- Daily: Clean the exterior.
- Weekly: Clean the oven interior and remove loose debris, clean the windows, and empty the grease catcher if equipped.
- Monthly: Clean hood filters if equipped.
- Bi-monthly: Perform the owner preventive-maintenance procedure.
- Annually: For gas ovens, check that the flue is free of obstructions.
The manual calls for a regular preventive-maintenance schedule and recommends contacting an authorized Baxter service office for skilled preventive service. It says maintenance needs vary with usage and the operating environment.
Troubleshooting
- The circulation fan runs while the oven is off: The oven may be in Cooling mode. Close the oven door to cancel Cooling mode. If the door was not open, contact a Baxter authorized service office.
- The rack does not lift and rotate: Check whether a bake time has been entered and the timer started. Enter a time and touch Start. If the problem continues, contact a Baxter authorized service office.
- Red error screen: The manual identifies this as a problem that must be fixed before heating or a bake/cook cycle can continue. Turn off power and contact a Baxter authorized servicer.
- Yellow error screen: This indicates a problem, but a cycle may continue with reduced settings. The message can be hidden by tapping the screen and reappears after 10 minutes if the issue persists.
- Green error screen: This is a reminder that a task has not been completed; touch the screen to clear it.
Applications
The OV520 is intended for commercial kitchens and bakery operations that need to bake, roast or steam product in a roll-in rack oven. Its rotating rack supports timed baking and cooking cycles, while the Smart Touch™ control provides manual and recipe-oriented operating options. Gas and electric choices allow the oven to be specified around the kitchen’s available fuel and electrical service.
