About the Frymaster GF14
Overview
The Frymaster GF14 is a standard, floor-model gas fryer with one open frypot and a 40 lb oil capacity. Its 12" x 15" frying area and 100,000 BTU/hr input suit a range of commercial frying tasks. The manufacturer describes the GF series as an all-purpose line for cooking a variety of fried foods with consistent results.
The fryer uses millivolt temperature controls and a pilot ignition system. The millivolt system does not require an electrical connection. The GF14 is intended for professional use; its service manual says installation, maintenance and repairs should be performed by qualified personnel.
Key Features
- Open-pot frypot: The open design makes the frypot accessible for cleaning. The manufacturer notes that the frypot and cold zone can be wiped down by hand.
- Master Jet burner system: Durable metal targets provide a broad heat-transfer area for even heat distribution from the burners to the oil.
- Temperature response: A durable temperature probe senses oil-temperature changes and activates the burner response. The millivolt controls do not need an electrical connection.
- Cold zone and sloped bottom: The deep cold zone and forward-sloping frypot bottom help collect and remove sediment, supporting oil quality and routine cleaning.
- Construction: The manufacturer’s standard specification lists a stainless steel frypot and door with an enamel cabinet. The GF14 specification also lists two twin baskets.
- Legs and caster option: The manufacturer’s sheet lists 6" steel legs with 1" adjustment. Casters are listed as an option; confirm the selected configuration.

Installation & Requirements
The GF14 is a gas appliance. The manufacturer’s specification sheet lists a 1/2" NPT gas inlet and recommends checking plumbing codes for correct supply-line sizing. Its stated recommended minimum supply-line manifold pressure is 6" W.C. for natural gas and 11" W.C. for LP; burner manifold pressure is 3 1/2" W.C. for natural gas or 8 1/4" W.C. for LP. Confirm the fryer’s fuel type and the applicable rating information for the unit being installed.
The millivolt system requires no electrical connection. The specification sheet calls for at least 24" of clearance at the front for servicing and operation, 6" between the fryer’s sides and rear and combustible material, and 18" between the flue outlet and the lower edge of the exhaust hood filters. The service manual says the appliance is for professional use and that a Frymaster/DEAN Factory Authorized Service Center or another qualified professional should perform installation, maintenance and repairs.
Operation
The GF14’s pilot ignition system uses a pilot flame to light the burner and heat the thermopile. The thermopile generates millivolts that operate the gas valve circuit. If the pilot flame goes out, the service manual explains that the gas valve pilot coil loses voltage and the pilot valve closes.
The operating thermostat is adjustable, and the service manual states that it is sensitive to one-degree temperature changes. A separate high-limit thermostat helps prevent overheating if the fryer does not properly control oil temperature; the manual says it opens when exposed to temperatures above 425°F to 450°F. For specific lighting and operating procedures, use the GF14 installation and operation instructions for the unit’s gas configuration.
Cleaning & Maintenance
The open-pot layout allows access to the frypot, including the cold zone. The manufacturer says every inch of the frypot and cold zone can be cleaned and wiped down by hand. The deep cold zone and forward-sloping bottom help collect and remove sediment from the frypot. A clean-out rod and frypot cover appear in the service manual’s accessory list; they are accessories, not a substitute for following the fryer’s cleaning instructions.
Before moving a fryer for service, the service manual gives a specific safety sequence: drain the cooking oil or shortening, shut off and disconnect the gas supply, remove attached restraints, and only then relocate the fryer. After service, reconnect the gas supply, reattach restraints and refill the frypot. The manual warns that moving a fryer containing hot oil or shortening can cause spills or splattering. Installation, maintenance and repairs should be handled by qualified personnel.
Troubleshooting
The GF14/GF40 service manual groups common service issues as pilot failures, improper burner function, improper temperature control and leaks. The checks below are service information, not a substitute for qualified repair. Shut down the fryer and contact a qualified professional when the cause is not clear.
Pilot will not light or stay lit
- If the pilot does not light, the manual lists a closed upstream gas shutoff, an incorrectly connected rear quick-disconnect (if fitted), a blocked pilot orifice, or a fully closed pilot adjustment screw as possible causes.
- If the pilot will not stay lit, the manual describes checking the thermopile output; it says to replace the thermopile if output is below 400 millivolts after the specified test. A failed gas-valve coil is another possible cause if the other checks are satisfactory.
Burner flame or heating problems
- A burner that lights on only one side may have a missing or misaligned rear deflector, or incorrect burner manifold pressure. Gaps in burner firing can result from clogged burner orifices.
- Fluctuating flame intensity can be related to incoming gas pressure or changes in kitchen airflow. Flames rolling out of the fryer can indicate negative kitchen pressure; the manual also lists high burner manifold pressure or an obstructed flue as possible causes.
- An unusually noisy burner, especially with flames visible above the flue opening, can indicate excessive burner gas pressure or a blocked gas-valve vent tube. If pressure is correct and the vent tube is clear, the manual identifies a defective gas-valve regulator as a possible cause.
The service manual recommends checking the fryer’s rating plate and using qualified service personnel for installation, maintenance and repairs. Do not move the fryer while it contains cooking oil or shortening.
Applications
The GF14 is a commercial gas fryer for kitchens preparing a variety of fried foods. Its 40 lb oil capacity, single open frypot and 12" x 15" frying area provide a straightforward floor-model setup for routine menu production. Select the natural-gas or LP configuration that matches the kitchen’s gas supply.
