About the Frymaster MJCF
Overview
The Frymaster MJCF is an atmospheric gas fryer in the Master Jet series. Frymaster describes the MJCF as a fryer for high production of chicken, fish and other breaded products. Its open stainless steel frypot provides a large heat-transfer area, and the deep cold zone helps keep food sediment below the cooking area. The MJ1CF is the single-fryer configuration documented in the product specification; its figures below are for that configuration rather than a claim that every MJCF build has identical specifications.
The MJ1CF uses a thermostat knob and millivolt controls. The manufacturer’s specification states that this configuration requires no electrical connection. MJCF family service documentation also covers fryer versions with other control arrangements, so confirm the exact configuration when identifying equipment or requesting service information.
Key Features
- High-volume frying: Frymaster identifies chicken, fish and other breaded products as intended uses.
- Fast-action temperature sensing: The centerline thermostat senses cold food placed in either basket. The product information says it reacts within 7 to 10 seconds, while the 1°F action anticipates the rate of temperature rise to reduce overshoot and support more uniform cooking.
- Master Jet burner system: The burners provide even heat distribution across the frypot’s heat-transfer area.
- Open-pot construction: The open frypot can be cleaned and wiped down by hand.
- Deep cold zone: The forward-sloping bottom collects sediment away from the cooking area, helping protect oil quality and making routine frypot cleaning easier.
- Stainless steel construction: The documented MJ1CF specification identifies a stainless steel frypot, door and cabinet.
- Millivolt control: The documented MJ1CF has a millivolt controller and does not require an electrical connection.

Installation & Requirements
Use the fryer’s data plate to confirm its gas type before connecting it to the building supply. The MJ1CF product specification lists a ¾ in gas connection and calls for a 1½ in kitchen main manifold gas supply line. It recommends minimum store manifold pressures of 6 in W.C. for natural gas and 11 in W.C. for LP gas; pressure must not exceed 14 in W.C. The manual also lists incoming pressure ranges of 6 to 14 in W.C. for natural gas and 11 to 14 in W.C. for LP. The gas line must be sized to support the fryer’s input.
The MJ1CF specification calls for at least 24 in of clearance at the front for service and operation, 6 in between the sides and rear of the fryer and combustible material, and at least 18 in between the flue outlet and the lower edge of the exhaust hood filter. It also says not to curb-mount the unit. The installation manual stresses effective removal of combustion products and warns that drafts from the kitchen ventilation system can interfere with burner operation. It says not to place the flue opening close to the exhaust fan intake or extend the flue in a chimney-like arrangement, which can affect combustion and recovery.
For gas connection work, the manual directs installers to check piping, fittings and connections for leaks with a soap solution after opening the gas supply. It expressly warns against using matches, candles or another ignition source to check for leaks. The manual’s pressure checks and service procedures are for qualified personnel.
Operation
Follow the installation and operation manual supplied for the fryer’s specific configuration. The MJ1CF is specified with a thermostat knob and millivolt controls. The MJCF service manual describes a pilot system that must be lit manually when the fryer is first put into operation; an optional built-in piezo ignitor may be fitted. The manual describes thermostat-controlled operation as setting the thermostat knob to the required cooking temperature after the pilot is lit. Do not assume that instructions for other MJCF control versions apply to the MJ1CF.
The centerline thermostat senses cold food placed in either basket. Its 1°F action anticipates the temperature rise and reduces overshoot, supporting more uniform cooking and helping extend oil life. The MJCF specification lists two twin baskets as standard for the documented MJ1CF.
Cleaning & Maintenance
The manufacturer describes the open-pot design as easy to clean and suitable for hand wiping. Sediment settles in the deep cold zone, and the forward-sloping bottom helps collect and remove it during routine frypot cleaning. The MJCF manual also provides a boil-out procedure for CF Series gas fryers. It directs operators to drain the oil or shortening into a suitable container, remove food particles and residual oil from the frypot, then close the drain and fill the pot with detergent solution to the bottom oil-level line.
For the manual’s boil-out procedure, set the thermostat to 200°F or use the controller’s boil operation where applicable, and simmer the solution for one hour. The manual warns not to leave the fryer unattended during this process. Switch the fryer off, allow the solution to cool, drain it into a suitable container—not a filter pan or shortening disposal unit—and wipe the frypot. Rinse with clean, cold water and drain; repeat the rinse, then wipe the frypot dry. The manual warns that the frypot must be completely free of water before adding cooking oil or shortening.
For service, Frymaster recommends CFESA Certified Technicians. The service manual warns that moving a fryer containing cooking oil or shortening can spill or splash hot liquid, and directs service personnel to shut off the gas, disconnect the gas supply and unplug power cords where present before relocating a unit for service.
Troubleshooting
The MJCF service manual groups likely problems as pilot or ignition failures, improper burner function, temperature-control problems, computer-related problems, filtration problems and leaks. It is a service document, not a substitute for qualified gas-appliance service. The following are examples of causes it lists:
- Pilot will not light or stay lit: Possible causes include no or insufficient gas supply, a clogged pilot orifice, a pilot flame affected by a kitchen draft, a pilot flame that is too low, or a problem with the pilot generator, high-limit contacts or gas valve pilot magnet.
- Delayed or abnormal burner ignition: The manual lists incorrect or fluctuating gas pressure, a weak or misdirected pilot flame, misaligned or missing burner targets, clogged burner orifices, inadequate make-up air and a blocked vent tube among possible causes. Popping, incomplete lighting or fluctuating flame intensity are symptoms it describes.
- Temperature-control problems: The manual treats improper temperature control as a separate troubleshooting category. Diagnosis involves the thermostat or control system and should be handled using the service procedures for the particular control fitted.
- Leaks: The manual includes leakage as a troubleshooting category. If a gas odour is detected during installation or operation, its installation instructions say to shut off the gas supply at the main shut-off valve and contact the local gas company or an authorized service agency.
The service manual reserves gas-pressure checks and adjustments for qualified service personnel. It identifies low or fluctuating incoming pressure, an undersized supply line and inadequate make-up air as possible contributors to burner and ignition problems.
Applications
The MJCF is suited to commercial kitchens producing fried chicken, fish and other breaded foods in volume. The documented MJ1CF combines an 80 lb oil capacity with a large frying area and a 150,000 BTU/hr input. Its open-pot frypot, dual baskets and sediment-collecting cold zone are practical features for kitchens that need to fry repeated batches and clean the frypot as part of routine operations.
