About the Hobart 6430
Overview
The Hobart 6430 is a commercial batch peeler for potatoes and other suitable root vegetables. Hobart’s installation and operation manual states that the 6430 and related 6430T models can peel 30–33 lb. (13.5–15.0 kg) of product in 1–3 minutes using a 3/4 HP motor. Actual peeling time varies with the type and condition of the product and the desired degree of peeling. The peeler uses water during processing and discharges peeled product through its chute.
The hopper has a removable Lexan liner, and the abrasive disc lifts out for cleaning. The manual describes a reinforced peeling disc with abrasive permanently bonded to its surface. Stainless steel construction is stated in the product information supplied for the 6430. A peel trap and disposer stand are optional accessories, not included features to assume when identifying a particular unit.
Key Features
- Batch capacity: 30–33 lb. (13.5–15.0 kg), according to the Hobart manual.
- Motor: 3/4 HP. The manual describes 6430-family motor configurations for single- or three-phase electrical service; confirm the individual machine’s data plate before connecting it.
- Peeling components: Removable Lexan hopper liner and lift-out abrasive disc. The abrasive is bonded to the disc.
- Water-assisted operation: A cold-water supply connects to the fill tube. Water is used during peeling and for flushing the hopper during cleaning.
- Discharge: Peeled product exits through the discharge chute. The manual says to leave the chute open when the machine is not in use to help prolong the door seal’s life.
- Optional accessories: The manual lists a peel trap and disposer stand as optional accessories.
Specifications
- Product: Hobart 6430 potato peeler.
- Product type: Commercial batch potato and root-vegetable peeler.
- Capacity: 30–33 lb. (13.5–15.0 kg) maximum.
- Peeling time: 1–3 minutes; actual time varies with product type, condition and desired result.
- Motor power: 3/4 HP.
- Electrical service: The manual describes single- or three-phase motor configurations for the 6430 family. Verify the specific machine’s data plate and electrical configuration; the sources do not establish one voltage for every 6430.
- Hopper liner: Removable Lexan liner.
- Peeling disc: Reinforced disc with abrasive permanently bonded to its surface; the disc lifts off the shaft for cleaning.
- Water connection: The installation manual specifies a 1/2-inch fill-tube coupling for the peeler unit. The 6430 CE diagram identifies a standard 1/2-inch female pipe-thread water connection.
- Drain connection: The 6430 CE diagram identifies a standard 2-inch male pipe-thread drain connection for the peel-trap installation. The diagram without a trap identifies a drain hose measuring 2-3/8 inches inside diameter by 2-3/4 inches outside diameter.
- Dimensions and weight: Hobart provides separate installation diagrams for the peeler with and without a peel trap. Dimensions and weights depend on that configuration; use the applicable diagram for the machine and accessory arrangement being installed. The manual gives a net weight of 140 lb. and domestic shipping weight of 147 lb. for the peeler without a trap; with the peel trap, it gives a net weight of 190 lb. and approximate shipping weight of 201 lb.
Installation & Requirements
Location and handling
The Hobart 6430 CE manual says the peeler is not suitable for outdoor installation and is to be operated by trained staff in an area where use and maintenance are restricted to trained personnel. Install it on a flat, level surface capable of supporting the peeler when full. The manual says to secure the machine where stability may be an issue and to allow sufficient room to operate its controls and carry out servicing. Refer to the Hobart installation diagram for the chosen configuration: the manual supplies distinct drawings for installations with and without a peel trap. Take care when manually handling and positioning the unit.
Water and drainage
Plumbing connections must comply with applicable sanitary, safety and plumbing codes. For a peeler unit without a disposer, the manual instructs the installer to attach the fill-tube and bracket assembly using the supplied gasket and acorn nuts, then connect a cold-water supply to the 1/2-inch fill-tube coupling. It recommends a globe valve in the supply line at a location convenient to the operator. When a disposer is used, the manual describes connecting the water inlet tubing to the fill-tube coupling and to the fill valve on the disposer stand; the cold-water supply then connects to that valve. Disposer installation is a separate configuration and should follow the disposer’s instructions as well as the peeler manual.
Electrical connection
Electrical requirements vary by machine configuration. Before connection, check the peeler data plate against the available electrical service. The manual requires electrical and grounding connections to comply with applicable electrical codes. For the installation described in the Hobart manual, a 7/8-inch conduit opening is provided for 1/2-inch trade-size conduit, and electrical connections are made in the junction box. Disconnect and tag the electrical supply before work on the machine. Use the correct manual and data plate for the specific unit rather than relying on a voltage or connection detail from a different 6430 configuration.
Operation
- Position the hopper top using its locating lugs and turn it clockwise into place. Close and latch the discharge-chute door.
- Load the product without exceeding the 30–33 lb. maximum capacity. Leave room in the hopper for the product to move while peeling; do not overload the machine.
- Turn on the water supply. If the installation includes a disposer, the manual instructs the operator to turn on the disposer switch, which opens the valve.
- Start the peeler. The manual notes that peeling time depends on the type and condition of the product and the degree of peeling required. Stop the machine before removing peeled product or adding more product.
- When peeling is complete, turn off the water (or the disposer where applicable) and place a container beneath the discharge chute. Open the chute and collect the product.
- If a timer is fitted, set it for the required peeling time. The manual for timer-equipped related models describes a synchronous timer adjustable from 1/2 to 5 minutes. If it expires before the product has discharged, reset it to allow enough time for discharge.
- If a peel trap is installed, empty its drawer as needed; the manual says this may be necessary after a few batches.
Use the peeler only for its intended purpose and in accordance with its supplied operating instructions. The manual says operators must be trained, must not reach into the hopper during operation, and must not operate the machine if it is faulty, unsafe or disassembled.
Cleaning & Maintenance
Disconnect the mains electrical supply before cleaning or servicing. The manual instructs operators to clean the peeler after the peeling operation and before the hopper has time to dry. It also says to clean the hopper daily, use mild soap and water, and not to pressure-clean the appliance or use scouring powder or a scouring pad.
- With the electrical supply disconnected, flush the hopper interior with water before residue dries, then turn off the water.
- Remove the hopper top and wash it in a sink.
- Lift out the abrasive disc; it is not fastened to the shaft. Scrub it with a brush and mild soap, then rinse it thoroughly.
- Clean the housing beneath the disc with mild soap and water. If the disc sticks and cannot be removed easily, the manual describes removing the hex-head screw on top of the hub and threading in a longer screw, such as 5/16-inch-18 x 1-1/2-inch, until the disc loosens.
- To remove the Lexan liner, release the exterior latch, push the keeper out of its hole, and slide the liner from beneath the retaining brackets. Wash it with soap and water using a nonabrasive brush, then allow it to air-dry before reinstalling. The liner must be seated securely and free of play when installed.
- Use water, mild soap and a brush to clean and rinse the hopper interior. If fitted, remove and clean the peel-trap drawer and the interior of the trap.
- Leave the discharge chute open while the peeler is not in use to help prolong the door seal’s life.
The 6430 uses sealed ball bearings and requires no lubrication maintenance. The manual describes a manual-reset overload protection switch: if the motor overheats and trips it, turn off the peeler switch or timer and allow the motor to cool for several minutes before resetting it as shown in the applicable manual. If the overload switch continues to trip, contact a Hobart service office. The manual recommends regular servicing by a trained and competent person and says service frequency depends on use.
Troubleshooting
- Peeler will not operate: Check whether electrical power is connected. The manual also lists a tripped circuit breaker or blown fuse as possible causes.
- Excessive foaming: The manual identifies too much water in the hopper as a possible cause.
- Overload switch trips: Turn off the switch or timer and allow the motor to cool for several minutes before resetting the overload switch according to the manual. If it continues to trip, contact a Hobart service office.
If these checks do not resolve the problem, the manual directs users to contact Hobart service. Repairs and adjustments should be carried out by an appropriately trained and competent service person.
Applications
The Hobart 6430 is suited to commercial kitchens that prepare batches of potatoes and other root vegetables for service. Its 30–33 lb. capacity and stated 1–3 minute peeling cycle support batch preparation in restaurant kitchens, institutional foodservice operations and other commercial settings where peeled product is needed for dishes such as mashed potatoes, fries, soups or vegetable sides. Product condition affects peeling time, so operators should check the result and adjust the cycle as needed without exceeding the stated capacity.
