Installation & Requirements

Check the peeler’s data plate against the available electrical service before making electrical connections. The 6430T is for single-phase service only. Electrical and grounding connections must comply with applicable electrical codes. The manual also directs installers to disconnect electrical power and follow lockout/tagout procedures before working on the machine. A 7/8-inch conduit hole in the housing accepts 1/2-inch trade-size electrical conduit. The machine has a junction box for its electrical connections.

For the water connection, attach the supplied fill tube and bracket assembly using the supplied gasket and acorn nuts, then connect a cold-water supply to the 1/2-inch fill-tube coupling. The manual recommends installing a globe valve in the water supply line where the operator can conveniently control the water. Plumbing connections must comply with applicable sanitary, safety, and plumbing codes.

If installing the optional peel trap, the manual describes positioning its drawer beneath the discharge chute or to the right, left, or rear. Inspect the machine for shipping damage after receipt. If damage is found, the manual instructs the recipient to notify the carrier within 5 business days, notify the carrier’s local terminal immediately, retain the original packing materials, and contact Hobart customer care. The manual says the machine must be cleaned after installation and before it is put into service.

Operation

1. Position the hopper top on the housing using its locating lugs, then turn it clockwise into place.
2. Close and latch the discharge chute door.
3. Load product into the hopper, leaving room for it to move while peeling. Do not exceed the 30 to 33 lb (13.5 to 15.0 kg) maximum capacity for the 6430 and 6430T.
4. Turn on the water supply.
5. Turn on the peeler and set the timer to the desired time.
6. Check the product as needed. Peeling time depends on the type and condition of the product and the desired result.
7. When the desired degree of peeling is reached, turn off the water and place a container beneath the discharge chute door.
8. After the product has discharged completely, turn off the peeler before beginning another batch.

If the timer expires before the product has discharged, reset it to allow enough time for discharge. When fitted with a peel trap, empty the drawer occasionally; the manual says this is needed after a few batches.

Cleaning & Maintenance

Clean the peeler after the peeling operation. Before the hopper has time to dry, turn on the water and flush the inside of the hopper, then turn the water off. Rotate the hopper top counterclockwise and lift it away for cleaning in a sink.

Lift out the abrasive disc and scrub it with a brush and mild soap. Clean the housing beneath the disc with mild soap and water. If the disc sticks and is not easily removed, the manual describes removing the hex-head screw on top of the hub and threading in a longer screw, such as 5/16-inch-18 x 1 1/2-inch, until the disc loosens.

To remove the Lexan liner, unlatch the exterior latch and push the keeper out of its hole. Slide the liner out from under the retaining brackets. Wash it at a sink with soap, water, and a nonabrasive brush, then allow it to air-dry before reinstalling it. Clean the hopper interior with mild soap and a brush. If the unit has a peel trap, remove the drawer and clean both the drawer and the trap interior. Leave the discharge chute open when the peeler is not in use to help prolong the door seal’s life.

The motor has a manual-reset overload protection switch. If it trips due to overheating, turn off the peeler switch or timer and allow the motor to cool for several minutes. Remove the top screw from the round cover plate, rotate the plate, and push the red reset button. Replace the cover plate and screw. If the overload switch continues to trip, contact a Hobart service office. The sealed ball bearings require no lubrication maintenance.

Troubleshooting

• Peeler will not operate: Check whether electrical power is connected. A tripped circuit breaker or blown fuse may also be the cause.
• Excessive foaming: The manual identifies too much water in the hopper as a possible cause.
• Overload switch trips: Turn off the switch or timer, allow the motor to cool for several minutes, and reset the manual-reset overload switch as described in the maintenance instructions. If it continues to trip, contact a Hobart service office.
