About the Hobart HGC20
Overview
The Hobart HGC20 is a single-cavity, half-size gas convection oven for commercial baking. Its standard configuration includes a solid-state thermostat, a one-hour dial timer and five oven racks. The oven has a porcelain interior and stainless steel exterior. Additional oven racks are optional.
The HGC20 is distinct from the related HGC20D, which uses an electronic or programmable control package rather than the HGC20’s solid-state controller. Two single ovens can be ordered with a stacking kit, and an open stand with a lower storage rack is an optional accessory for a single oven.

Installation & Requirements
The HGC20 manual states that installation, initial field start-up and adjustments are to be performed by personnel qualified to install gas equipment. Before installation, check the oven data plate, located inside the top front cover, to confirm that the electrical supply and gas type—natural gas or propane—match the unit’s specifications. Do not lift the oven by its door or handle.
Keep the equipment area clear of combustibles. The manual calls for at least 3 in. (7.6 cm) clearance from the sides and back, whether the adjoining construction is combustible or noncombustible. The location must also allow service access, proper operation and unobstructed combustion and ventilation airflow. Provide adequate air openings into the combustion chamber and an adequate room air supply for combustion at the oven burners.
For installation in Canada, the manual specifies compliance with local codes, CSA B149.1 Natural Gas and Propane Installation Code, and CSA C22.2 Canadian Electrical Code. Electrical and grounding connections must comply with the applicable electrical code and local requirements.
If the oven is mounted on casters, the manual requires a flexible connector that complies with ANSI Z21.69 / CSA 6.16 and a quick-disconnect device that complies with ANSI Z21.41 / CSA 6.9. These are not supplied by Hobart. A restraint must limit appliance movement without relying on the connector, quick-disconnect or associated piping. If the restraint must be disconnected, turn off the gas supply first; reconnect the restraint before restoring gas and returning the oven to its installation position. Separate caster instructions are supplied with the casters.
For gas odour, the manual directs operators to shut down the unit at the main shutoff valve and contact the local gas company or gas supplier for service. Do not store or use gasoline or other flammable vapours or liquids near the oven or another appliance.
Operation
The HGC20’s solid-state thermostat and one-hour dial timer are its standard controls. The oven is equipped with a gas burner and an electric motor. Do not attempt to operate the oven during a power failure. The manual notes that the HGC20D is a related model with electronic or programmable controls; those control packages are not the standard HGC20 configuration.
Cleaning & Maintenance
Before cleaning or servicing, disconnect electrical power and follow lockout/tagout procedures. The manual instructs operators to clean the outside of the oven daily with a clean, damp cloth. Clean the porcelain oven interior daily with soap or detergent and water, rinse thoroughly, and wipe it dry with a soft, clean cloth.
Troubleshooting
If the burners do not light after five trials, the manual says to turn off the manual valve and call the local Hobart service office. If a gas odour is detected, shut the unit down at the main shutoff valve and contact the local gas company or gas supplier for service. Do not attempt to operate the oven during a power failure.
Applications
The HGC20 is intended for commercial baking tasks that suit a half-size, single-cavity convection oven. Its five standard racks provide positions for baking multiple trays in the oven; the manual identifies additional racks as optional. Confirm that the oven’s gas type and electrical supply suit the installation before putting it into service.
