About the Hobart HGC20D
Overview
The Hobart HGC20D is a half-size gas convection oven with one cooking cavity. Hobart’s installation and parts manuals identify the HGC20D as model ML-114575. The oven has a porcelain interior and a stainless steel exterior. Five racks are standard equipment; additional oven racks are optional.
The HGC20D differs from the HGC20 in its control package. The manual identifies an electronic control package on HGC20D units built before October 1999 and a programmable control package on units built after October 1999. Check the unit’s data plate and installed controls when identifying a particular oven, especially when ordering replacement parts or planning service.
Key Features
- Single cavity: One oven cavity for cooking and baking.
- Gas heat: Each oven is equipped with a 25,000 BTU/hr burner.
- Electric motor: The oven has a 1/2 HP (0.37 kW) motor.
- Standard racks: Five racks are supplied with the oven. Additional oven racks are optional.
- Interior and exterior: The interior is porcelain; the exterior is stainless steel. Hobart’s product information specifies stainless steel for the front, sides, top and back.

Installation & Requirements
Hobart states that qualified personnel should install gas equipment and perform the initial field start-up and adjustments. Before installation, check that the electrical supply and gas type match the specifications on the oven data plate, located inside the top front cover. The manual identifies natural gas and propane as gas-supply types to verify. Do not lift the oven by its door or door handle.
Keep the equipment area free and clear of combustibles. The manual calls for at least 3 inches (7.6 cm) of clearance from the oven’s sides and back to combustible or noncombustible construction. The installation location must also provide adequate service access. Do not obstruct combustion or ventilation airflow, and provide adequate clearance for air openings into the combustion chamber. The room must have an adequate air supply for combustion at the oven burners.
For Canadian installations, the manual specifies compliance with local codes, CSA B149.1 Natural Gas and Propane Installation Code, and CSA C22.2 Canadian Electrical Code. Electrical and grounding connections must comply with applicable electrical codes. The oven must not be operated during a power failure. Installation and service work should follow the applicable instructions and safety procedures in the manual.
If the oven is mounted on casters, the manual requires a flexible connector that complies with ANSI Z21.69 • CSA 6.16 and a quick-disconnect device that complies with ANSI-Z21.41 • CSA 6.9. These items are not supplied by Hobart, according to the manual. A restraint must limit movement without relying on the connector, quick-disconnect device or associated piping. Attach the restraint at the rear of the oven. If it must be disconnected, shut off the gas supply first; reconnect the restraint before turning the gas supply back on and returning the oven to its installation position.
Operation
The HGC20D control arrangement depends on the unit’s construction date: the manual describes an electronic package for units built before October 1999 and a programmable package for units built after October 1999. The provided control instructions state that SET is used with Time or Temperature, and that SET can be used to manually set cooking time. Because the control packages vary, refer to the instructions for the controls installed on the specific oven.
Do not attempt to operate the oven during a power failure. The manual warns that improper installation, adjustment, alteration, service or maintenance can cause property damage, injury or death. Installation, initial start-up, adjustment and service should be handled by qualified personnel.
Cleaning & Maintenance
Before cleaning or servicing, disconnect electrical power to the machine and follow lockout/tagout procedures. The manual directs operators to clean the outside of the oven daily by wiping it with a clean, damp cloth. Clean the porcelain oven interior daily using soap or detergent and water. Rinse the interior thoroughly, then wipe it dry with a soft, clean cloth.
Troubleshooting
If a gas odor is detected, shut down the unit at the main shutoff valve and contact the local gas company or gas supplier for service. The manual also instructs operators to post the procedure to follow if gas is detected in a prominent location; that information can be obtained from the local gas supplier. Do not store or use gasoline or other flammable vapors or liquids near the oven or any other appliance. Do not operate the oven during a power failure.
Applications
The HGC20D’s single cavity and five standard racks suit commercial kitchen tasks such as baking, roasting and preparing food in batches. Its gas burner and electric motor combine gas heat with electrically powered oven components. Confirm the installed control package and the oven’s data-plate requirements when assessing a unit for a kitchen or planning service.
