About the Hobart HHFC6
Overview
The Hobart HHFC6 is a six-foot deli display case in Hobart’s HHFC series. The parts and installation manuals list HHFC6 configurations as High Profile, Low Profile, Two Tier, Pedestal and Designer. The High Profile is listed at 57 3/8 inches high, and the Low Profile at 48 1/2 inches high. The manuals also identify separate HHFC6C Counter and HHFC8 models; those are related models, not HHFC6 configurations.
The HHFC6 is a heated display case. Its well heating elements warm the wells, while overhead heat can be provided by heat lamps or, on applicable versions, overhead cal-rod heaters. The controls and parts vary by configuration, so consult the unit’s data plate and wiring diagram when identifying its electrical requirements or replacement parts.
Key Features
- Six-foot case: The manual identifies the HHFC6 as a six-foot case.
- Separate well-heating zones on specified versions: For Designer or Two Tier HHFC5 and HHFC6 models with overhead heater and halogen lighting, one thermostat controls the two end wells and a second controls the center wells. On the HHFC6, the center control covers the center three wells.
- Overhead heat control: The described Designer and Two Tier configuration has one control for the overhead heater across the case. For the full-service/self-service control, that control adjusts the heater between Low, Medium and High.
- Overhead lighting: The described configuration has one switch for the overhead halogen lights.
- Optional self-service section: A two-foot self-service section is available for displaying previously packaged hot foods for customer grab-and-go service. It uses a stainless steel well adapter insert, an 18 x 26-inch insert tray, a raised wire grid and a mid-divider glass panel. The manual identifies the divider as certified tempered safety glass.
- Product temperature checking: A laser temperature sensor is an option. It reads the product’s surface temperature and, if battery-operated, uses a 9-volt battery.

Installation & Requirements
Before installation, check that the electrical service agrees with the specifications on the data plate, which is located on the electrical inspection plate beside the controls. Make electrical connections according to the wiring diagram supplied with the case and refer to the data plate for the case’s electrical specifications. Electrical and grounding connections must comply with applicable electrical codes. The manual also says to disconnect the electrical supply and tag the disconnect switch before working on the circuit.
The installation location must allow adequate clearance for servicing and proper operation; the manual does not provide a numerical clearance. The case is shipped on a full skid in a wooden crate. The manual instructs installers to remove the top, sides and ends of the crate and the PVC shrink-wrap. The glass side panels are packed separately in the well area and must be installed; handle the glass carefully to avoid breakage. For floor models, remove the retaining bolts at the corners of the base to take the case off the skid. For countertop models, cut and remove the retaining bands. Depending on the model, the sandwich preparation board may need to be removed first: lower it, then lift it upward off the hinge mechanism. The manual says no screws or hinge mechanism need to be removed for this step.
Check the case for shipping damage after unpacking. If damage is found, keep the packaging material and contact the carrier within 15 days of delivery. The manual directs installers in the United States to follow state and local codes and the National Electrical Code, ANSI/NFPA-70, latest edition. It also gives a general instruction to follow applicable local electrical codes for electrical and grounding connections.
Operation
Before first use, clean the case with warm soapy water, rinse it thoroughly and dry it with a soft clean cloth. Clean glass surfaces with a quality glass cleaner. The manual warns that the case and its parts get hot, so use care during operation, cleaning and service. It also cautions that the heated deli case is designed to operate without moisture: do not put water in the well.
Preheat the case for approximately 30 to 45 minutes before loading products. Set the well thermostat controls to their highest setting and the overhead heater controls to maximum. During preheating, place empty pans in all open pan slots; remove them after preheating. Once the case is loaded, adjust the overhead heater controls and well thermostats down to the desired holding setting. The manual instructs operators to monitor case temperatures throughout the day as required.
For the described Designer or Two Tier HHFC6 with overhead heater and halogen lighting, use the end-well thermostat for the two extreme end wells and the center-well thermostat for the three center wells. Each thermostat ranges from 1 to 10, Low to High. The well indicator lights show when their respective heating zones are providing heat. The overhead heater control regulates overhead heat, the overhead-light switch turns the halogen lights on or off, and the main circuit breaker turns power to the case on or off. Controls differ by model configuration; follow the labels on the installed control panel.
If the optional laser temperature sensor is fitted, open the door, point the sensor at the product and pull its switch to read the surface temperature. Return the sensor to its holder when finished. Replace its 9-volt battery as necessary if the sensor is battery-operated. Follow the warning on the sensor and do not stare into the laser beam.
Cleaning & Maintenance
Disconnect electrical power before cleaning. Clean the glass daily with a quality glass cleaner and never use an abrasive cleaner on the glass panels. Wash stainless steel surfaces at least once daily using a cloth, warm water and mild soap or detergent. Rub in the direction of the polish lines. Do not use abrasive cleansers or standard steel wool; steel wool fragments can remain on the stainless steel and cause rusting. Rinse cleaned surfaces thoroughly and wipe them dry with a soft, clean cloth.
Clean the well while it is still warm, which the manual says makes food spills easier to remove. Use a mild detergent and water solution on the well and its rims, avoiding abrasive cleansers. Rinse thoroughly and wipe dry with a soft, clean cloth.
For maintenance, disconnect the electrical supply and tag the disconnect switch before working on the case. Allow heat lamps to cool before replacing them. For full-service use, the manual specifies a Cov-R-Guard opaque-coated bulb rated 130 watts and 120 volts, listing General Electric part numbers 150R/FL130WM/CVG and 120R40FL/STGPQ6. For self-service cases, the self-service portion of a case or Two Tier cases, it specifies an infrared bulb rated 250 watts and 120 volts: Prism BR40-CL/250 (clear, non-cover-guard coated; factory standard) or General Electric 250R40/1/CVG (clear, cover-guard coated; optional).
For halogen lamp replacement, let the lamps cool first. The manual specifies a clear, standard-base bulb rated 75 watts and 120 volts, Abco part number 04812 (Westinghouse type JDD). Handle halogen bulbs with a soft cloth; human contact can reduce bulb life. Replace a fuse only with the same size and type. Contact a local Hobart Service Office for repairs or adjustments.
Applications
The HHFC6 is suited to displaying and holding hot deli products in a commercial food-service setting. Its heated wells support pan arrangements, and overhead heat provides additional heat above the display. With the optional two-foot self-service section, previously packaged hot foods can be presented for customer grab-and-go service. The raised wire grid insert keeps packaged hot food off the surface of the insert tray and level with the well surface.
