About the Hobart HUV4P
Overview
The Hobart HUV4P is a four-pan deli display case in the HUV Series. The manual identifies full-service and self-service versions. The full-service arrangement uses an adjustable frame and pans; self-service operation loads packaged food onto the case’s bottom plate. The case has sliding glass doors, a front glass panel and switches for the main power, lights and heat.
The manual’s HUV4P model references are ML-132067 for full-service and ML-132068 for self-service. A food temperature probe and holder, cutting board assembly and painted base assembly are listed as optional accessories.
Key Features
- Four-pan model: The HUV4P is identified as the four-pan member of the HUV Series.
- Two service configurations: Full-service and self-service instructions are included for the HUV4P.
- Sliding glass doors: The manual describes installing and using the doors, and keeping them closed when the case is not being loaded.
- Adjustable frame for full-service: Back and side wall supports can be set to 0, 5 or 10 degrees. Divider bars organize the pans.
- Heating and lighting controls: Separate switches operate the main power, lights and heat. Full-service operation also includes controls for upper heaters, well temperature and humidity-tray heating.
- Automatic humidity-tray fill: In operation, the tray fills automatically when needed, and its empty indicator cycles as the case refills.
- Optional accessories: The manual lists a food temperature probe and holder, cutting board assembly and painted base assembly.
Specifications
- Product type: Deli display case.
- Model: HUV4P.
- Pan count: Four.
- Configurations: Full-service and self-service.

Installation & Requirements
Before installation, check that the electrical service matches the specifications on the machine data plate, located on the operator side of the case. The manual’s electrical data table is difficult to read in the supplied text, so use the data plate on the individual unit to confirm its electrical requirements. Electrical and grounding connections must comply with applicable electrical codes.
For installation in Canada, the manual specifies local codes and the Canadian Electrical Code, CSA C22.1, latest edition. For installation in the United States, it specifies state and local codes and the National Electrical Code, ANSI/NFPA 70, latest edition. The location must allow adequate clearance for servicing and proper operation.
Connect the water supply to the 1/2-inch barbed tubing connection, or remove the adapter and use the 3/4-inch NSHT inlet. The manual says to provide a convenient manual shutoff valve and keep it open while the case is operating. Water pressure should be 20 to 60 psi; install a pressure-reducing valve if it is higher. The manual recommends consulting a local water-treatment specialist and having the supply analyzed before installation. It cautions against using distilled, fully demineralized or deionized water because the water-level sensor uses ions to detect water level.
Connect the overflow outlet using the specified tubing and hose clamp, and run the line to an open-gap drain no more than 5 to 10 feet away. Support the drain tubing along its length. Do not connect the case solidly to a drain or combine its drain line with another appliance’s drain line.
For full-service use, set the back and both side wall supports to the same 0, 5 or 10 degree position, then install the divider bars and pans. The optional probe holder mounts to the right-hand frame on the operator side with two screws; plug the probe into its socket and twist it to lock. Assemble optional cutting board and base accessories according to the instructions supplied with those assemblies.
Operation
Before first use, clean, sanitize, rinse and dry the case and its parts and accessories. Fill the humidity tray, then operate the case at maximum temperature settings for 30 minutes to burn in the new surfaces and release odors that may result from heating. The manual warns that smoke and an unpleasant odor may occur during this process.
Full-service operation
Turn on the main power, light and heater switches. On power-up, the humidity tray fills automatically and its red empty indicator turns off. During the day, the indicator may cycle on and off as the case fills the tray as needed. Keep the humidity tray closed while the case is operating.
Use the upper heater selection key and arrow keys to choose a setting for each selected zone. The manual describes setting 5 as maximum upper heat with minimum humidity in that zone, setting 1 as minimum upper heat with maximum humidity, and setting 0 as off. The number of upper heaters varies by HUV Series model. For the full-service well temperature, use the well-temperature key and arrows to select a set point from 140°F to 185°F. The display shows the set point and, after 10 seconds, the actual well temperature.
The humidity-tray heater setting is selected with the humidity-tray key and adjusted with the arrow keys. The manual’s troubleshooting instructions say that if there is no humidity while the tray is full, check that the setting is not 0 and select 1, 2 or 3. At setting 3, the tray evaporates approximately 3 quarts of water per hour.
Self-service operation
Allow the case to preheat for 30 to 60 minutes with all doors closed. Check the case temperature on the display. When loading, open a sliding door and place packaged food on the bottom plate. Do not double-stack products; contact with the bottom plate is necessary to maintain proper product temperature. Close the sliding door after loading, and keep the doors closed when the case is not being loaded.
End-of-day shutdown
At the end of the day, turn off the heat switch, the light switch and then the main power switch.
Cleaning & Maintenance
The case and its parts can be hot. Use care when operating, cleaning or servicing it. Disconnect electrical power before cleaning. Do not use oven cleaners or a high-pressure hose.
Food probe
Clean the food probe after every use. Remove it from the holder, wipe it with antibacterial soap or cleaner, rinse and dry it, then return it to the holder.
Interior and removable parts
Raise the front, customer-side glass and remove the pans. Remove the back and side wall supports and divider bars if needed. Wash those parts with warm soapy water, rinse, sanitize and dry them with a soft, clean cloth; the manual also says full-service parts may be washed in a commercial dishwasher. Clean the interior stainless steel surfaces with warm soapy water, rinse and wipe dry with a soft cloth.
Glass and exterior
Remove the clear glass protector strips from the sliding doors. On self-service cases, also remove the strips from the top and bottom front glass. Remove the black rubber glass seal strips from the side and center glass panels. Clean door handles with warm soapy water, rinse and dry. Clean the glass with warm soapy water and rinse and dry it, or use a commercial glass cleaner. Do not use scouring pads or abrasives on the glass, as they can damage its reflective coating.
Replace the clear protector strips after cleaning. The manual notes that they help protect the sliding doors and, on self-service cases, the top and bottom front glass. Reinstall the black rubber seals with their lips facing the inside of the case or the full-service portion. These seals are needed to retain heat and humidity in the full-service section.
Clean the control panel with a sponge or clean, soft cloth; excessive water and harsh cleaners can damage it. Clean the exterior with warm soapy water and a soft cloth or sponge, rinse thoroughly and wipe dry. When reassembling the full-service frame, replace the pans, back and side wall supports and divider bars, then lower the front glass.
For stainless steel care, the manual cautions against abrasion, deposits and chlorides. Avoid steel pads, wire brushes and scrapers that can leave iron deposits; use plastic scouring pads or soft cloths instead. For stubborn stains, the manual names Cameo, Talc or Zud First Impression and says to rub parallel to the polish lines or with the grain.
Troubleshooting
- Humidity tray empty indicator stays on: Check that the external water valve is on, then turn the main power switch off and on. The manual also lists a stuck water-level probe, probes coated with lime, distilled or fully demineralized water, low incoming water pressure, or a need to call Hobart Service. It says a stuck probe can be pivoted to its vertical position and lime-coated probes should be delimed before restarting.
- No humidity, red light off and tray full: Check that humidity is not set to 0; select setting 1, 2 or 3. If the problem continues, call Hobart Service.
- Humidity tray overflows continuously or water leaks from the case: Turn off the external water valve and call Hobart Service.
- Lights are off while the controller works: Check that the light switch is on. If the lights remain off, call Hobart Service.
- Food probe display shows “---”: Make sure the probe is fully plugged in and twisted into its locked position. If the display remains unchanged, call Hobart Service.
- Well temperature is not reached within one hour: Check whether the door or doors are open, whether the pans are in place, and whether the black glass seal strips are installed on the side glass. If the issue continues, call Hobart Service.
Applications
The HUV4P supports deli and prepared-food presentation in either full-service or self-service settings. Full-service operation accommodates pans in an adjustable frame and includes controls for the well, upper heaters and humidity tray. Self-service operation is described for packaged food placed on the bottom plate, with the sliding doors closed between loading periods.
