About the Hobart HL400C
Overview
The Hobart HL400C is a floor-model Legacy planetary mixer with a 40-quart bowl and a 1.5 HP motor. A manual bowl lift and swing-out bowl support access for loading and unloading batches. The gear-driven planetary mixer provides STIR and three mixing speeds, with a SmartTimer for timed operation.
The HL400C is intended for professional use by trained operators. Its interlocked wire cage, bowl, and bowl support must be in their required positions for the mixer to run. Hobart’s manual advises following the capacity chart for the appropriate bowl, agitator, speed, and batch size.
Key Features
- Interlocked operation: A triple interlock system with MagnaLock technology prevents operation unless the bowl is raised and locked and the wire cage is correctly positioned.
- Mixing control: Three fixed speeds plus STIR, with a 20-minute SmartTimer and automatic time recall.
- Drive: Gear-driven transmission and soft-start agitation.
- Bowl access: Manual bowl lift and ergonomic swing-out bowl.
- Attachment hub: Front-mounted #12 taper attachment hub.

The published capacity chart notes that dough capacities are based on flour at 12% moisture and water at 21 °C. It advises reducing the listed dough batch by 10% when using high-gluten flour and reducing batch size by 10% when using ice. Speed 2 must not be used for products with an absorption ratio of 50% or less. The attachment hub should not be used while mixing.
Installation & Requirements
Before installation, the manual says to check that the electrical service matches the mixer data plate. Place the mixer in its operating location on a sturdy, level surface, with space for operators to use the controls and install or remove bowls. The area above and behind the mixer must allow the covers to be removed for routine service. The manual specifies that 30- and 40-quart mixers must be levelled after positioning: remove the top cover, use a level on the top rim, and place shims under the base contact surface as required to level the mixer from front to back and side to side.
For a 40-quart three-phase mixer, disconnect power and follow lockout/tagout procedures before making electrical connections. The manual identifies a 3/4-inch trade-size conduit opening at the top of the pedestal. Connect the field supply leads to L1, L2, and L3, and connect the ground wire to the mixer’s ground lug. Electrical and grounding connections must meet applicable electrical codes. The HL400C listing specifies 200–240 V, 50/60 Hz, three-phase power; the product listing states that the unit is hardwired and does not include a cord.
Operation
The mixer is for professional use by properly trained operators. Before operation, fit and lock the bowl onto the support, raise the bowl support fully until it locks, and close the wire cage in the front-centre position. The manual warns not to operate the mixer without the interlocked wire cage in place and not to override its safety switches. Keep hands, feet, clothing, and utensils away from the bowl, bowl support, slideways, and agitator while components are moving. Use the STOP button to stop the mixer; do not stop it by opening the wire cage or using the bowl lift.
Use STIR to incorporate ingredients. Speed 1 is specified for heavy mixtures such as pizza dough, heavy batters, and potatoes. Speed 2 is specified for cake batters, mashing potatoes, and developing bread dough. Speed 3 is for incorporating air into batches and finishing whipped items. Follow the capacity chart for the correct bowl, agitator, speed, and batch size. Stop the mixer before adding ingredients unless using a food chute. Do not install or leave an agitator on the mixer without a bowl in place, and use only the correct bowl size with its matching agitator.
For an initial operating check, the manual directs the operator to apply power, set the speed selector to STIR, install and lock the bowl, raise the bowl support until locked, and close the wire cage in its front-centre position. Momentarily run the mixer using START, then stop it with STOP.
Cleaning & Maintenance
Disconnect electrical power and follow lockout/tagout procedures before cleaning. Hobart’s manual calls for thorough daily cleaning. Wash the mixer with a clean, damp cloth; do not hose it down or pressure-wash it. The manual also says not to use scouring powder or a scouring pad, and not to wash aluminium agitators in a dishwasher.
Before first use, wash new bowls and accessories—including beaters, whips, and dough arms—with hot water and mild soap. Rinse with a mild soda or vinegar solution, then rinse thoroughly with clear water. Follow the same procedure for bowls and agitators before whipping egg whites or whole eggs. The wire cage can be removed by rotating it until its carriers align with the escape slots, lifting it clear, and pulling it toward the operator. Wash it in a sink, rinse with clear water, and dry with a clean cloth. The manual says the splash guard can be wiped or washed with warm, soapy water, rinsed, and dried.
The manual specifies that the 30- and 40-quart mixer slideways should be lubricated approximately twice a year. With the bowl support fully lowered, apply a thin coat of Lubriplate 630AA to the bowl pad area and each slideway. If the planetary seal becomes dry and squeaks, work a little mineral oil under the seal lip. Check agitator clearance periodically. The manual gives maximum clearance of 1/8 in. between the bowl bottom and B flat beater, and 5/16 in. between the bowl bottom and ED dough arm; the agitator must not touch the bowl. It also recommends regular service, at least twice a year for typical usage, with frequency dependent on how often the mixer is used.
Troubleshooting
- Mixer will not start: Check whether the branch-circuit protector is open, whether the mixer is overloaded, and whether the wire cage is closed in the front-centre position. Confirm the bowl is locked and the bowl support is raised. A flashing time display is also listed as a possible symptom.
- Agitator touches the bowl: Check that the bowl is locked, the agitator is installed correctly, and the agitator clearance is properly adjusted. Follow the manual’s clearance procedure and adjustment instructions.
- Planetary seal squeaks: The manual identifies a dry seal as a possible cause and recommends applying a little mineral oil under the seal lip.
- Flashing alarm code: For a displayed error code, the manual says to unplug the mixer until the display is blank, then reconnect power. If the symptom remains, contact a local Hobart service office.
