About the Hobart HL800
Overview
The Hobart HL800 Legacy+ is a heavy-duty, 80-quart planetary floor mixer for commercial food preparation. Its 3.0 HP motor and four mixing speeds plus STIR support a range of tasks, including incorporating ingredients, mixing batters and kneading dough. The Legacy+ control system includes a digital SmartTimer™ and Shift-on-the-Fly™ controls, while a power bowl lift assists with raising and lowering the bowl.
The mixer operates only when its interlocked wire cage is in position and the bowl is locked on the bowl support. Hobart’s manual identifies the HL800 as a professional-use mixer for trained operators. The HL800 is one of the large floor models covered by Hobart’s installation and operation documentation.
Key Features
- 80-quart capacity: A large bowl capacity for high-volume mixing and food preparation.
- 3.0 HP motor: The manual identifies a 3.0 HP motor for the HL800.
- Five speed selections: STIR plus four mixing speeds. The manual describes STIR as the slow setting for incorporating ingredients; it is not intended for developing dough.
- Shift-on-the-Fly™ controls: Speed can be changed while mixing. When the speed changes, the timer switches to the previously entered time for the selected speed and continues counting down.
- Digital SmartTimer™: The timer counts down and stops the mixer when it reaches 00:00; a beeper sounds for three seconds. If mixing is stopped, the timer pauses and resumes from the remaining time when the mixer is restarted.
- Power bowl lift: The bowl support raises and lowers using the bowl lift controls.
- Interlocked safety system: The wire cage must be in position and the bowl must remain locked on the bowl support for normal operation. The manual also identifies interlock switches for the wire cage and bowl support.
- Agitator options: Hobart’s manual lists a B flat beater, C wing whip, D wire whip and ED dough arm among the available agitators. Their uses include general mixing, whipping and dough work. Consult Hobart’s Use and Application Handbook for attachment instructions and compatibility.

Installation & Requirements
Before installation, check the mixer data plate and verify that the electrical service matches its specifications. The listed Canadian product configuration is 240 V, 12 A, 60 Hz, three-phase and hardwired; the data plate on the actual mixer is the reference for its electrical requirements. Electrical and grounding connections must comply with applicable electrical and local codes. Hobart’s installation guide specifies a 3/4-inch trade-size conduit opening at the top of the pedestal and directs installers to make connections using the wiring diagram inside the top cover. For a three-phase connection, the guide specifies connecting the supply leads to L1, L2 and L3 and connecting the ground wire to the mixer’s ground lug.
Place the mixer in its operating location and level it. The installation instructions describe removing the top cover, placing a level on the rim of the large pulley and using shims under the base contact surface to level the unit front-to-back and side-to-side. The manual says 80- and 140-quart mixers may also be bolted to the floor using studs. Provide room for operators to use the controls and install or remove bowls, as well as access above and to the right side for top and side cover removal during routine maintenance and service.
Before starting the mixer, check the transmission oil level. The installation guide also calls for checking lubrication, washing the mixer, bowls and agitators, and verifying the speed dial, motor direction and bowl lift operation. With the bowl locked, bowl support raised and wire cage closed, the initial check briefly runs the mixer using START and STOP. The guide says to verify that the motor turns counterclockwise and that the bowl lift raises and lowers correctly. If the motor direction is incorrect during installation, the manual instructs the installer to reverse any two lead wires.
Operation
This mixer is for professional use by properly trained people. Operators should read the manual and receive training before using the equipment. Keep hands, feet, clothing and utensils away from the bowl, bowl support, slideways and agitator while the mixer or its components are moving. Do not operate the mixer without its interlocked wire cage, and do not override its safety switches. Use the STOP button to stop the mixer; the manual specifically warns against using the wire cage or power bowl lift to stop it.
Before mixing, confirm that the bowl, agitator and wire cage are fitted correctly. Use only a bowl and agitator combination intended for that bowl size. The wire cage must be in position and the bowl locked on the support. If the support is not fully raised to the mix position, the mixer will not operate normally; if START is pressed and held with the support below the mix position, the manual says it will run only at STIR speed. Stop the mixer before adding more ingredients unless using a food chute.
Use STIR to incorporate ingredients, not to develop dough. When adding flour or other ingredients that create dust, Hobart’s manual instructs operators to use the lowest speed and a splash cover, add ingredients carefully, and continue at the lowest speed until the risk of dust production has passed. It also recommends suitable dust extraction equipment. Do not leave an agitator on the mixer without a bowl in place.
To unload, stop the mixer, unlock and swing the bowl out slightly, then use the bowl switch to lower the support. Open the wire cage, remove the agitator from its shaft and remove the bowl from the support.
Cleaning & Maintenance
Disconnect electrical power and follow lockout/tagout procedures before cleaning or maintenance. Hobart says to clean the mixer thoroughly each day. Wash the mixer with a clean, damp cloth; do not hose or pressure-clean it. The apron can be removed by loosening its thumb screws for cleaning, and the drip cup-splash guard assembly should be removed periodically and wiped clean. Follow the manual’s separate instructions for cleaning the wire cage. New bowls and accessories should be washed with hot water and mild soap, rinsed with a mild soda or vinegar solution, then thoroughly rinsed with clear water before use. Follow the same procedure for bowls and agitators before whipping egg whites or whole eggs. Do not use scouring powder or a scouring pad on the mixer, and do not wash aluminum agitators in a dishwasher.
The manual gives several lubrication and inspection tasks. Lubricate the slideways approximately twice a year with a thin coat of Lubriplate 630AA on the bowl pad area and slideways. If the planetary seal becomes dry and squeaks, apply a little mineral oil under the seal lip. Apply a thin coat of mineral oil to the agitator shaft twice a year. Check the transmission oil level using the dipstick and add the recommended transmission oil if it is below the line; do not overfill. Contact a local Hobart Service Office for the recommended transmission oil. Inspect the transmission belt yearly for wear; the manual says a Hobart Service Technician should replace it if worn. Inspect the wire cage and bowl support interlock switches at least once a year. The manual recommends regular servicing, at least twice a year for typical use, and notes that service needs may vary with frequency of use. Hobart-trained or otherwise properly trained and qualified personnel should carry out service.
Troubleshooting
- Mixer will not start: Check whether the circuit protector is open, and check the fuse or disconnect switch. The mixer may be overloaded, the wire cage may not be closed and centred, or the bowl may not be locked in position.
- Agitator touches the bowl: Check that the bowl is locked, that the agitator is installed correctly and that agitator clearance is correctly adjusted. The manual gives maximum clearance of 1/8 in. (3 mm) for a B flat beater on the HL800 and 5/16 in. (8 mm) for an ED dough arm on the HL800. The agitator must not touch the bowl.
- Planetary seal squeaks: The seal may need occasional lubrication. The manual specifies applying mineral oil under the seal lip.
- Timer displays a flashing ErXX code: Disconnect electrical power from the mixer for one minute, then reconnect it. If the symptom remains, contact a local Hobart Service Office.
Disconnect power and use qualified service personnel for service work. The manual warns against removing covers or loosening fittings while the mixer is operating and says to isolate the mixer from the mains and allow five minutes for the electronic drive control capacitors to discharge before removing covers.
Applications
The HL800 is suited to high-volume commercial kitchens and bakeries that prepare large batches of mixed, whipped or kneaded products. With the appropriate bowl and agitator, the manual identifies uses such as general mixing with a B flat beater, whipping with a C wing whip or D wire whip, and dough work with an ED dough arm. Confirm bowl and agitator compatibility in Hobart’s Use and Application Handbook before using accessories.
