About the Hobart HL600
Overview
The Hobart Legacy+ HL600 is a commercial floor-model planetary mixer with a 60-quart capacity and a 2.7 HP motor. The manual identifies the HL600 as a 60-qt. model with a #12 attachment hub, STIR speed and four mixing speeds. It can mix, whip and knead a range of products; the product information gives mashed potatoes and cake frosting as examples. Bowl and beater are sold separately, so confirm which bowl and agitators are needed for your recipes and mixer configuration.
The HL600 is intended for professional use by properly trained operators. The manual warns that commercial-equipment warranty coverage will not be honoured for residential or non-commercial use. The published specifications include different electrical configurations and conflicting depth figures; use the data plate on the individual mixer to confirm its electrical requirements and consult the applicable model documentation before planning its installation.
Key Features
- 60-qt. capacity: A large bowl capacity for commercial batch preparation.
- Four fixed speeds plus STIR: The manual lists STIR and four mixing speeds for the HL600.
- Shift-on-the-Fly controls: Product information describes changing speeds while the mixer is running. Soft-start agitation gradually changes speed to help limit splashing when shifting to a higher speed.
- 20-minute SmartTimer: The timer supports timed mixing and can recall the last set time for repeated batches, according to the product information.
- Gear-driven transmission: The product information identifies a gear-driven transmission.
- Power bowl lift: Listed as standard equipment in the manual.
- Interlocked safety system: The wire cage must be in position and the bowl locked on the support for the mixer to operate. A stainless steel bowl guard is specified for the HL600-2 product listing.
- #12 taper attachment hub: Specified for the HL600.
- Accessories: A bowl and beater are sold separately. Hobart lists HL600-compatible accessories including a 60-qt. stainless steel bowl, flat beater, wire whips and dough attachments.

Installation & Requirements
Before installation, check that the electrical service matches the mixer’s data plate. The HL600 manual’s installation guide instructs the installer to place and level the mixer. To level it, remove the two top-cover screws and the top cover, place a level on the top rim of the large pulley, and use shims under the mixer base contact surface as required to level it front-to-back and side-to-side. The guide states that 80- and 140-qt. mixers may also be bolted to the floor; it does not give that instruction for the HL600.
A 3/4-in. trade-size conduit opening is located at the top of the pedestal. Make electrical connections according to the wiring diagram inside the top cover. The manual requires electrical and grounding connections to comply with the applicable National Electrical Code and/or local electrical codes, and instructs users to disconnect power and follow lockout/tagout procedures before electrical work. The source listings give more than one HL600 voltage configuration, so do not assume the requirements of one variation apply to another.
Operation
This mixer is for professional use by properly trained people. The manual says operators must understand the instructions and receive proper training. Before starting, check the transmission oil level; the mixer is shipped with oil in the transmission. The wire cage must be correctly positioned and the bowl must be locked onto the bowl support. If either interlock condition is not met, the mixer will not operate. When the bowl support is not fully raised to the mix position, the mixer will operate only at STIR if the START button is pressed and held.
Use the correct bowl size with the corresponding agitator size. The manual says to stop the mixer before adding ingredients unless using a food chute. For ingredients that create dust, such as flour, it instructs operators to add them carefully, use the lowest speed and a splash cover, and mix at low speed until the risk of dust production is eliminated. Use STIR until dust has cleared, and follow the manual’s dust-hazard precautions. Keep hands, feet, clothing and utensils away from the bowl, bowl support, slideways and agitator while the mixer is running or components are moving. Use the STOP button to stop the mixer; do not use the bowl lift or open the wire cage to stop it.
Cleaning & Maintenance
The manual calls for thorough daily cleaning. Wipe the mixer with a clean, damp cloth; do not hose or pressure-clean it. Do not use scouring powder or a scouring pad, and do not wipe down the slideways during cleaning. The apron can be removed for cleaning by loosening its thumbscrews. Remove the drip cup-splash guard assembly periodically and wipe it clean. Follow the manual’s wire-cage cleaning instructions.
Before first use, wash new bowls and agitators with hot water and a mild soap solution, rinse with a mild soda or vinegar solution, then rinse thoroughly with clear water. Follow the same cleaning procedure before whipping egg whites or whole eggs. Do not clean aluminum agitators in a dishwasher.
Disconnect electrical power and follow lockout/tagout procedures before maintenance or moving the mixer. The manual says not to remove covers or loosen fittings while it is operating. Allow the electronic drive control’s high-voltage capacitors to discharge for five minutes after isolating the mixer from mains power before removing covers. Service should be performed by Hobart-trained service personnel or other properly trained and qualified personnel.
Inspect the wire-cage and bowl-support interlock switches at least once a year. The manual recommends regular servicing at least twice a year for typical usage; servicing needs may vary with frequency of use. Inspect the transmission belt yearly and have a Hobart Service Technician replace it if worn. Lubricate the slideways approximately twice a year with a thin coat of Lubriplate 630AA on the bowl-pad area of the bowl supports and each slideway. If the planetary seal becomes dry and squeaks, work a little mineral oil under its lip. Apply a thin coat of mineral oil to the agitator shaft twice a year. Check the transmission oil level using the dipstick and contact a local Hobart Service Office for the recommended transmission oil. Do not overfill the transmission.
Troubleshooting
- Mixer will not start: Check whether the circuit protector is open, including the fuse or disconnect switch; the mixer may be overloaded; the wire cage may not be closed in the front-centre position; or the bowl may not be locked in position.
- Agitator touches the bowl: Check that the bowl is locked, that the agitator is installed correctly and that agitator clearance is correctly adjusted. The manual gives a maximum clearance of 1/8 in. (3 mm) for a B flat beater on the HL600 and 5/16 in. (8 mm) for an ED dough arm on the HL600.
- Planetary seal squeaks: The seal may need occasional lubrication; refer to the lubrication procedure above.
- Timer displays an error code (ErXX): If the code is flashing, disconnect electrical power for one minute and reconnect it. If the symptoms continue, contact a local Hobart Service Office.
- Service: For service, the manual directs users to contact a local Hobart Service Office.
Applications
The HL600’s 60-qt. bowl and range of agitators support different mixing tasks in commercial kitchens and bakeries. Hobart describes the B flat beater for products such as mashed potatoes, cakes, waffles, sugar cookies, pies, shortening and icings; the C wing whip for heavier whipping tasks; the D wire whip for incorporating air into lighter products such as egg whites, meringue and whipped cream; and the ED dough arm for mixing, folding and stretching dough. Confirm bowl and agitator compatibility for the specific batch and configuration before use.
