About the Hobart HRO330
Overview
The Hobart HRO330 is a large commercial rotisserie oven in Hobart’s HRO series. Its oven capacity is seven spits, with a stated capacity of up to 35 whole chickens. Rotating, self-basting spits or flat baking racks work with a combination of convection and radiant heat to cook and brown food thoroughly while helping eliminate hot spots.
The oven has a stainless steel interior and exterior, tempered-glass doors at the front and back, and quartz lighting. The doors and lighting let staff and customers view food as it cooks; the manual cautions that the oven should not be accessible to customers because hot glass and parts can cause burns. The HRO330 is the oven-only model. In the related HRW330 configuration, an HRO330 oven is paired with a lower warming cabinet; the HRO330 itself should not be mistaken for that oven-and-warmer configuration.
Key Features
- Rotisserie capacity: Seven spits, with a stated capacity of 28–35 whole chickens weighing 2 lb each.
- Cooking method: Rotating, self-basting spits or flat baking racks with convection and radiant heat.
- Manual and automatic operation: The controls support manual cooking and automatic timer-controlled operation. The automatic controls can regulate roasting temperature, stop at a preset time, or sound a timed buzzer.
- Visible cooking: Tempered-glass front and rear doors and quartz lighting.
- Grease handling: A removable grease drawer has a drain plug for removing excess fat.
- Cleaning surfaces: Stainless steel interior and exterior, as specified for the HRO and HRW series.

- Legs: 1 1/2-inch legs; the manual identifies the HRO330 as a counter model
- Electrical supply options listed in the manual: 208 or 240 volts, 60 Hz, single- or three-phase. The table lists 60 amps for single-phase and 35 amps for three-phase at each voltage. Confirm the machine data plate before connecting the oven.
- Manual cooking-capacity examples for HRO330: 28–35 whole chickens at 2 lb each; 28–42 Cornish hens at 1 lb each; 14 whole ducks at 4–4 1/2 lb each; one whole turkey at 11–13 lb; 14 roast beef portions at 4 lb each; or seven portions of pork ribs at 3 lb each. These are listed capacities, not assurances that every load will fit every insert arrangement.
- Manual chart cooking guidance: The chart lists thermostat settings of 350–375°F for whole chicken, Cornish hens, duck, turkey, and roast beef, and 350°F for pork ribs. Listed internal temperatures are 180–185°F for poultry, 140°F for rare roast beef, 160°F for medium roast beef, 180°F for well-done roast beef, and 170°F for pork ribs. The chart’s cooking times are identified as times for the HRO101, not the HRO330.
Installation & Requirements
Place the oven on a level surface. The manual specifies minimum clearances of 10 inches from the rear, 10 inches from any glass, and 4 inches from each side panel. The location must also allow space for servicing and for proper operation of the front and rear doors. The oven may be positioned where cooking can be observed, but it should not be accessible to customers because hot glass and components can cause burns.
Before installation, check that the electrical service agrees with the specifications on the machine data plate, located on the right side panel near the controls. The manual lists 208- or 240-volt, 60-Hz electrical options and directs the installer to use the wiring diagram attached to the oven. To reach the electrical connection point, remove the right side panel. The electrical supply cord and plug are to be supplied by the installer, and the panel must be replaced after the connection. Electrical and grounding connections must comply with applicable electrical codes. Disconnect electrical power and tag the disconnect switch before working on the circuit.
After unpacking, check for shipping damage. If damage is found, retain the packaging and contact the carrier within 15 days of delivery. Before first use, clean the oven and accessories with warm soapy water, rinse, and dry. Then operate the oven at its maximum temperature setting of 450°F for four hours to burn in the new surfaces. The manual notes that smoke and an unpleasant odour are normally produced during this process. Keep water away from the quartz lamps while cleaning.
Operation
Loading and selecting a cooking mode
For manual operation, set the Rotisserie and Main Power dials to the hand symbol and use the dial thermostat. For automatic operation, set the three dials to AUTO and press ON, following the automatic-control procedure. The thermostat must be set to its maximum, 450°F, for automatic operation. If no temperature or roasting time has been programmed for an automatic cycle, the controls recall values from the previous automatic cooking operation; those values can be viewed using the appropriate control.
To load food, turn the Rotisserie dial to the hand symbol to rotate the mechanism, then turn it to AUTO to stop it while loading. Repeat as needed until loading is complete. Distribute food evenly and close the door. The automatic controls retain the last-entered temperature and roasting time. Temperature and roasting time can be adjusted before, during, or after cooking; after a change, the operation proceeds using the new values. The time of day cannot be changed while an automatic cooking operation is in progress.
Automatic timing and stopping
In automatic operation, set the roasting temperature and time, then press ON to begin. The controls can also be set for an early warning buzzer or an end time, which delays the start so cooking finishes at the selected time. When the cycle completes, the buzzer sounds. Press the buzzer control to silence it.
To temporarily interrupt an automatic cycle, press ON. The ON lamp flashes, the rotisserie stops, and the heat lamps and elements switch off. The controls retain the set temperature and remaining roasting time, which continue to display while the oven cools. Press ON again to resume; the controls do not compensate for the temperature decrease during the interruption. To abort a cycle, turn Main Power OFF. The set temperature and roasting time are retained, but the remaining cooking time is not. Turning the Rotisserie OFF stops rotation and heat, while one lamp continues to burn.
Unloading and grease removal
Opening the door does not stop the rotisserie or cooking process. Turn the rotisserie OFF before removing spits or baskets. The manual directs operators to advance rotation by turning the rotisserie to Manual when removing the next utensil. Empty the grease drawer as necessary, taking care if the grease is warm. Place a suitably large vessel beneath the drain plug, unscrew the plug, and tighten it again after draining.
Cleaning & Maintenance
Unplug the oven before cleaning. Hot glass, grease, and parts can cause burns. When the oven is idle, empty and remove the grease drawer. Wash it in a sink with warm soapy water; use a soft, non-scratching pad for hard soil. Remove the rotisserie, spits, bottom plates, grease drawer, and other removable parts and wash them with warm soapy water. Rinse thoroughly and dry with a soft, clean cloth. Clean the oven interior with warm soapy water, then rinse and dry. Clean the exterior glass with warm soapy water or commercial glass cleaner, and wipe the control panel with a damp cloth only.
Do not clean the quartz lamps with soap and water. Clean them with a cloth soaked in alcohol, do not touch them with bare hands, and handle them carefully because they can break. The manual also specifies monthly cleaning of the ventilation grate and fan blades in the top of the oven. Remove the ventilation grate by unscrewing the nuts at either side of the vents; remove the centre nut on the fan blade by turning it clockwise. Wash the grate and blades with warm soapy water, rinse, dry, and reinstall in reverse order.
Troubleshooting
The manual’s control instructions describe expected behaviour during interruptions and resets rather than a fault-diagnosis chart. If an automatic cycle is paused with ON, heat and rotation stop, the ON lamp flashes, and the remaining time and set temperature are retained; press ON again to resume. If Main Power is turned OFF to abort a cycle, the set temperature and roasting time remain in memory, but remaining time and an early-warning buzzer are lost. Turning Main Power OFF and ON resets the automatic control; the last automatic cycle’s time and temperature remain stored. For a temperature or electrical-supply discrepancy, the manual directs the installer to compare the supply with the machine data plate and the oven’s wiring diagram.
Applications
The HRO330’s listed capacity and rotating cooking system suit commercial kitchens preparing poultry and other rotisserie or rack-cooked foods in batches. The manual’s capacity examples include whole chickens, Cornish hens, ducks, turkey, roast beef, and pork ribs. The oven can be operated manually or with automatic temperature and time controls, making it applicable to both closely attended cooking and scheduled roasting cycles. Use the manual’s capacity and temperature guidance as a reference; it identifies its listed cooking times as HRO101 times, not HRO330 cooking times.
