About the Hobart HRO550P
Overview
The Hobart HRO550P is a programmable model in Hobart’s HRO Series rotary ovens. The HRO550 configuration consists of two HRO330 ovens stacked. The manual describes the HRO Series as having stainless steel interiors and exteriors, tempered glass doors at the front and back, and quartz lighting. Its rotating, self-basting spits or flat baking racks work with combined convection and radiant heat for cooking and browning.
The oven has a grease drawer with a drain plug for collecting and draining excess fat. The drawer can be removed for cleaning. The manual identifies model HRO550P as ML-43889.

Installation & Requirements
Before installation, the manual says to check that the electrical service agrees with the machine data plate, located on the right side panel near the controls. HRO550 is secured to its skid with four screws that must be removed. The oven must be installed on a level surface. The manual specifies minimum clearances of 10 inches from the rear, 10 inches from any glass, and 4 inches from each side panel. The location must also allow access for servicing and proper operation of the front and rear doors. The manual warns that the oven should not be accessible to customers because hot glass and parts can cause burns.
To access the electrical connection point, remove the right side panel and follow the wiring diagram attached to the oven. The manual states that the installer should supply the electrical cord and plug, and that electrical and grounding connections must comply with applicable national and local electrical codes. Disconnect electrical power and tag the disconnect switch before working on the circuit. Check the machine data plate for the requirements of the individual oven.
Operation
The HRO550P’s programmable controls allow cooking settings to be stored using menu buttons. The manual’s programming instructions cover Cook, Grill, and Warm/Hold functions. Cook and Grill settings include a time and temperature; Warm/Hold allows a temperature setting but does not accept a programmed time. For the programmable controls, the stated temperature range is 32°F to 480°F, and the maximum Cook time setting is 5 hours and 59 minutes. The manual advises locking in programmed settings by pressing the flashing menu button after programming.
The manual cautions that cooking results depend on initial product temperature, size, shape, and other factors, and that settings may need adjustment for the operation. Its product chart lists thermostat settings of 350–375°F for whole chicken, Cornish hens, duck, turkey, and roast beef, and 350°F for pork ribs. For whole chickens weighing 2 lb, the HRO550 capacity column lists 56–70. The chart gives an internal temperature of 180–185°F for chicken, Cornish hens, and duck; it does not provide a cooking time for HRO550 specifically, noting that the times shown are for HRO101.
Opening the door does not stop the rotisserie or cooking process. The manual instructs operators to turn the rotisserie off before unloading, remove the spits or baskets, and use the Manual setting to advance rotation to the next utensil. It also cautions that hot glass, grease, and parts can cause burns.
Cleaning & Maintenance
Disconnect electrical power before maintenance. Before first use, clean the oven and accessories inside and out with warm soapy water, rinse thoroughly, and dry with a soft clean cloth. Keep water away from the quartz lamps. The manual also directs operators to run the oven at its maximum temperature setting of 450°F for four hours before first use to burn in new surfaces; smoke and an unpleasant odor may occur during this process.
When the oven is idle, empty the grease drawer and remove it. Wash it in a sink with warm soapy water; use a soft, non-scratching pad for hard soil. To drain collected grease, place a suitably large vessel under the drain plug, unscrew the plug, and tighten it again after draining. Take care if the grease is warm.
For routine oven cleaning, remove the rotisserie, spits, bottom plates, grease drawer, and other removable parts and wash them in a sink with warm soapy water. Rinse and dry them thoroughly. Clean the oven interior with warm soapy water, then rinse and dry it. The manual says to clean quartz lamps with a cloth soaked in alcohol, not soap and water. Do not touch the lamps with bare hands, and handle them carefully because they can break. Monthly, clean the ventilation grate and fan blades with warm soapy water, rinse, and dry. The manual explains that the grate is removed by unscrewing the nuts on either side of the vents; the fan blade’s center nut is turned clockwise to remove it.
Applications
The manual’s cooking chart covers whole chicken, Cornish hens, whole duck, whole turkey, roast beef, and pork ribs. The HRO550 capacity chart specifically lists a capacity of 56–70 whole chickens weighing 2 lb each. Rotating spits and baskets, or flat baking racks, are identified as cooking options for the HRO Series; the manual’s HRO550 product chart also lists capacities for other foods, including Cornish hens, duck, turkey, roast beef, and pork ribs.
