About the Hobart HS9-1B
Overview
The Hobart HS9-1B is listed in Hobart’s parts manual as an HS Series automatic slicer, with model identification ML-136321. The HS-series installation and operation manual describes the slicer’s controls, safety features, cleaning procedures and maintenance. Its instructions cover HS9 automatic models as part of the HS family.
For operators, the automatic carriage and selectable stroke length support repeated slicing during deli, grocery and commercial kitchen preparation. The manual also describes features intended to prevent operation in certain unsafe conditions and make routine cleaning possible.
Key Features
- Automatic slicing: HS9-series automatic models slice with a powered carriage.
- Four carriage speeds: The manual specifies four carriage speeds for HS7 and HS9 automatic models.
- Select-a-Stroke: Operators can choose the carriage stroke length to suit the product. The manual notes that shorter strokes can increase the number of slices.
- Power-interruption safety: After a power interruption, the slicer must be restarted.
- Gauge-plate interlock: The product tray cannot be tilted or removed unless it is in its home position and the gauge plate is closed.
- Home-position start: The product tray must be fully forward in its home position before the slicer can be started.
- Automatic stop: The slicer stops if the product tray does not move back and forth for 30 seconds.
- Stop controls: The slicer stops when the index knob is turned fully clockwise to the stop position or when the OFF button is pressed.

Installation & Requirements
Location and assembly
Place the slicer on a suitable counter or tabletop. The manual calls for enough space around the unit for the carriage to move freely forward and back. The product tray must be installed before use: lower the support arm onto the carriage hinge pins, tilt the tray toward the gauge plate, then tighten the support-arm knob against the support arm.
Electrical connection
The manual specifies that the slicer’s cord must be connected to a properly grounded receptacle. Do not remove the grounding prong from the plug. If the receptacle is not the proper grounding type, the manual directs the user to contact an electrician. Clean and sanitize the slicer thoroughly after installation and before its first use.
Operation
Using the automatic slicer
Before starting, close the gauge plate by turning the index knob fully clockwise and pull the product tray toward the operator until it reaches its stop, the home position. Place the product against the gauge plate on the tray and position the meat grip against the product. Set the slice thickness with the index knob, then use the slicer’s controls to operate it. The tray must be at home before the slicer will start.
On HS9 automatic models, the carriage has four speeds. Select-a-Stroke lets the operator choose the carriage travel length for the product being sliced; the manual notes that shorter strokes can increase the number of slices. The slicer stops automatically if the carriage has not moved back and forth for 30 seconds. It also stops when the gauge plate is closed using the index knob’s stop position or when the OFF button is pressed. Following a power interruption, the slicer must be restarted.
Safe handling
The manual warns that the knife rotates and is very sharp. Use the meat grip when slicing. Unplug the power cord before cleaning, servicing or removing parts, and replace parts before operating the slicer again.
Cleaning & Maintenance
Cleaning and sanitation
Clean and sanitize the slicer at intervals that comply with applicable national, state and local health codes. The manual recommends disassembling the slicer for thorough cleaning, removing parts, washing and sanitizing them, and allowing them to dry before reassembly. Clean surfaces with a cloth soaked in mild detergent and warm water, paying particular attention to areas where food or liquid can collect and to frequently touched handles, knobs and controls. Rinse with a fresh cloth and clean water, then apply sanitizing solution. Remove all food soil before sanitizing. Use only products formulated for stainless steel or aluminum, and do not exceed the chemical manufacturer’s recommended detergent or sanitizer concentrations. Do not clean any part of the slicer with steel pads.
The sharpener, meat grip and product tray are removable for cleaning. The manual says the sharpener may be washed, rinsed and sanitized in a sink or dishwasher; the meat grip and product tray may be washed, rinsed and sanitized in a sink. Clean the product-tray pin with a brush. The top knife cover and plastic ring guard cover may be washed, rinsed and sanitized in a sink or dishwasher. When cleaning a non-removable knife, clean around the ring guard with a moistened, folded paper towel, then wipe both sides of the knife outward from the centre. Exercise extreme caution around the blade.
HS7 and HS9 series slicers have a gas-assist spring to help raise the slicer for cleaning underneath. The manual also directs operators to check the gasket at intervals no longer than six months. The inspection must be performed by the manufacturer or an authorized service agent. If a gasket or seal is damaged or missing, the slicer must remain out of service until repaired by the manufacturer or an authorized service agent.
Knife sharpening and lubrication
Sharpen the CleanCut knife only when necessary; sharpening for too long or too often causes unnecessary knife wear. Before sharpening, unplug the slicer, close the gauge plate, remove the top knife cover and plastic ring guard cover, and clean and sanitize the slicer. Remove food debris between the knife and sharpener so it does not transfer to the sharpener. The manual’s sharpening procedure is to plug in the slicer, hold the KNIFE ON button for 15 seconds while pulling the sharpener lever fully forward, then release the lever, press OFF and unplug the slicer. Clean and sanitize the slicer after sharpening, then reinstall the covers.
Lubricate the carriage slide rod once monthly with Lubriplate FMO-200-AW oil. The manual specifies 4–5 drops directly onto the rod on each side of the carriage transport. Move the tray back and forth a few times to spread the oil along the rod. Lubricate the meat-grip slide rod periodically or when resistance is felt while using the meat-grip assembly.
Applications
The HS9-1B’s automatic carriage and adjustable stroke length suit repetitive slicing tasks in commercial food preparation, including deli and grocery work involving meats and cheese. Operators can select the stroke length according to the product being sliced, as described in the HS-series manual.
