About the Hobart HS9N
Overview
The Hobart HS9N is an automatic heavy-duty slicer in Hobart's HS Series. It uses a 13-inch CleanCut knife and a 1/2 HP knife-drive motor to slice meat, cheese and vegetables. Automatic carriage operation can reduce repetitive manual work during food preparation. Operators can select from four carriage speeds and three stroke lengths to suit different products and slicing tasks.
The HS9N has a non-removable knife. Its anodized aluminum base, removable meat grip assembly, removable ring guard cover, and tilting and removable carriage provide access to areas involved in cleaning. Zero knife exposure and six interlocks are among its operator-protection features.
Key Features
- Automatic carriage: Four speeds and three stroke lengths accommodate a range of products and preparation needs.
- 13-inch CleanCut knife: The knife has a cobalt alloy edge. Hobart states that this super-alloy edge stays sharp longer and lasts two to three times longer than carbon-coated or stainless steel knives.
- Adjustable slice thickness: The gauge plate adjusts for slices up to 1 inch thick. Its machined grooves reduce drag during feeding.
- Double-action indexing: The first full revolution of the indexing knob allows precise control for shaving, chipping and thin slicing. The second revolution opens the gauge plate quickly for thicker slices, and the gauge plate holds its position for consistent slicing.
- Zero knife exposure: The knife edge is not exposed during operation, and the spec sheet identifies zero knife exposure as a protection feature during sharpening and cleaning.
- Six interlocks: These include no-volt release, gauge-plate and carriage-position interlocks, a 30-second shutoff after inactivity, shutoff when the gauge plate is closed, and a carriage-system interlock.
- Cleaning access: The meat grip assembly and ring guard cover are removable. The carriage tilts and can be removed, and lift assist helps provide access underneath the slicer.
- Top-mounted sharpener: The single-action Borazon sharpening system uses two stones. Hobart's spec sheet states that the stones have a lifetime guarantee.

Installation & Requirements
Before installation, check the slicer's data plate, located on the left side of the base, and verify that the electrical service agrees with the machine specifications. The HS9N electrical specification is 120 V, 60 Hz, single phase, 5.6 amps. Its cord has a three-pronged grounding plug. Connect it to a properly grounded receptacle, and do not remove the grounding prong. If the receptacle is not the proper grounding type, the installation guide says to contact an electrician.
Place the slicer on a suitable counter or tabletop. To install the product tray, lower the bottom of the support arm onto the carriage hinge pins, tilt the tray toward the gauge plate, and turn the support-arm knob until it is tight. The supplied installation information does not specify clearance dimensions or ventilation requirements.
Operation
The HS9N operates its product carriage automatically. Its four carriage speeds and three stroke lengths allow the operator to choose settings for the product being prepared. The product information lists a manual lift lever and a front-mounted control arrangement. The gauge plate adjusts to a maximum slice thickness of 1 inch.
For indexing, the first full revolution of the index knob provides precise adjustment for shaving, chipping and thin slices. A second revolution opens the gauge plate quickly for thicker slices. The gauge plate holds its position to help maintain consistent slice thickness. The product capacity is up to 5.75 by 10.75 inches for rectangular items, or 7.5 inches in diameter.
The interlocks support controlled operation: the no-volt release prevents automatic restarting if power is lost; the slicer will not start until the carriage is home; and the gauge plate must be closed with the tray in its home position before the carriage arm can be removed. The slicer shuts off after 30 seconds of inactivity and when the gauge plate is closed. The carriage cannot tilt away or be removed while the gauge plate is open.
Cleaning & Maintenance
The HS Series installation guide says to clean and sanitize the slicer thoroughly before first use. Before cleaning, unplug the power cord and turn the index knob fully clockwise to close the gauge plate. Exercise extreme caution around the knife.
Remove the removable parts and follow the instruction manual for the specific model for removal and reinstallation procedures. The HS9N's product information identifies the meat grip assembly and ring guard cover as removable; the HS Series spec sheet also identifies a tilting and removable carriage. Do not treat the HS9N knife as removable: this model has a non-removable knife.
With removable parts taken off, wipe the slicer surfaces with a cloth soaked in mild detergent and warm water. Rinse with a fresh cloth and clean water, then apply sanitizing solution. Use only products formulated to be safe on stainless steel or aluminum. Allow removable parts to dry fully before reassembling the slicer. Refer to the model's instruction manual for the exact procedures for removing and reinstalling parts. The guide cautions that slicer knives are sharp during operation, cleaning and maintenance.
The top-mounted Borazon sharpener is removable for cleaning and is described in the HS Series spec sheet as warewasher-safe. Its stones are stated to have a lifetime guarantee. The spec sheet also describes the removable ring guard cover as washable in a warewasher or a three-compartment sink.
Applications
The HS9N is suited to commercial food preparation involving meat, cheese and vegetables. Its automatic carriage, selectable speeds and stroke lengths support varied slicing tasks, while its product capacity accommodates items up to 5.75 by 10.75 inches rectangular or 7.5 inches in diameter. It can serve deli and sandwich preparation, meat and cheese service, and kitchen prep where repeatable slices are needed.
